Hi Moms!
My kids are getting hooked on quesadillas. So far I'm just using corn tortillas, mozzarella cheese, and dipping salsa. Any interesting quesadilla recipes out there?

Any different cheeses to try?

If you have any leftover chicken or steak, dice it up and throw it in. I've also added sunflower seeds, avacado and bacon bits to my quesadillas. Wonderful meal...just love them!

I am a veggie girl myself --- love spinach and mushroom quesadillas with a little cilantro and homemade salsa.

My kids love just cheese and bacon on theirs.

I add whatever I have at home as well -- any kind of veggies or meats --- breakfast ones would be good too -- with eggs, sausage or bacon and cheese.....maybe even a little cream cheese....

my friend did a taco quesa las once. Layers with beans, rice and cheese and taco seasoning meat with quesas. Not sure how she did it but pretty simple to figure it out. :0)

turkey or ham sandwhiches in tort with cream cheese and chives rolled up in a roll and cut for appetizer/ lunch

I like to add chicken in mine.
You could also add black beans. I use flour tortillas. And colbyjack cheese.

Kroger sells quesadilla cheese that is really good.
I like to put in black beans and corn along with a little chicken. Serve with sour cream and guacamole. I use the high fiber or whole wheat tortillas.

Open your fridge and see what's leftover that needs used up?

Shredded beef or chicken, BBQ sauce and Cheddar or CO-jack are good. Mozzarella and pepperoni and marinara for dipping for "pizza quesadillas"
Thinly sliced leftover steak, cheese and A1 or Heinz 57 for dipping.

It's one of our go-to meals around here too, so easy to make! I use whole wheat flour tortillas, spread on the outside with a little bummel & brown spread, then cook folded over in frying pan with cheddar cheese & beans (kidney beans, black beans or pinto beans all work great). Sometimes we use chicken if we have it available and occasionally throw in veggies like asparagus. We always use cheddar cheese. Love love love the "Dilla" as my little one calls it

Go to Rosa's an get FRESH flour tortillas. One dozen costs about the same as the grocery store package and they are SO MUCH better. I then buy a rotisserie chicken and cut up the breast pieces. I cut up a bell pepper and garlic and saute in light oil until tender. Add the chicken and half a taco seasoning package... cook according to package.

Heat up my non-stick pan. drop one tortilla, filling, muenster cheese slices or cheddar shredded, top with another tortilla. cook until cheese melts and flip just to brown.

You can literally put ANYTHING in to a quesadilla, and if you buy a quesadilla maker for $20, it's even easier to cook them! We put black beans, refried beans, chicken, steak, peppers, onions, tomatoes, taco meat, honestly, whatever we have that sounds good in them. You could also make more "grown up" versions with goat cheese and caramelized onions, etc. in them. One of my husband's favorites is to have "breakfast" quesadillas. This means putting some shredded cheese on a tortilla, and then putting an egg that I beat on top plus whatever extras he wants (sausage, bacon, ham, veggies) then a little more cheese then another tortilla. SO good, SO easy, and throw some salsa on top once it is done and it is a nice change of pace in the morning or as a breakfast for dinner item!

P.S. As for cheeses...cheddar and Kroger's quesadilla mix our my family's favorites. You can also use shredded taco or Mexican cheese too!

OHHHH I could use a 4step program from quesadillas
I use Flower tortillas and 4 cheese mexican blend
Non Fat refried beans, diced/sliced steak, chicken, shredded pork, diced/stewed tomatoes, potatoes (diced or shredded breakfast style), spinach, corn, guacamole, lettuce, egg, ground beef/turkey/chicken/pork seasoned, queso cheese, pizza ingredients pretty much anything goes!!

You can use corn, flour or whole wheat tortillas and they all work well.. The good thing is no butter or oil is needed if made in a non stick pan or a cast iron skillet.

Sharp cheddar, colby, Monterrey jack, Queso Fresco all work great.

There is a great place here in Austin that makes quesadillas with monterrey jack, spinach leaves (fresh) and sauteed mushrooms with onions.. Yummy..

Cheese with chicken, ground beef, sausage, or pork (shredded is also good) and then add sauted veggies like zucchini and sliced tomatoes..

Beans and cheese are classic..

We like to do "Leftover" quesadillas where you take out all of the leftovers from the week and make all different mixes of items.

i shred up chicken and a pack of taco seasoning. then i warm up velveeta cheese and white queso salsa. put some on flour or corn tortillas and then add a little fiesta cheese. very good.

The restaurant my husband and I worked for when we met made an amazing spinach quesadilla with a basil mayo dipping sauce. They used:
spinach tortilla (but any tortilla would be fine)
fill with sliced tomatoes, grilled or sauteed mushrooms and onions, sliced cooked chicken, fresh spinach leaves and mozzerella cheese
The basil mayo is mayo, pesto and a bit of sour cream mixed together. HEAVENLY!!

I use flower tortillas and do them in a lightly oiled frying pan. I just have different stuff and let the kids fill them up. Sometimes they put too much on but god forbid they admit that by not eating it. :p

Shredded baked chicken and buffalo wing sauce work well. Cheese is such a personal choice I wouldn't dare suggest one. Shredded beef with some cumin or taco seasoning, salsa, and cheese?

My son likes swiss cheese, bacon, and spinach. Sometimes he asks for 1 corn tortilla and 1 flour tortilla. My husband likes cheddar cheese with leftover steak or chicken and salsa. I like plain cheese quesadillas, and I cook mine in the microwave for 30 seconds if I'm in a hurry.
What about making enchiladas? You could use the same basic ingredients, but rolled into a tube instead of flat. I heat corn torillas for a few seconds, add fillings like mushrooms, spinach, and cheese, roll them up and put 3 per small dish. Then I microwave just long enough to melt the cheese, top with enchilada sauce and more shredded cheese and then bake.

What we call pizzadillas - whole wheat flour tortilla filled with pepperoni, a little pizza sauce and mozz cheese - serve with extra pizza sauce for dipping!!!!!

Sounds like you've already got the basics. I ususally use whole wheat tortillas, and you can always add some refried beans, then have lettuce, tomato sour cream & salsa for dips, and even black olives. Another quesadilla that I love is to take some grilled chicken, add spinach, mushrooms, and cheese. Don't know if your kids will like it, but I do!

Oh yes! We do all kinds. Monterey/colby blend is great on corn or flour tortillas. Mild cheddar is good too. Mission makes a "carb balance" flour tortilla that we buy simply because its HIGH in fiber & tastes just like regular flour tortillas. I also add meat & veggies for a substancial meal. U can precook mushrooms (i keep in container in fridge because we use them so often), add them fresh baby spinach, add some chicken or beef...yum. Precooked chicken & beef strips make this very quick as well. All of this can be done quickly in th microwave or on the stove on a griddle. For dipping sauce, mix your salsa with sour cream.

Also try doing PB&J. Don't put too much jelly on or its pretty messy when eating. Sounds weird, but the kids will love it and you probably will too.
I like to use Pam spray on the skillet side of each tortilla, seems to give it a nicer tan than butter or oils. Never soggy.

try meunster cheese and fill with anything they will eat..ham, chicken,,, virtually any left over can be added !!
