Leftover Spiral Cut Ham

Hi Ladies & Gents -

I have a spiral cut ham (so good - YUM) that I cooked on Sunday. We still have quite a bit leftover. Anyone have any good recipes using the leftover ham ? I know I can freeze it but I was kind of wanting to go ahead and use it since we don't have alot of freezer space. We are just tired of eating it plain and on sandwhiches.

Thanks for any ideas !

What can I do next?

Did you happen to keep the bone? If so, this soup is really tasty!!!

It only calls for 1 1/2 cup of diced ham for the soup itself, but I used quite a bit more because I really love ham. :)

We LOVE ham and bean soup. Make sure you use the ham bone, YUM. Also love using leftover ham in omelettes and quiches, and fried rice. And of course the sliced ham makes great sandwiches.

I don't have recipes (but I have google, and Cooks.com) and I'm sure there are plenty of recipes for ham with scalloped potatoes. You can also put it in omelets for breakfast. Or cut it up (no honey on the outside?) and use it as a topping on pizza. Or stuff it into chicken breasts and make chicken cordon bleu.

We always use leftover ham for "The Ham and Spinach Thing". Such a creative name, I know.

Thaw and drain 2 packages of frozen chopped spinach.
Mix spinach with 1 container of cottage cheese, drained.
Place in the bottom of a baking dish.
Place a layer of leftover ham over the spinach mixture.
Make a white cream sauce. I season with white pepper.
Pour cream sauce over ham layer.
Top with shredded cheddar cheese and bread crumbs.
Bake at 350 until melted and hot.

I always make split pea soup. You can also make a ham/scalloped potato casserole. It is also good to flavor beans. My kids love ham in mac n cheese. It's great on homemade pizza. It's also great in eggs or as an omelette. Also a ham quiche is always yummy I bet you can google leftover ham recipes and get tons of ideas.

I scramble mine with eggs and cheese. Also if it's still cold there, soup! Good luck.

Ham Casserole, a la "Tuna Casserole"

Dice up the ham and a little onion, mix with a can of cream of celery soup, some milk, cheddar cheese, and some cooked pasta. Bake it up.

For some reason this tastes best to me with Wagon Wheel pastas.

You could chop some up and throw it in a crockpot with dry beans. I like Great Northern beans with ham, but pinto beans are good, too. Put the ham and beans in the crockpot, cover with water, and cook on low all day. Make some cornbread to go with it if you want. Yum!

I would maybe make scalloped potatoes with ham thrown in there or just add it to a green salad.

Split pea or navy bean soup is always richer with some ham,

You can buy refrigerated crescent dough and fold ham & swiss in the triangles before baking.
