I am currently off work on maternity leave but will be returning to work in a few weeks. Due to a later start time at my daughter's school, I have to work a later shift which means I won't get home in the evening until 6:30-7:00. So, I will need dinner ready or atleast close to being ready when I get home. I know all the basic recipes that can be made in the crock pot but those get old after awhile. Can you Moms please share some of your favorites?

put a little sauce or marinade or dressing in bottom of crock pot.
throw meat on top of it.
add veggies if i'm feeling energetic.
top with more sauce or marinade or dressing.
forget until dinner time.

We do the root beer pulled pork as well - it's amazing! I add in onions, garlic, salt, and pepper when I start it though.

One of our favorites is Chicken Cordon Bleu. It's really easy and so yummy. I just steam a bag of green beans for the side and we call it good.

4 chicken breasts on the bottom of the crock pot
Top with layers of ham and swiss cheese - however much you want
Top all of that with one can cream of chicken soup and one can worth of milk mixed together
Top that with a box on uncooked stuffing...voila!

Cook on low for 6 hours and you're golden!

The best thing I can say is great a crock pot that turns to warm when it's done cooking...that's a life saver function!!!

Added: another good one. I add a can of black beans too.

Crock Pot Cheesy Chicken & Rice

1 - pound boneless skinless chicken breasts
1/2 - cup chopped onion
1 - 8 oz package Zatarain's New Orleans Yellow Rice, cooked according to directions
1 - cup Mexican cheese blend or cheddar Cheese
1 - 10.5 ounce can cream of chicken soup
1 -15 ounce can whole kernel corn, drained
3 - tablespoons butter, melted

Directions:
Place the chicken breasts in the crock pot. Add the chopped onion and spoon the soup on top of the chicken.
Cook on low 7 to 8 hours or high 3 to 4 hours. At the end of the cooking time, open the crock pot and break the chicken up in to small pieces.
Add the cooked rice, cheese, corn and melted butter to the crock pot. Stir until all is combined.
Put the lid back on and allow the crock pot to cook for about 10 to 15 more minutes until mixture is heated through and the cheese has melted.

Cook's Note: To add a little bit of a kick, add one 11- ounce can drained Mexicorn in place of regular corn.
• Use Mexican corn
• Add a can of green chilis
• Get Mexican cheese

Here are my family's favorites

Root Beer Pulled Pork:
Season a pork shoulder with salt and pepper
Place in crockpot
Fill pot with root beer
Cook on low for 6-8 hours
Serve with favorite BBQ sauce on rolls

Bacon Ranch Chicken
Place 4-5 chicken breasts in crockpot
Mix together: 1 package Ranch Seasoning
1 cup sour cream
1 can Cream of Chicken Soup
2-3 minced garlic cloves
5 strips crumbled cooked bacon
Pour on top of chicken
Cook 4-6 hours on low
Serve with noodles

My quickest and easiest and the one we love the most is pot roast. Get any size pot roast, one packet brown gravy and a packet of onion soup mix. Put the roast in the crock, mix the 2 packets with 1 1/2 cup water and pour it over the roast, leaving the onions on the top. Sprinkle top with salt and pepper. Cook on low all day. After its done, I will mix some flour with water (like a large spoon full of flour and about a 1/2 cup or less of water) and pour it slowly into the "gravy" to thicken it up. DELISH!

We also do a bunch of b/s chicken breasts, a can of drained corn, a can of drained/rinsed black beans and a small jar of salsa. Cook on low all day. The last 20 min or so, cut up a block of cream cheese and melt it in the crock in the chicken. Serve it as is or if you cut up the chicken you can mix it all together and serve over baked potatoes. DELISH!

You can also bake potatoes in the crock all day. Just wash and poke and wrap them in foil and put in the crock...do NOT add water! Cook on low and they will be perfect!

There are also a lot of Crock Pot Freezer Meals you can make ahead and freeze then pull out the night before and thaw and dump in the crock pot in the morning. Google or look on Pinterest. Good luck!

A roast in the crock pot with a cup of salsa. When you get home, shred and serve on tacos.

Ribs are good in the crock pot. Put your favorite rub on them and add a cup of coke to the crock pot. Cook in the crock pot all day. When you get home, cover w bbq sauce and put in the oven for 10 min. Done.

I put whatever meat I want in the crock pot with a marinade and let it go on slow.

I have a "mountain chicken" crock pot recipe - it FILLS the crock pot.

Corn on the cob
chicken broth
chicken breast
New potatoes
salt and pepper to taste

place chicken in bottom of pot, add potatoes, corn on the cob and then cover with chicken broth. SIMMER all day.

Crock Pot meat loaf
2 eggs
3/4 cup milk
2/3 cup seasoned bread crumbs
2 teaspoons dried minced onion
1 teaspoon salt
1/2 teaspoon rubbed sage
1/2 cup sliced fresh mushrooms
1 1/2 pounds ground beef

SAUCE:
1/4 cup ketchup
2 tablespoons brown sugar
1 teaspoon ground mustard
1/2 teaspoon Worcestershire sauce

Combine eggs, milk, bread crumbs, onion, salt, sage, and mushrooms in a large bowl. Crumble ground beef over mixture and stir well to combine. Shape into a round loaf; place in a 5-quart slow cooker. Cover and cook on Low until a meat thermometer reads 160 degrees 5 to 6 hours.
Whisk ketchup, brown sugar, mustard, and Worcestershire sauce in a small bowl; spoon sauce over meat loaf. Return to slow cooker and cook on Low until heated through, about 15 minutes. Let stand 10 minutes before cutting.

My daughter's favorite: 2 ingredient country style pork ribs and baked beans.

They sell these "boneless country style ribs" in the meat section. I know they're not actually ribs, but they resemble meaty ribs in size and appearance. So just get enough for your family, about 2 ribs per person normally.

In the crockpot, pour 1 large can of your favorite baked beans. Lay the "ribs" on the beans and then pour another can or two of baked beans over the ribs. Cook on low all day. Stir to break up the rib meat and distribute it throughout the beans.

The "ribs" will pretty much fall apart and we just serve the bean and meat mixture in a soup bowl. A quick cornbread or purchased corn muffins is the perfect side.

Rotini pasta with meat (you can add whatever meat you want)

marina sauce or your favorite tomato/spaghetti sauce
rotini pasta (uncooked)
your favorite meat diced or chopped
mozzarella cheese (4 italian cheese blend works too)
put in crock pot and let simmer on low for 4 to 6 hours.

We add in mushrooms, black olives and onions too.

Rosemary Chicken
Chicken breasts
Olive Oil
Rosemary
Salt/pepper

Place in crock pot on LOW for 4 to 6 hours. Do NOT use FROZEN meat.
Serve with Pesto Pasta and Italian bread

I use the Cooks Illustrated Crock Pot Cookbook, you can find it online and probably at your library -- WAY better recipes than anything involving a can of condensed soup or packs of gravy powder. Last night I made Moroccan Chili and served with couscous and green beans. I also like their recipe for Swedish Meatballs. There are lots of great options.

Lasagna:
Ground meat, cottage cheese, mozzarella, lasagna noodles, spaghetti sauce
Brown ground meat, drain, mix in jar of spaghetti sauce
Layer in crock pot the meat mixture, cottage cheese and then mozzarella cheese. Repeat.
You'll have to break the noodles to make them fit. Our family LOVES this!
Cook on low 5 hrs. That's the only bad thing about this one bc I'm rarely home 5 hrs before dinner during the day. But good for Sundays!
