I have a friend who just had a baby and I would like to take a meal to her. Problem is she is vegitarian. Any ideas for a good, easy meal to take to the new mom? I would like something that is fun, something that they will enjoy and say "Thanks for the great meal" but will not keep me tied up in the kitchen all day. Thanks!

So What Happened?

I decided to take a Vegetarian Mexican Casserole (with rice, black beans, corn and other good stuff) It was yum, andI made a double batch so we could enjoy it also. Thanks for all the good ideas!

Baked mostaccioli! It is my standard go-to meal for new moms. You can easily buy jarred sauce that is meatless, cook the pasta, toss with sauce, and sprinkle mozzarella cheese on top. All your friend has to do is bake. It only takes me about 10 minutes in the kitchen, and I bring a bagged salad, breadsticks, and brownies with. Super easy and freezes/reheats well.

You can make an easy soup/stew using a rice and black bean mix. Prepare rice according to directions add 1 can of cream style corn, a small jar of salsa and two cups of broth. Heat through and serve. Add a bagged salad or a small loaf of bread.

If they are vegetarian and eat animal by-products, such as cheese and eggs, then make them a vegetarian lasagna. If they are vegan the entire meal changes and a veggie stir fry and brown rice would work.

I just had #4, and the best meal we got was this Mexican hodgepodge: Our kids LOVED it :)

Bag of tortillas
Chips

Bean dip for tortillas and chips
Shredded chicken filling for tortillas with black beans (omit chicken for vegetarian of course!) It was cooked chicken breast with taco seasoning.
(The filling/dips are the only things you "make")

Bag of cheddar cheese to sprinkle
Sour cream
Jar of local salsa

Container of vanilla ice cream and box of rice krispies and bottle of chocolate syrup for "fried ice cream"

It might be a little pricey, but it's convenient! And this is what I'm doing on Thursday for another mom.

How about baked zitti?
You can also do some vegetable fajitas with a side of rice and beans.
Vegetable soup
Does she eat fish at all? if she does, I do some tuna patties with tuna, mashed potatoes, onions, parsley, a beaten egg and some salt; mix together, cover with some flour and fry it. Really good witha side salad.

ok, this is so easy and my carnivore husband and father both ask for it!

Lentil Rice Casserole
3 c veggie broth
3/4 cup dried lentils
1/2 c brown rice
3/4 c chopped onion
1/2 t basil
1/4 t EACH oregano, thyme, garlic powder
grease casserole dish. throw it all in and stir. bake covered 1 1/2 hour at 300. For the last 20 minutes, we cover it with cheese (soy cheese for vegans) and finish baking uncovered.

If you want, substitute dried onion, Give her the box/can of broth, a baggie with everything else (but the cheese), and they can make it whenever.

Rachel Ray made a delicious looking lasagna today, i bet the recipe is online, it had mushrooms instead of a meat sauce and a spinach ricotta cheese.

My neighbor is a wonderful woman who brought my family meals when we had each of our children. I am also a veggie. She made a vegetable lasagna for the first meal. I am guessing this took her a chunk of time to prepare, but we loved it. We ate it for two days and still froze some of it for meals at a later date. I cannot say how great it was. Then when our second child was born, she made manicotti. It looked like it took a ton of time, but she said you can buy the shells/pasta already filled with whatever the filling is and then bake it. She topped both meals off with a spinach salad with a ton of cucumbers and tomatoes and then for dessert little eclairs that she said you also can buy frozen from walmart. I will never forget this woman for the effort she made for our new/young family. Not to mention she is a single mom with four children of her own. I applaud you for thinking of the new family to be.

I don't have any specific recipe right now to pass on but instead a website allrecipes.com. You can look up vegetarian recipes and get reviews...or even type in ingredients you have on hand or would like to use then it will give you lists of recipes with your specified ingredients.

You are a wonderful friend to take in a meal...it was a huge blessing to me each time a meal came in when my babies were born!

Vegetarian fajitas.. Grill ~garlic, onions, zucchini, sliced mushrooms and strips of poblano peppers all together , seasoned with a little salt and black pepper. I do these in foil with a little olive oil. Send with tortillas and guacamole maybe some veggie black beans.

Cheese enchiladas,

Stuffed Zucchinis or eggplant.

Hi! That's really nice of you to take a meal to your friend! I'm a vegetarian, too and I really liked all the pasta ideas! Especially adding in the extras with salad, ect. I'm sure she will be so thankful.
Another idea that someone gave to me was a giant bag full of pancakes! It was really nice to have them on hand for easy an easy breakfast, and I could freeze and heat them as needed.
