Entertaining for Breakfast

We are baptizing my son this weekend, and everyone is coming to breakfast after Mass. We want to do breakfast, as opposed to brunch. What do we serve for munchies - as in, when we entertain in the afternoon or evening, we put out nuts or veggies and dips, etc. We are probably serving biscuits and gravy for the "main course" with a fruit salad.

Any ideas?

If you don't want to do the whole biscuits and gravy thing and just do a spread of bagels, muffins, egg casserole and such here is a great sausage biscuit recipe that is super easy and can be prepped the night before and baked the morning of. Get the prepared pizza dough(the ones in those cardboard rolls in the fridge section) roll out and then spread ground sausage (from the plastic roll) then roll up and wrap in plastic wrap and place in the freezer. Put it out the next morning and let it partially thaw so it is easier to slice. Slice into rounds and then back at 350 degrees for about 10-15 minutes, you will be able to tell when they are done. They are always a huge hit and very buffet/snack friendly. Congrats and have fun!

We adore these fruit kebobs: put apple chunks, banana chunks and grapes on long toothpick skewers. Put out a dip made from 1/2 cup plain yogurt, 1 cup peanut butter, 1/4 cup honey. You can add some flaked coconut if you like that - my daughter doesn't so we usually leave it out.

There are plenty of egg-based breakfast casseroles (recipes available on the web) that you can make up the night before and just pop in the oven that morning. Also, bagels, cream cheese and lox is an excellent alternative that doesn't require much effort. The key is to prepare items where you can also enjoy the guests and not be stuck in the kitchen. Whenever we entertain for breakfast or brunch we have shrimp cocktail and a warm cream cheese spinach dip with bread for snacking, along with drinks, while everything gets completely ready for the table. Hope it goes well.

Have fruit salad, a breakfast casserole,bagels and a spread...cheese tray not veggies, though. Vegetables are for after 12....

Hi J.,
Typically you put our "munchies" because you are visiting and waiting for all to arrive. However, if you are all arriving together after Mass I would think extra food really wouldn't be necessary. I would offer orange juice, cranberry juice, Coffee, hot chocolate...whatever drinks your family likes. That should be enough to sustain everyone until the meal. Other than that you couls put out fresh fruit and some bite sized muffins, but that just seems like it might ruin the breakfast.

Mini-bagels with cream cheese? Little cornbread muffins and jam? Small yogurts with granola to sprinkle? (Kids love that one.) Orange julius drinks? (So easy and cheap with frozen orange juice, very vanilla Silk milk and ice in a blender) Hot chocolate? Bites of bacon or ham and egg on toothpicks?
This sounds fun to me! I love a gathering around food!
I just hosted a breakfast party for 50, mostly children, at my church last weekend. I served a "lunchable"-style breakfast by giving each child a plate with one roll, one-fourth a Costco banana muffin, one slice of pear, one slice of bacon or piece of vegetarian sausage, and one "square" of egg. I figured out how to blend eggs with an immersion blender and then spread them onto a greased cookie sheet and bake them, so I could cut them into square patties. The children also got to choose a 100 percent juice Capri Sun as their beverage. No utensils were needed, since most of the kids made themselves a little sandwich with their egg, meat and roll. A few of the pickier kids ate the componants seperately, and it was nice I didn't have to hear any whining about things touching, etc. ;)

Mini muffins are great as well as some "sweet nuts" (cinnamon pecans, honey roasted peanuts, etc.) You can also have a fruit plate with grapes, apple wedges, bannanas, things that are easy to prepare (you can also get already made fruit trays at your local market).

Congratulations ont he baptism. Both of our children screamed at the priest. Thank goodness they now think he is "cool." We had a breakfast for after our daughter's baptism. We hit Costco (Sam's Club) before teh big day. We did a melon ball salad we made the night before. Also, we got the big muffins and cut them in halfs and quarters and put them on a platter. My mother made an egg casserole that you make the night before. Unfortunately, I can't find the recipe at the moment. If you would like it, I will find it and message it to you on here. We also served teh frozen mini-quiches. We borrowed a big coffee pot from the church. So, we had coffee, hot water for tea, and orange juice that we set up in a serve yourself format. I agree with Becki. More food is probably not necessary. I can only think of mini-quiches if you really want people to have something to munch on. But an assortment of beverages is probably sufficient.

I tend to overdo it, but I would do fresh fruit with a yogurt dip and mini muffins...you know something sweet and or fresh to go with the salty. Keep it simple, you don't need a lot of extra stress on such a special day. Have fun with it. Good luck.
