Can anyone tell me how to make french toast? My mom used to make it for me when I was little but I can't remember how. My kids love it and the french toast sticks from Costco tend to have quite a bit of sugar on them.

Also, any good, tasty breakfast ideas for the school year would be great! 25 more days to go!!!!

So What Happened?

I can't wait to try some of these great recipes. I plan to make sure my kids eat a well balanced breakfast before I send them off to school each day.

you mix eggs with milk and you can put vanilla and cinnamon in then cook them like pancakes...
You can also do pigs in a blanket... the little smokies sausage and a can of biscuits. My son loves those.
I found this recipes for French Breakfast puffs.

Cinnamon toast is always a good one too... But thats tons of sugar.

You already have a lot of good ideas, but I just wanted to throw another one at you.
I make breakfast "muffins".
Spray your cupcake pan with PAM,
fill 1/4 full with bacon, sausage, or ham (I sometimes use lunchmeat ham because there is no cooking needed),
sprinkle some cheese over,
then fill almost to the top with beaten eggs (doctored like for scrambled eggs - milk, salt and pepper).
Bake at 350 for about 15-20 minutes until set.

Sometimes before I put anything in, I line the pan with fresh spinach. Kind of like a baby quiche without the crust. My kids wolf these down. I always make extras to throw in the microwave for those "we're late, we're late" days. Plus they are portable and not messy, so we can take in the car if we need to.
the other things that are favs around my house are breakfast burritos (eggs, sausage, cheese in a flour tortilla) and fruit/yogurt smoothies with granola. I tend to avoid french toast and waffles on school days. The syrup gives my kids a sugar rush and then they NEVER concentrate on those days. I try to save them for a "special" breakfast on the weekends.

2/3 cup whole milk
1/3 cup flour
1/3 cup sugar
1/2 teaspoon vanilla
1/4 teaspoon salt
1/8 teaspoon cinnamon
6 slices thick bread
3 tablespoons butter
powdered sugar
butter
syrup

Mix together the eggs, milk, flour, sugar, vanilla, salt& cinnamon.
Heat a large skillet, or griddle.
When the skillet is hot, add 1 tablespoon butter.
If the butter smokes, your pan is too hot; turn down the heat.
Dip each slice of bread into the batter for 30 seconds on each side.
Let some of the batter drip off, then put in skillet.
Cook each slice 1 1/2-2 minutes per side until each side is golden brown.
Add more butter, if necessary, to cook all of the slices.
To serve, put on plate, dust with powdered sugar. Serve with butter & hot syrup

Fruit and Yogurt Breakfast Parfait

1 cup (250 mL) fresh fruit or berries
1/2 cup (125 mL) plain or vanilla-flavored yogurt
1/2 cup (125 mL) granola or other whole-grain cereal
1 tbsp. (15 mL) honey or your favourite fruit jam

Spoon half of the fruit or berries into the bottom of a parfait glass or other ice cream sundae-type dish. Top with half of the yogurt, and sprinkle with half of the cereal.
Repeat with remaining fruit and remaining yogurt.
Add a decorative drizzle of honey or a dollop of jam and sprinkle the top with the rest of the cereal.
For a finishing touch decorate with a single, perfect berry or slice of fruit. Beautiful!
Use fresh fruit when it's available; otherwise unsweetened frozen or canned fruit is perfectly acceptable

i love breakfast but as we all know it's hard to make every morning so these are some things that i have come up with to make sure breakfast is still a healthy meal for us

french toast, i like to use eggs with a little buttermilk bc it makes the crust thicker, i add in cinnamon too. then cook in a pan sprayed with evoo (you can make your own sticks by cutting the bread before dipping then cook & let cool completely then freeze...then warm in oven)

fruit with granola & yogurt in a cup

bird in a nest, take a piece of bread & use small cup to take out a circle, put butter in a pan or a spray of evoo. put in bread & then crack egg in hole (i use a fork to puncture the yolk so it doesnt stay runny) cook until firm enough to turn over

we also do sausage rolls (i look for the breakfast sausage when its on sale, its like little smokies but a little bigger) then wrap in a crescent roll & bake

pancakes (i make a big batch on the weekends & then freeze the leftovers & then just heat them up in the oven. you can do waffles too)

breakfast sammies on english muffins, egg & cheese with whatever breakfast meat you like)

oatmeal (i buy i big container of oatmeal then i take coffee filters & portion out 1 serving into the filter, then stack the filters back in the container, i also add 1tsp of brown sugar to it...i hope that made sense) then you just add some boiling water & butter to it in a bowl & it cooks in 3min.

toasters: take phylo dough, use several sheets (i like about 6 layers) cut into rectangle (like the breakfast toasters at the store) use an egg wash to brush down layers...
take cooked egg with cheese & cooked bacon or sausage crumbled & fill in square leaving an edge. top with another 6 layers of phylo dough, again using egg wash on the outer square that you filled & then to keep the layers together.
bake on a sheet until dough is just slightly brown (like right before it actually browns) then take out & let cool...then freeze & warm up in toaster when ready to use!!

I am glad to see that I am not the only one doing the count down for school! Hahaha. I make omelts in a baggie. Put eggs and seasoning and any extras that you like in a omlet. mix it well and pour into baggie (only fill baggie at to about a quater full) put in a pot of boiling water and in a few minutes you have an omlet. I usually do it the night before so in the morning all I have to do is drop the baggies into the water. ( My son drinks ensure with protein in addition to breakfast.) peanut butter toast with apples, boiled eggs, poached eggs, microwave bacon is excellent. bean and Cheese roll-ups(tacos). warm tortilla with canned refried beans and cheese in microwave for 1 min. perfect breakfast. I also prepare those the night before. I am glad you asked I am Looking forward to seeing the other post of new ideas as well. Enjoy the rest of your summer

A tasty and healthier option is sweet potato pancakes. I have made them in bulk on a Sunday afternoon or Monday morning. I freeze the excess and then let my husband heat up in the microwave for 35-45 seconds so he has a healthy breakfast before work. I feel like I can sleep in a bit before the baby wakes up. This is the recipe I have used.

Good luck.

my kids love frozen waffles - I buy the whole grain low fat ones and top with peanut butter, bananas, berries, jam etc. My son LOVES frozen soft pretzels - just microwave or put in the toaster - then he eats them with yogurt - he takes that for lunch a lot too.

We eat a lot of oatmeal here and cream of wheat. I do make my own granola so that I can control the fat content.

My kids will sometimes grab a cereal/granola bar and a yogurt drink to go as well.

My oldest likes cheese omelets - but only if made with eggbeaters - and she can even do it in the microwave - quick and easy.

I do make the cupcake "quiche" that another mom mentioned - those keep in the fridge well.
