Need a Recipe Please!!

I have a pot luck get together Thursday night. I have chicken breast in the freezer I want to use... Does anyone have any suggestions for a chicken salad sandwich recipe? I know how to make it but I thought how can I make it fancy or special somehow? For a platter to bring to a party? Any suggestions?

So What Happened?

Thank you for all the great suggestions! I looked at the recipes and a lot of them had granny smith apples. I never tried that before, so I used that instead of celery. I kind of made my own recipe from all the suggestions and looking at what I had...I mixed the chicken with the diced granny smith apple, in real mayo, a little sour cream, and a spoonful of spicy mustard, and sprinkled some celery salt. made little sandwiches with this cute little loaf of square rye bread I found at the deli...MMMMM so good! :)

I worked for a cafe for years and we served the chicken salad your talking about. here is the recipe we used

boil your chicken till its done. cool and then cut it into chunks. mix with mayo (use real mayo not miracle whip) we cut up celery and added that and also added in craisens and diced apples. really yummy. if you want it to be souper fancy ad some sugared almonds or pecans right before serving. we served it on a bed of lettuce or on a croissant. always the first thing we ran out of every day.

Okay, here you go! This is one that everyone seems to enjoy.

Cut your thawed chicken breast into small, bite sized pieces. When it's cut up, put it in a bowl. For 4 chicken breast halves, use 1 tsp seasoned salt and 1/2 tsp. black pepper, and mix the seasonings on the chicken, using your hands. Heat a large skillet and put enough Extra Virgin Olive in the bottom to make the bottom shiny and add a tablespoon of butter. When the butter is melted, put the chicken in the pan and cook it until it is slightly browned all over.
In another bowl, put the following that is finely chopped: 2 ribs of celery, 1 small, peeled Granny Smith apple, 2 green onions (whites and the tops), 2 boiled eggs chopped fine, and 2 tablespoons of dill relish (if you don't have dill relish, chop up a plain, old, dill pickle - not a kosher or hot dill - - a plain old fashioned dill pickle). To this add 1 large spoonfull Miracle Whip, 2 large spoonfulls Helman's mayonaise, 1 teaspoon yellow mustard ( I use Frenchs), Mix this up well, then add the chicken that's been cooled. Refrigerate overnight, or at least 2 - 3 hours. If it's too dry, add a little more mayo. Everyone seems to enjoy this salad!

Another version:
Cook the chicken the same way, cook 1 small package of Orza pasta (looks like rice) and drain it when done, drain 1 can pineapple chunks, chop on small Granny Smith Apple up (peeled), and 1 tablespoon pine nuts. Mix together. You can use either mayo or purchase a poppysead dressing to mix in with this - - it's good also, but better served as a salad instead of on sandwiches

I can't offer a chicken salad recipe, but we've gotten SO much mileage out of the buffalo chicken dip recipe from Frank's Red Hot. We made it for the adults at my son's 3rd birthday party last year, and it was devoured mostly by the kids.

You might also want try adding Smoked Paprika to your regular recipe... it adds a delicous smoky flavor to it - not spicy in case there folks who don't eat hot food.

I used to HATE chicken salad until I tried this.

You could make a Sonoma chicken salad...I think it has grapes, walnuts and celery in it. And if you add in a bit of blue cheese, it gets even yummier. Put it on crusty french bread (hollow out the "bread" part a bit so the chicken nestles into the bread) and cut into serving sized pieces.

I would find dark romaine lettuce leafs to use, and either use croissants, or petit breads and make finger sandwiches. Flagged toothpicks will hold the sandwiches together and add a little color to your platter.
You can line your platter with curly parsley leaves or the leftover romaine leaves, arrange the sandwiches, and wallah...a professional looking sandwich tray. (You could also do a small relish tray in the center of your platter, olives, pickles and peppers to add to the sandwiches or just snack on)

I add pecans, celery and dried cranberries to my mayo - let it sit over night so that the Mayo gets the flavor in it and then mix it with my (boiled) chicken the next morning. I let it chill for the morning and then serve.. usually on mini croissants or open face on nice artisan bread. Make sure you don't make the sandwiches too soon before the party or the bread will get soggy. good luck!!

If you like chicken salad, I have a couple go to recipes. My favorite is a curry chicken salad. Mix chunked chicken, diced green apples and diced celery and chopped roasted almonds (walnuts work well too). Mix with mayonaise and a little curry powder. Look for a 'sweet' curry or a mild curry. I love this salad.
Another one that's good is chunks of chicken mixed with diced celery and mayo and some tarragon. That has a nice upscale taste.
These would both work for sandwiches, but could be served as a scoop over greens as well.

Make your salad as usual, then spoon it on mini burger buns and secure them with a fancy toothpick, and call them salad sliders.

Cook and cube chicken. Mix with Poppyseed dressing, chopped celery and cut up red grapes. Season to taste. It is very simple but everyone always loves it.

cut the chicken up and marinate in italian dressing and cook in a skillet
cook a wide pasta noodle
toss it togehter with some feta cheese and chopped spinage.
totally easy and very good.
