I have quite a bit of cooked pork loin left over (it was a big one). Any ideas on how to use it ?

Definitely Cuban Sandwiches. Very delicious! Also love the idea of pork fried rice and BBQ sandwiches.

Shred it and use it for:

BBQ Pork sandwiches (add a little BBQ sauce)
Mu Shu Pork (get plum sauce from the grocery and add stir-fry veggies, put into a rice tortilla)
Pork tacos or burritos (put in a pot and add taco seasoning)
Pork enchilladas (use the beef enchilada recipe)

We always make pork fried rice from our leftover pork loin. Rice, stir-fried veggies, some egg and soy sauce, cooked up in a wok . . . yummm!

Shred it and make BBQ pork sandwiches
use it in enchildas, quesodillas or tamales!

Cook it in some brown gravy mix, add mashed potatoes and sauerkraut.

Sliced pork on rice would be good (could put BBQ sauce on it if you wanted to).

I second Amanda W's comment about BBQ pork sandwiches. To add a little flair, mix up some Knorr brand BBQ Rice Sides and put that, then the BBQ pork then top it with coleslaw!

Shred and add BBQ sauce, use in home made BBQ PIZZA!!!! (Or sandwiches)

Slice thin and use for Fajitas, tacos or quesadillas.

Pork fried rice or stir fry.

- cut/shred it up and make pork tacos (put in a skillet with salsa on top, serve with favorite toppings on tortillas)
- cut/shred it up and pour bbq sauce on it. Put on rolls or fresh sourdough bread
- make rice, add pork, add a jar or maybe half a jar of green tomatillo sauce, some chicken broth to make it a tiny bit soupy. Enjoy
- make fried rice with pork (egg, carrot, peas, rice, pork, pineapple optional for a sweet addition)

My mom always made soup or stew out of the leftover pork roast. We usually had cooked carrots, green beans and red potatoes with the roast. She would cut all of these up and add a can of corn, tomato paste and some pasta and make a yummy soup.

I vote TACOS!! Or anything to do with cheese and a tortilla with lettuce and other yummy fixins like pinto beans mmmmmmmmm... I think I will hit up Chipotle for lunch now.
