All i can say is that add some bacon. Regardless of the recipe used if I add 1/3 a cup of bacon cut up fine, it is a winner.

the only one youll ever need. 3 lb. hamb., 1 pkg crushed crackers, 1 egg, 1 can evaporated milk, 2T chilli powder, 1/2 cup chopped onion, a couple shakes of garlic pepper ( to your taste ). Mix all that up and spread in your pan. ( i use a jelly roll pan so its not thick ). then in the same bowl mix your sauce: 1 1/2 to 2 cups ketchup, 2 T liquid smoke, 1/2 to 1 cup brown sugar ( i only use about a 1/2 because it is really sweet if you use more, ajust to your taste ), more onion if you like, mix all together and spread over loaf. Bake at 350 for about 45 min. this is the best ive ever had. people i know that dont like meatloaf have tried this because it just smells so go and they love it, and now fix it for thier familys. this is requested by my son and my niece and nephews as the christmas eve dinner every year. hope u enjoy as much as we do.

I don't like "normal" meatloaf at all, and my husband swore he would never eat it, but we DO love a "Tex-Mex meatloaf" I make ever couple months. We eat it all up in 2 days and enjoy it. It's basically the same idea as a normal one, just different ingredients. (2lbs of beef, a packet of taco seasoning (we use Old El Paso), a can of rotels undrained, some chopped onion, an egg, a couple handfuls of shredded cheddar cheese, and instead of bread crumbs, I put some corn chips in a ziploc and crush them up, and add them to the bowl. Mix it all together, form it in your dish, and bake it the same as you would any other meatloaf. Take it out about 10 minutes before it's done and pour and cover it with salsa instead of ketchup, and top with a little more cheese if you like, then put it back in the last 10 minutes until the cheese is all melted. I shape mine into a loaf shape but in a square dish, so there's room on both sides. When it's finished cooking I drain the extra grease in the dish off, just a personal preference. You can serve it with whatever, I usually do mashed potatoes and green beans. Not "imaginative", but easy and it goes.

I have a few recipes but this is my favorite, it has a nice sweet flavor to it. I chop and saute red pepper (about half of one pepper) and onion (about half of a sweet onion) in a little olive oil first. once that's done i take it off the heat.
Combine meat with an egg, breadcrumbs (i use the seasoned ones) and add some salt and pepper as well as some BBQ sauce. Then add in the sauteed peppers and onion. Use your hands to combine.
in a bread pan, put brown sugar so it lines the bottome and then put some BBQ sauce on top of it. press the meat into the loaf pan. cook at 350 degrees for an hour!

Hi. This is my Mom's (deceased) recipie. Anyone who'd eaten it loves it. So I hope you do. I make 2 (in loaf pans) each time. For each one you need 2 pounds of ground beef, round (I use this).1/4 cup ketchup. 3/4 cup bread crumbs(I use plain). 1/2 cup applesauce. 1 egg. dried minced onions (sprinkle to your liking. Mix together, all ingredients. Put into loaf pan (I spray with baking spray first). Cover pan and bake at 350 degrees for 45 minutes. Uncover and bake for an additional 15 minutes more. I hope you like it. My Mom and I are 100% Polish, and this meatloaf is very moist, and our favorite. I've been making it for over 27 years. Like I said, everyone likes it. My Mom and I and my kids put skinny pats of butter on our slices. As I said, my Mom is gone (8 years). But her meatloaf recipie lives on. Good luck and I hope you like it!

I don't use a recipe either, ground beef, chopped onion, wosteshire sauce, salt and peper, an egg, and bread crumbs, then some times I cover it in catsup, and bake. Other times, I chop another onion, saute in just a little veg. oil in a frying pan, and add a can of tomatoes, cook down just a little, and pour this mixture on top of the meat loaf once it is cooked.

My family loves my meatloaf. I hated meatloaf until I was pregnant lol, now I love the stuff!

I use:

1lb hamburger
half cup of finely chopped green pepper
half cup of finely chopped onion
1 egg
Italian Bread Crumbs (to your liking, I don't use a lot, I just pour until it feels like enough, because you don't want it to be to dry)
Ketchup (again to your liking)
a little bit of mustard
5-7 shakes of wostershire sauce (i probably spelled that wrong)

Squish it all together (I use rubber/latex gloves because I hate the feeling on my hands lol)
Put in a bread pan
Put a couple strips of bacon on top and a few lines of ketchup
Bake at 350 degrees for about 45 mins.

