Healthy Crock Pot - Slow-cooker Recipes ?

I have fallen in love with the convenience of my Crockpot and am dying to find some really healthy crockpot meals that I can just prepare and run my errands for the day.

Please share some of your favorites or share some websites that have heathy recipes.

We must make things that are diabetic friendly for my Hubby!

I love my crock pot! I use it 1-3 times a week. Here is a new blog that I just stumbled upon:

I also have a book called "Fresh From the Vegetarian Slow Cooker." It has many veg versions of traditional recipes such as pot pies, pot au feu, hoppin john, etc.

There is a blog that I refer to often..."A year of Slow Cooking" (perhaps you could google it). She has tons of great recipies and tells what worked and what didn't. One our favorites is a Spinach Pesto Lasagna.

One of my favorites for sandwiches:

Take a pork roast (2-3lb), add a can of diet soda (Coke, Dr. Pepper, Root Beer...taste doesn't vary that much) and let it cook all day.

Shred the pork when you get home and make sandwiches. Very tasty and juicy. The soda gives the meat a little sweetness, but not overpowering. Just a subtle kind of carmel-y flavor.

I'll also do that for pulled pork, and just add my favorite BBQ sauce.

Takes 5 minutes and is delicious!

Fix It and Forget It also has a Diebetic version. I think it's called "Fix It and Forget It for Diebetics." I bought mine at Walmart. I really like it. (Much better than the original, by the way.

I love my crockpot and use is weekly. I love to make Salsa Chicken.
Just add chicken breasts (as many as you want), a jar of Salsa and Mexican blend cheese. I let it cook on low all day. Then I make rice in the microwave and dinner is served! I make stew, chili, desserts, etc.

The other ladies have good suggestions too. I use them too :)

A really easy one is for chicken tacos. Put a couple of chicken breasts in (I even start with frozen) and add a can of Rotel and a package of taco seasoning. Let it cook on high for about 3-4 hours and then shred the chicken up and make tacos with it! We just top with a little cheese, some tomatoes and avocado. Overall, pretty healthy and super yummy!

Also, if you like spicy food, you could do the same thing with the chicken, except put some buffalo wing sauce and a packet of ranch dressing mix in with the chicken and let it cook. Shred and serve on a bun with some blue cheese dressing and sliced lettuce and tomato. Really good..one of my hubby's favorites (mine too, actually).

3 or 4 chicken breast in the pot. Add a jar if peperoncini's and juice and a packet of italian dressing. You can add chicken broth if you want. Let it cook on low for a few hours. Shred chicken and eat with peppers or not. Just enough spice. So yummy! My trainer gave me this recipe.

Try finding the Fix it and Forget it - Diabetic cookbook- you can find them at half.com cheaper that way. They make a cook book in diabetic version so its really easy to do~ I also get emails daily from allrcipes.com - they can be converted too! Hope this helps!

Both of the recipes below can be done in slow cooker once the meat has been browned. Enjoy!

Taco Soup
1 package ground beef or turkey
1 can black beans (rinse and drained)
2 cans pinto beans (rinse and drained)
1 small onion diced
1 can or frozen package of corn (optional)
1 package taco seasoning
1 pacage ranch dressing seasoning
2 cups water (or more depending on how soupy you want it)

Garnish with:
tortilla chips
grated cheddar cheese
sour cream
fresh diced tomatoes

In skillet, brown meat until no longer pink. Add cooked meat and all other ingredients to crock pot and cook on high for 3-4 hours or low for 5-6 hours. You can also cook on stove top if you are in a hurry.

Chicken Tortilla Soup:
2 cups cooked and shredded chicken
1 onion chopped
5 stocks of celery chopped
2 cloves garlic
Olive oil
flour
1 package taco seasoning
1 box chicken stock or broth
1 sm. bag frozen corn
1 cup salsa
salt and pepper to taste
2 tsp. dried cilantro (fresh is better though)
2-4 cups water

In pot saute onions, celery and garlic in olive oil. Add flour to make a rue. Then add taco seasoning and salsa. Slowly add the stock or broth. Then add chicken and corn. Salt, pepper and cilantro to taste (doesn't need much). Add your desired water for thickness. Bring to a boil, then let simmer for 40 - 45 minutes. Garnish with cheddar cheese, sour cream and tortilla chips.
