I know this is miniscule compared to what some moms ask, but does anyone know what I can make with left over pot roast? I am new to this cooking thing and I keep cooking for an army instead of a family of 4. My husband hates leftovers, but maybe if I can make the leftovers new again it would be okay. As a matter of fact, please tell me any great leftover ideas you have! Thanks!

I shred it, mix it with bbq sauce and serve it on buns. My husband loves it!!

You can also use it to make French Dip Sandwiches. Just get hoagie rolls and some provolone or swiss cheese, add the meat, shredded or cut up, and there you go! Save some of the broth from the meat (before making gravy) to dip the sandwiches in. This is called 'planned leftovers'. :)

Another idea on the side is if you are making a lot more than what your family will eat at one sitting is to freeze the rest and have another dinner for later. I do that a lot when making chicken spaghetti or meatloaf, is just make a double recipe and then freeze it. It works out great!

The only bad left overs are the ones not eaten. We make barbeque or shredded beef tacos or sloppy joes with leftover roast (love the sandwiches and other ideas shared here), you can make spaghetti and chicken parmesan and spanish rice and homemade pizza with left over sauce, everything can be used in multiple ways, and you will find yourself cooking with an eye to reuse the leftovers, not because you "made too much" but because it is easier to redo a partially cooked meal.

I have also made a beef stew with my left over pot roast and some rice on the side. Perfect for these rainy days! :)

I use mine to make a good ol' fashioned hash. Fry any additional potatoes and onions (or whatever you need to bulk it up) up in a pan, then put the roast leftovers along with the gravy (I always make extra gravy, too) in a baking dish and stick it in the oven at 350 until it is warm all the way through and a little crispy on top and serve with the extra gravy. My husband LOVES this. You can probably find some variations of this on www.allrecipes.com or some other cooking site, too. If you are fairly new at cooking and just want some new ideas that allrecipes website is a great one. Good luck!

Grind the meat up in a meat grinder, grind a couple pickles with it, and add mayo. Makes great sandwiches! Use roast beef or pork.

Well, for leftover pot roast I do two things -- shred it and make roast beef sandwiches for lunch.... little mayo and some pepper jack cheese.... YUM-O! :) so good...

The other thing I've done with it is to shred it and add a little bbq sauce... serve it as shredded barbeque on buns with some potato salad and beans. :)

Yep, same thing. Shred it and add bbq sauce. Or you can shred it and add Italian dressing and banana peppers, let that simmer for a while, voila, Italian beef sandwiches! You can also use it to make roast beef Manhattan w/it.
