Make Filbert Butter for a Child?

My son loves peanut butter, which is ok, but I want to get him started on filberts, since they are more nutritious than peanuts. I eat filberts almost every day.

Since he is too young to eat filbert nuts, does anyone here know, can you make filbert butter at home using something like a Champion juicer, or do you need a special machine?

I know that you can buy filbert butter.

I love my Champion, and yes it should work. Just don't forget to put on the nut butter attachment like I did once. Good luck!

You can make any nutbutter by just using a food processor. You do not have to add anything, but if you prefer you can roast the nuts before processing, add a little salt or sugar. I have made filbert butter (I also call them hazelnuts...) before and a hit at our house is adding a few chocolate chips..but that is certainly up to you. If you want the consistency to be a little creamier, rather than crunchy, just add some high quality vegetable oil.
Because homemade nut butter does not contain preservatives, you will want to make small amounts that can be quickly consumed - otherwise it will go rancid.

I have not made straight filbert butter with my Champion juicer, but I've made all sorts of other nut butters (including filbert mixes) with great success. I typically add a little bit of canola oil (or flax seed oil, if you want to be even healthier) and a tiny bit of salt, first. I don't use any sugar. I use raw nuts because roasting them reduces their health value--although it also enhances their flavor--so your call, there. It does work the Champion pretty hard, so if you're making a larger batch, you might want to give it a break to cool down partway through. My results have always been delicious (almost creamy, but some very small chunks) and I have a hard time keeping it stocked when I make it because it is so popular!

Also, I don't know how old your son is, but I give my three-year-old son chopped nuts without a problem. I just made a batch of granola and added coarsely chopped filberts. He loved it!

I had to laugh, I saw filberts and was confused for a minute - I call them Hazelnuts,

Roast them, peel them and throw them in a food processor. You will need to add some oil - canola, veggie or even melted butter would work.

Some Italian food stores even sell pre roasted peeled Hazelnts, but of course you pay a preium for that. ANd since you live in Oregon I would imagine geting fresh one is not too difficult.

FYI - you can also do a web search for many variations on the recipe.

I would sugest that you invest in a vitamix. You can buy one and see demos at most of the fairs. They make wonderful nut butters, along with smoothies, soups, ice cream, lattes, baby food, bread dough, etc. all using fresh ingredients. They are a bit pricey, but so worth the investment in your health. If you get to a county fair this summer, check them out and try a few free samples.

I've always just used a food processor to make nut butters. Depending on the oil content of the nuts you may or may not need to add a little extra oil--or, the butter will just be pastier or thicker than conventional hazelnut butter. Have fun and good luck!

use a cuisinart or food processor. it's that simple. you can also toast the nuts for a richer flavor.

i used to grind filberts in a little manual handcranked meat grinder and put them in spaghetti sauce (it was more like a nut meal than a nut butter). you could mix it into cereal also. you could also probably use a spice or coffee grinder or good blender like a vitamix. peanut butter i have heard besides being less nutritious is usually toxic from the aflotoxin (?) mold that most peanuts have, which could explain a lot of peanut allergies, so i agree filbert butter is much better.

Hi Paul! I have a Champion juicer (I love that machine!) and I don't know if it would grind the nuts fine enough to make a butter. It's worth a try though! Now you have me curious to see if it works! :)
I would think a food processor would be the best bet. My mom makes her own cashew butter that way.
I think it's great that you are looking for peanut butter alternatives. Peanuts can be very h*** o* the digestive system.

ps. I just read Ina's post......great idea! Sounds delish!
Oh, when you make your filbert/hazelnut butter....if you add a little olive oil it will be more spreadable after storing it in the refrigerator.

You can grind your own filbert butter at Whole Foods and even some Safeway stores have the option of fresh ground nut butters. Nutella is a hazelnut (filbert) butter and it's great stuff. My kids prefer it over peanut butter any day.

Roasting the nuts is such a quick process, that it doesn't decrease the nutritional value significantly enough to not do it if you like the roasted flavor better than raw. Very little escapes through the heating process. Watch out if roasting your own, though, nuts burn quickly and you have to keep an eye on them.

I've made nut butter in my food processor with a little canola oil or olive oil. It worked great.

When I make peanut butter I food process the nuts with powdered sugar. I used to make it all the time at work, Im a pastry cook. I never made it with hazelnuts but I imagine it would proly be the same. It takes a while and add the sugar slowly, a little at a time until its smooth and th consistency you want it. We didnt toast the peanuts first but if you did it would just make it a stronger nut taste. Make sure to let us know how it turned it and how you did it!

You can make your own almond butter and cashew butter, so why not.

Just curious because I've never heard it....what is so nutritious about filberts?

I have a nut grinder that I bought fairly reasonably...maybe $60? And that's what I use to grind nuts. They are oily and so I only use it for that. It's for spices too, but I do them in a separate grinder, otherwise they get all yucky!
That's my big girl word for the day! :)

You are right to want to give your son homemade filbert butter as it is healthier, fresher, without sugar or salt and you can buy organic nuts to make it with.
I used an old fashioned hand grinder. I never wanted to clean the blender as it was a great mess.