I don't have measurements, i eyeball everything...sorry :(

Ground beef, fresh bread (in food processor), egg, chopped onion, salt, pepper and ketchup. After i mold it, i spread a thin layer of ketchup and salt/pepper.

It is a nice plain but tasty meatloaf that my kids love :)

I never use an exact recipe...

1 1/2 to 2 lbs ground beef - can use a mixture of ground beef and ground pork
1 egg
bread crumbs - you can use seasoned, plain, or just make your own
milk to moisten
black pepper
onion powder or onion salt
garlic powder or garlic salt
a splash or two of worstershire sauce
mix together, place in loaf pan or cassorole dish and bake about 45 minutes at 325.

For a very simple recipe...
ground meat
package of onion soup mix
water
egg
bread crumbs

I use the McCormick's meatloaf seasoning packet for my spices, and follow their directions for baking, which I think is 1 hour at 350.

I use ground turkey b/c my husband has an iron problem, but its mostly like this:
meatloaf seasoning mix
1 sleeve of saltine crackers, crushed up
2 TBSP tomato sauce
about a quarter cup of ketchup, I just eyeball it
1 egg
2 lbs of ground turkey or ground beef

I mix it all together, then put it in a loaf pan and "frost" it with ketchup, then bake for an hour or so until it's all cooked through.

If you want to do it the night before you can mix it all together and put it in the loaf pan, then cover and put it in the refridgerator. When you're ready to make it, take it out and put on the top coat of ketchup, then bake for an extra 10 or so minutes

My parents and my husband's brother are always requesting I make this when they're coming over for dinner. My aunt tried to tell me that ketchup is a condiment and not an ingredient, but Bobby Flay used it on Iron Chef, so if it's good enough for him, it's good enough for me!

Oh! this is fun! Last time this Q came up (over a year ago) there were something like 60 or 80 answers... all different!!

My favorite recipe:

Ingredients

Olive Oil
1 teaspoon dried thyme
2 dried bay leaves
1 onion, roughly chopped
3 whole cloves garlic
2 slices White, & 2 slices Wheat bread torn into chunks
Milk
1 cup panko crumbs
3 lbs ground turkey (or sub a mixture or straight beef... I like turkey)
2 eggs
1/2 cup of catsup
1 can of S&W original recipe stewed tomatoes
1 loose cup chopped fresh parsely
Worcestershire sauce (couple dashes)
kosher salt

For the glaze:
1/2 cup catsup
1 teaspoon ground cumin
Dash Worcestershire sauce
Dash hot pepper sauce
1 tablespoon honey

Coat a skillet with a 2-count of oil and place over medium heat. Saute the onion, garlic, and bay leaves for a few minutes to create a base flavor. Allow to cool.

Place the torn bread in a bowl and add the milk to just barely cover, swish the bread around in the milk and let it sit while you get the rest of the ingredients for the meat loaf together.

Add ground turkey (or whatever you're subbing), eggs, catsup, milk soaked bread, and tomatoes, parsely, and a dash or 3 of woostershirshiresheer sauce (thankyou abbot & costello), and onion/garlic/thyme together and mash up with your hands. Add in panko. If it's too wet, add in more panko. To test... saute a little "burger". Season with salt and pepper. Form into 1 or 2 logs on baking skeet or caserole dish. Bake at 350 for 10 minutes and then add the glaze on top. Keep baking for 1.5-2 hours (until 180 for ground turkey, 160 for beef).

For added fun... cover the top of the logs with bacon beforehand.

For individual meatloaves (or meatmuffins) just temp every half hour or so until you get "close".

((For some reason everyone laughs at my meat muffins, even though they scarf them. But hey... Giant muffin tin, meat loaf, lack of baking dishes (being used for other things) = family tradition of "meat muffins"))

My 2nd favortie:

On the back of the Liptons Beef/Onion Soup box!!!

We prefer "regular plain" meatloaf.

1 1/2 pounds hamburger
1 to 2 eggs
season with pepper, garlic salt, onion salt, and seasoning salt
add crushed soda crackers till "desired consistency" (I usually use 1/2 pack)

Mix together in order of listed, stirring after each addition.

Spread into 8*8 or 9*9 pan.

Spread ketchup or BBQ sauce over top.

Bake at 350 for 45 to 60 minutes.
