Hi Moms!
I'm making a dinner this week for a family that recently suffered a loss, and I was wondering if anyone had any quick, easy, and delicious casserole or other type of recipes I could make for them? It's got to be easily transported and a quick heat up for them.

Thank you so much! I got a lot of great recipes! I ended up going with the Mexican Lasagna. I'll find out soon if they liked it! :) I even decided to make 2, so we could have it for dinner ourselves!

Chicken and rice casserole.

This is super easy..... sautee some onions, add some chicken, can of cream of chicken, add some peas and sweet corn. buy ready cooked rice and add that once the chicken is cooked. Absolutely delicious, and depending how much water you add to the condensed soup vs rice you add, it can be like a casserole or a risotto.

Hi, K.. This is very sweet of you to do for the family.
I like to make chicken spaghetti. Cook the spaghetti. Mix cream soup (mushroom, chicken, or celery) + 1/2 can of milk (for each can of soup) with some worcheshire (1-2 T), lemon (or lemon pepper) & garlic salt (to taste), and chicken breast (canned or cooked both work). Mix it all together, with the spaghetti. Put in a cassarole dish with shredded mozzarella cheese on top. (You can make this ahead and refrigerate this until you are ready to serve.) Then Bake at 350 until the cheese is melted and it's warmed through, about 30 minutes. It's really easy, tastes good and re-heats well if there are leftovers.

This is my all-time favorite. It can be made in a foil pan and frozen for up to 6 weeks.

Sour Cream Chicken Enchilada Casserole

1 can cream of chicken soup
1/2 can (cream of chicken size) milk
1 pint sour cream
1 small can diced green chiles
1 lb. shredded cheddar cheese (use as much as desired)
1 small can diced black olives (can be omitted)
3 scallions, chopped including greens
3 large half chicken breasts (boiled with some onion and ~10 black pepper corns. Remove from water, discard onion and pepper corns and shred or cut into 1/2-inch size pieces; or use purchased roasted chicken.. i.e. Costco, Ralphs, etc.)
1 dozen (+ or -) white corn tortillas

Combine the first four ingredients to make a sauce.

Layering:
In a 13X9-inch pan (spray with Pam or lightly oil), spread about 2/3 cup of sauce over the bottom. Place a layer of corn tortillas, filling in all sides. (I break in half and put flat sides in against the pan sides and then fill in middle with whole tortillas). Spread tortillas with 1/3 of remaining sauce. Top this layer with 1/2 of chicken, 1/3 of cheese, 1/3 of olives, and 1/3 of onions.

Top first (bottom) layer with tortillas and repeat as for first layer.

Top second (middle) layer with tortillas. Spread with remaining sauce. Add cheese, then onions, then olives (if used). I like to make a design out of the olives, but that's just me.

Baking Time: If baking immediately (or that day) 350F degrees for 35-45 minutes, or until sauce is bubbling and cheese has melted but not browned too much. If frozen, increase cooking time to 50-60 minutes and remove foil 1/2 way to prevent cheese from sticking to the foil. Let set for 15 minutes before serving so the sauce 'coagulates' as my husband calls it!

My family loves this so much. I made it for a new mommy just a month or so ago. She loved it so much she just served her friend (another new mommy) the same dinner!

I've found this to be an easy to do & very freezer friendly (in the right container). The new mommies in my group love it.

You can trade out the veggies or leave them & the chicken out entirely.

I'm sorry for your friend's loss. Hope that this helps.

Baked Chicken & Cheese Risotto

1 can (10 3/4 ounces) Campbell's Condensed Cream of Mushroom Soup (Regular or 98% Fat Free)
1 1/4 cups water
1/2 cup milk
1/4 cup shredded part-skim mozzarella cheese (1 ounce)
3 tablespoons grated Parmesan cheese
1 1/2 cups frozen mixed vegetables
1/2 pounds skinless, boneless chicken breasts, cut into cubes
3/4 cup uncooked Arborio or regular long-grain white rice

Directions:
Mix soup, water, milk, mozzarella cheese, Parmesan cheese, vegetables, chicken and rice in 3-quart shallow baking dish. Cover.

Bake at 400°F. for 35 minutes. Stir.

