My son has an egg allergy and was wondering if anyone knew of a bakery that makes eggless cakes. Also, do you have a eggless cake, cupcake recipe that you dont mind sharing.

My son also has an egg allergy (plus wheat, dairy and nuts). I have tried many different mixes and the one that I've found to actually taste good is by the brand Cherrybrook. They have vanilla and chocolate flavors. You can get it at Target and Sprouts. They also have an icing that tastes okay. You might also get a box of egg replacer that can be used in any recipe. It's basically a binder which is what eggs do in many recipes. It's a powder and you mix it with water. I found it at Sprouts. Sometimes if I'm out of eggs and I have a recipe that calls for eggs, I'll use that and no one is the wiser. It just will not make scrambled eggs.

Wacky cake is really really good. Super easy too.

Prep Time: 5 minutes
Ingredients:

* 1 1/2 cups unbleached all-purpose flour
* 1 cup sugar
* 3 tablespoons unsweetened cocoa
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 1 teaspoon vanilla
* 1 teaspoon vinegar
* 5 tablespoons vegetable oil
* 1 cup cold water

Preparation:
In a large mixing bowl, mix flour, sugar, cocoa, soda and salt. Make three wells in the flour mixture. In one put vanilla; in another the vinegar, and in the third the oil. Pour the cold water over the mixture and stir until moistened. Pour into 8 x 8-inch pan. Bake at 350°F. oven for 25 to 30 minutes, or until it springs back when touched lightly.

I happened to find a bakery in Irving that advertises that they specialize in making eggless cakes. It is called Hot Breads. Their website is www.dfwhotbreads.com. I just looked at the business card and they have locations on Coit Rd. in Plano ###-###-####), also off Central Expwy in Richardson ###-###-####, and MacArthur Blvd near 161 in Irving ###-###-####. I hope this helps.
