Need Budget Conscious Easy to Make Recipes

Due to financial constraints,I am looking for some recipes that are simple to prepare, reasonably healthy and very budget conscious. I know that is alot to ask but I thought someone out there might have a few to share. TIA!

I will post more later if I have time but first I wanted to make sure someone mentioned Angel Food to you. It is sort of like a food co-op except you don't get to pick what you want really. You can look online and see what their menu is for the following month and place your order and find out where to pick it up. then on a weekend toward the end of the month you go pick up a box or two of food that is usually nicer than you would have bought at the store and cheaper. their standard box is about $30 and is supposed to feed a family of four for a week. I think you usually need to supplement it a bit but it is a good deal.

Check out www.foodnetwork.com I love that channel because one of my favorite things to do is be in my kitchen creating something!

They do have a lot of gourmet'ish shows but there is one called $10 dinners for 4 and the recipes look great!

One of our favorite meals is 2 cans of black beans (or 2 cups dried beans, soaked & cooked), 2 cans of rotel or diced tomatos - simmer in pan or crockpot with some garlic & onion powder. Serve over brown or white rice with some shredded cheese sprinkled on top (super cheap - don't buy the instant stuff - the regular white rice takes 20 min in microwave, brown takes a bit longer on stove). My 2 & 4 year old love it!
Spag sauce tastes worlds better if it simmers all day in a crockpot with frozen meatballs or cooked ground meat. If you do that, you can buy the really cheap sauces & it tastes great!
Any casserole is cheaper if you don't use cream of mushroom soup - make your own - it's easy, has no weird ingredients, and takes 5 min. See link for directions but I do this & it's really easy!http://www.cheapcooking.com/Recipes/homemade-cream-of-sou...

I am a big fan of buying in bulk on sale and freezing. Just this week I had bought whole chickens - put them in the crock pot - seasoned and cooked on low all night - in the morning I drained the broth (save this) and deboned and shredded the chicken. I can then freeze it in 2 cups quantities for recipes. I was able to make a quick and easy pot pie scratch to table in 30 minutes b/c I had the chicken done.

In a large pot add 4 cups chicken stock (from when you made the chicken)
1 package frozen mixed vegetables (I use an organic mix from Costco that has green beans, carrots, peas and corn)
2 cups chicken

Heat to boiling - then add 1 can 98% fat free cream of chicken soup, 1 cup milk mixed with 2 TBS flour - stir into stock mixture until thickened.
Pour this all into aa greased 9x13 casserole
roll out 1 package reduced fat crescent rolls - press all the seams together to get 1 large sheet - roll out slightly to make it wide enough to cover your pan.
Bake at 350 until crescents are golden brown and filling is bubbly (about 20 minutes)

I use E-mealz meal planning service. I heard about it on Dave Ramsey show. Almost everything that I have made from it has been wonderful. Last night we had Chicken Florentine. It was soo good and it made enought to feed my family of 4 plus leftovers for my husband to take to work.
You can also look online for 4 ingredients or less receipes. How expensive can it be if it only needs a few things?

Taco Rice Salad

pound extra lean ground beef (90% or leaner)
1-1/2 cups mild salsa, from a jar or your own homemade
1 15 oz. can black beans, drained and rinsed
1/2 tsp. cumin
1 tsp. chili powder
2 cups cooked brown rice
1/2 cup low fat shredded cheddar cheese
Brown ground beef in a large skillet over medium high heat. Stir in salsa, beans, and spices until heated through. Sprinkle cheddar cheese on top. When cheese melts, remove from heat. Stir into cooked rice until well blended.

i use ground turkey

cracker fish

4 to 5 tbsp. olive oil
2 garlic cloves (about 1/4 cup)
1 1/2 tsp. oregano (fresh or dried)
1 tsp. grated lemon zest
1 c. saltine crumbs (from 24 saltines), made by pulsing in a food processor or crushing in a zippered plastic bag
4 pieces tilapia fillet (6 oz. each)
lemon wedges

Combine 2 tablespoons of the oil and the garlic, oregano and lemon zest in a rimmed dinner plate. Spread the saltine crumbs on wax paper. Dip each fillet in the oil mixture and then coat with crumbs.

Heat 1 tablespoon oil in a large skillet over high heat until hot. Reduce the heat to medium-high, add the fish and saute until well browned, about 2 to 3 minutes. Add more oil to the pan, if necessary, turn the fish, and saute until cooked through and brown on the remaining side, 3 to 4 minutes. Serve with lemon wedges.

Another vote for e-mealz.com! You pay a small fee, but the savings are huge, plus, you know exactly what you will spend before you leave the house to go shopping, and that helps so much with our bugeting! Food is easy to prepare and very good, well balanced meals!

kraftfoods.com is great. I like it because it uses things that you may already have as opposed to an ingredient that you would only use once. And you can modify it for healthier recipes. allrecipes.com is another good one.