Bake for 10 minutes or until hot and rice is done. Let stand 5 minutes.

Two comfort food casseroles coming up:

Super Easy:
Cornbread Chilli Casserole

- A few cans of favorite chilli
- A box of sweet cornbread mix

Fill a disposable metal baking pan one inch from the top with canned chilli.
Mix up corn bread batter.
Pour batter over the top of the chilli. (Obviously, do not stir.)
Bake cornbread until a toothpick comes out clean.
Serve/refridgerate/or freeze

Easy
Penne Alfredo with Chicken and Broccoli

- 1 box of Penne
- 3 jars of Bertoli Alfredo
- A rotisserie chicken from the grocery store
- A couple heads of broccoli
- A couple fresh tomatoes, chopped...OR...a few sun dried tomatoes

Boil the Penne, drain and place in disposable metal baking dish
Steam the broccoli, and " "
Chop up the cooked chicken, and " "
Pour in the Alfredo
STIR
Sprinkle the chopped tomatoes over the top
Serve, Refrigerate, or Freeze.

ALWAYS send things in disposable dishes when you're feeding grief. The last thing most people are capable of is remembering which dish belonged to whom, and the last thing you're going to want to remind them of is that period of their lives by asking for that dish back. Even if you intend the dish as a gift, they won't be able to remember who said keep the dish, and reorganizing your kitchen for new stuff is something only certain kinds of people do when they're grieving.

Hi K.,
Here is an easy recipe for a Chicken Boudine I made last week for my family.It was a hit even for my picky eaters.
Ingredients:
1 pk of egg noodles
1(10 3/4) can of cream of mushroom soup
1(10 3/4) can of cream of celery soup
1/2 cup chicken broth or stock
1/4 cup white wine
4 cups cooked chopped chicken
3 cups grated sharp cheese divided
1 red bell pepper
1 small sweet onion
1 package of sliced mushrooms
salt & pepper to taste

Preheat oven 350. In large bowl toss together the cooked egg noodles, canned soups, broth, white wine. Sautee the onion, mushrooms, & bellpepper in a little bit of olive oil, add a little salt & pepper to taste. After that is sauteed add it to the mixture, along with 2 cups of the cheese & all of the chicken. Toss it all together and transfer to a lightly greased casserole dish & top with the remaining cheese. I also added a little bit of sliced green onions on top just for color.Bake for 30 min. Its good and easy to reheat.

One litte tip, I was short on time so I used the precooked cubed chicken. It worked out perfect. If you have a Trader Joes near you I used their Just the Chicken package.

This is not a casserole recipe! This is a recipe for White Chili Beans and they are very good and easy to make. You will need
3 chicken breasts, cooked & shredded
1- 8 oz grated Jalapeno Jack Cheese
4 cans white beans I use sun vista you can use Northern beans too.
1-16oz Jar Salsa Verde :"Herdez Tomotillo"
1 tsp -cumin
1) In a crock pot add all ingredients on high
2) lower to low when it begins to boil
3) let summer 4 hours
You can add all ingredients while you are boiling the chiken breasts, saves you time. You can add chiken broth if needed. But, don't make them to watery.

I have the best casserole i have been making ever since a friend gave it to me a month ago!

Pasta/chicken/pesto dish

1 jar alfredo sauce
1 small fresh container of sundried tomato pesto (trader joes is fabulous)
1 bag cooked pasta - spirals/shells...whichever
3/4 cup grated parmesan
1 shredded whole chicken - buy at market already done
mix all ingrediants together - top with enough parm to cover casserole.
bake 350 for about 25 min - until bubbly.
this is great frozen (precooked) and great for friends in need!

Mexican Lasagna

Layer tortillas (corn or flour), salsa, meat, tomatoes, onions & cheese (in that order) until the baking pan is full. (usually 3 - 4 layers)

Bake in the oven at 350 for 30 minutes.

Top with dollop of guacamole and/or sour cream.

This dish also freezes very well if they're not able to have it right away. It can go straight from the freezer to the oven. If frozen, bake for 1 hour.

The link below is the website for 'A Year of Slow Cooking'. You may find something there. One thing my family has done for families before.. Meatball sandwiches. I go and place everything in their crockpot and leave rolls for them to put them on. They don't have to do anything but serve at the end of the day. My recipe consists of 3 ingredients... a jar of "Chili Sauce". You can find it at Staters. It looks like a homemade jar, but it's not. It's 12oz. Then add 1:1 ratio of Grape Jelly. Add the package of frozen meatballs. That's it. I usually stay and visit for about 10-15 minutes, stir it once before I go. Set it on Low for about 6 hours. That should do it. It's not spicy (cuz I can't do spicy). Just very flavorful and easy!! :) I think I know what we're having for dinner tonight.... :) Enjoy!

Here's one for you. I have made this to take to others as well. Macaroni Cassarole
elbow macaroni - 1 pkg (cooked)
Peas - defrosted
Cream of Mushroom Soup - 2 cans
Fried Onions - 1 can
Chicken breast - cooked and cut up
Mix all ingredients in a cassarole dish. Save some onions for the top. Add a little milk if it seems too dry. Cook at 350 for about 1/2 hour or until warm.

Here is one my mom threw together one day for lunch after having the same old things and my kids love it as well as my hubby. Get a box of scalloped potatoes and cook as directed-then stir in a can of peas or any canned veg-and diced up ham or spam heat for an additional 5 minutes and enjoy.What a wonderful thing to do. This is such a nice thing to do. I haven't had time to read the other posts, but here's my "go to" dish for times like these...regular old spaghetti. I just spruce up some jar sauce. The trick to getting it to taste like it has been on the stove for hours is to saute all your "extras" before adding the sauce. I usually will brown some ground beef or turkey, then add onions, chopped bell peppers, and chopped garlic. After these are starting to soften, I add sliced mushrooms and sliced black olives. (Plus anything else that sounds good!) Once these are all coming together, I add 1-2 jars of ready-made sauce. Add a few spices to taste...I usually add a little fresh ground pepper, a little basil or Italian seasoning, a little Worcestershire sauce, and a dash of Tabasco. Then I cover and simmer for about a half hour or so. Let it cool and put it into a large Gladware container. I add a package of spaghetti, a baguette or some store garlic bread, and a ready-made bag of Ceasar Salad. It is a complete meal that is easy to transport, quick to heat, hearty and comforting. Since everyone brings "casseroles" why not a chinese chicken salad or everything for hamburgers? Put everything in a separate baggie, or container and give them something normal to eat. I'm sure it will cost the same amount and everyone will like something other than a pasta dish.

That is reaaly nice of you & I'm sure it will be appreciated. I am a Pampered chef consultant and have a great recipe for 3 chicken dishes that are made in 30 minutes this way they could either have 3 meals to heat up or you can keep the others. After I had a baby my friend grabbed me a family chicken dinner from Winco. Don't know if you have one by you but it was 8 pieces of baked chicken with the best seasoning. She grabbed some rolls and made a simple salad and it was soooo wonderful. That is so nice of you to help them out. Best Luck with your little one on the way too!

I found using mac-n-cheese a quick and easy way to make just about any type of casserole. I make tuna casserole with mac-n-cheese (prepare as directed on box), add tuna, green peas. Bake for about 30 min and it is done. This is my way of making any casserole, I have even included broccoli and other veggies to enhance the balance of the casserole. Season to taste.

You have already gotten a lot of responses, but I just wanted to share my favorite casserole dish as well! :) It's something my grandmother used to make, and my mom made it for me, and now I make it for my family! I usually double the recipe, as we end up eating so much of it, and like a hardier meal, so here's the way I make it:

2 cans of chicken rice soup
2 cans of cream of chicken soup
1 can of evaporated milk
1 can of chicken (you can use fresh chopped chicken here as well, but canned is easier for me!)
2 cups of either uncooked minute rice, or cooked regular rice
soy sauce (I do this by look, but I think the recipe calls for 1 tbsp)
onion powder (to taste, again, I don't measure this either)
You can put cashews in it, too, if you want. I usually don't as my daughter doesn't like them.
THen top it with crunch chow mein noodles, and pop it in the oven at 375 degrees for about 45 minutes. Let it stand a bit after taking it out, as some times it can be soupy.

Anyway, you can play with the amount of the ingredients- I seem to do it a bit different every time, and it always turns out yummy! :)
