I'm looking for an easy, but very yummy breakfast casserole to serve my family for brunch on Easter. Last year I did a strata that was great, especially since I prepared it the night before and baked it that morning. There will be approx 6-9 adults, so something that feeds a crowd would be great! Thanks in advance...I appreciate your time!

I don't have a set recipe, but I scramble a dozen eggs and add whatever I like. I put it in a 13 x 9" pan which is oiled with olive oil. I add things like crumbled bacon, chopped ham, sauteed onion, shredded cheddar cheese, chopped bell pepper, jalapenos, etc. Just bake at 350 until the center doesn't jiggle anymore. (about 45 minutes)

Overnight Coffee Cake - it is the best! I made this for my family several years ago for Christmas morning; it has been a "must have" ever since. I now have 2 son in laws and they can't eat it fast enough! You mix it the night before and pop it in the oven in the morning and let it bake while you enjoy your time with your family.

2 C.flour; 1 t baking powder; 1 t sodda; 1/2 t salt; 1 c sugar; 1/2 c firmly packed brown sugar; 1 t ground cinnamon; 1 c buttermilk; 2/3 c butter or margarine, melted; 2 large eggs; 1/2 c firmly packed brown sugar; 1 t cinnamon.

Combine first 7 ingredients in a large mixing bowl; add buttermilk, butter and eggs. Beat at low speed until dry ingredients are moistened; beat at medium, speed an additional 3 minutes.
Poor batter inta a greased and floured (or Pam'ed) 13x9x2 inch pan. Combine 1/2 c brown sugar, pecans and cinnamon, sprinkle over the batter. Cover and chill overnight. Bake, uncovered at 350 degrees for 30 minutes or until wooden pick inserted in the center comes out clean. Serve WARM!!

You can bake immediately without chilling overnight - it will not hurt the texture or flavor.

We make the following recipe and every time the guests want the recipe. Easy make ahead and cook the next morning.

Hash Brown Breakfast Casserole

Makes 8 servings

1 pound ground hot pork sausange
¼ cup chopped onion
2 ½ cups frozen cubed hash browns
5 large eggs, lightly beaten
2 cups (8 ounces) shredded sharp cheddar cheese
1¾ cup milk
1cup all-purpose baking mix
¼ teaspoon salt
¼ tsp pepper
(we added a can of green chiles to ours and it was GREAT!)

Toppings: picante sauce or green hot sauce, sour cream

COOK sausage and onion in a large skillet over medium-high heat 5 minutes or until meat crumbles. Stir in hash browns, and cook 5 to 7 minutes or until sausage is no longer pink and potatoes are lightly browned. Drain mixture on paper towels; spoon into a greased 13 x 9 inch baking dish (this is the point where I included the green chiles) and stirred them in a little. (I used a metal pan so after refrigerating it could go straight into the oven the next morning)

STIR together eggs, cheese, and next 4 ingredients – stir well; pour evenly over sausage mixture. Cover and chill 8 hours.

BAKE, covered with nonstick foil, at 350 degrees for 45 minutes. Uncover and bake 10 to 15 more minutes or until a wooden pick inserted in the center comes out clean. Remove from oven, and let stand 5 minutes. Serve with desired toppings. Garnish, if desired.

Goes great with fruit salad!

I got this recipe a while ago and don't make it enough! You can make this ahead of time and bake it in the morning also! Hope this helps! SO YUMMY!

Monte Cristo Casserole (Pampered Chef cookbook)

1 cup milk
6 eggs
2 packages (12.5 oz. each)frozen French toast slices,
thawed
8 oz deli baked ham, diced
8 oz deli roast turkey, diced
4 oz swiss cheese grated
1/4 cup fresh parsley, snipped
powdered sugar, for top
raspberry jam for dipping

Preheat oven to 375.
Heat milk in microwave in a covered bowl on high for 3
minutes or until hot. ( I found it exploded if kept in
that long, so make it 2 min.)
Whisk eggs in a bowl, then add hot milk to eggs,
whisking until blended.
Cut french toast into 3/4-inch cubes; place in large
bowl.
Pour egg mixture over french toast cubes, toss gently.
Combine ham, turkey, swiss cheese and parsley in bowl
and mix.
Layer half french toast cubes in bottom of 9X13 pan.
Top with half the meat/cheese mixture.
Layer rest of french toast cubes.
Top with rest of meat/cheese mixture.
Bake for 30-35 minutes or until golden brown and set
in center. Remove from oven and let cool for 10
minutes.
Sprinkle with powdered sugar.
Cut and serve with raspberry jam.

I have a recipe for a country ham cheesecake that is awesome! So much of if can be prepared ahead & assembled when ready. I hope that it copies ok for you.

Country Ham Cheesecake
12-16 Servings - B.

6 T. butter, melted
3 C. oyster crackers
1 C. freshly grated parmesan cheese (3 oz.)

4 - 8 oz. cream cheese, room temperature
7 large eggs
2 C. grated swiss cheese (8 oz.)
* 1 1/2 to 2 C. 1/2" cubes of ham
1/3 C. chopped fresh chives
1 t. salt
1/4 t. white pepper

Preheat oven to 300 degrees. Brush 9” springform pan with 1 T. melted butter. Finely grind crackers in processor. Mix cracker crumbs with parmesan and 5 T. melted butter in medium bowl to blend. Reserve
1/2 C. crumb mixture for topping - press remaining crackers onto bottom and up sides of prepared pan. Refrigerate while preparing filling.
Using electric mixture, beat cream cheese and eggs in large bowl until
Smooth. Mix in remaining ingredients. Pour filling into crust. Sprinkle with reserved 1/2 C. crumbs over.
Place cheesecake on rimmed cookie sheet. Bake until filling no longer moves in center when pan is gently shaken, about 2 hours. Cool 30 min.

Can be prepared 1 day ahead. Cover and refrigerate. Let stand 2 hours at room temperature before serving.

* I cut the ham in smaller pieces.
Go to HONEY BAKED HAM & buy a ham bone for $5. and you will have lots of ham for this.

1 Stick (1/2 C.) unsalted butter
1 C. packed brown sugar
2 T. corn syrup
Country style thick bread (I use Texas Toast)
5 large eggs
1 1/2 C. 1/2 & 1/2
2 t. vanilla
1 shot Grand Marnier
1/4 t. salt

In a small heavy saucepan melt butter, brown sugar and corn syrup until smooth.
Pour into 13 X 9 X 2 inch baking dish.
Cut the crust off bread (enough to completely cover inside of dish). Put on top of above mixture.
Combine eggs, 1/2 & 1/2, vanilla, salt and Grand Marnier. Mix well and pour over bread. Make sure it fully covers the bread. Let stand for a few minutes to soak into the bread. Refrigerate for up to 24 hours (1 - 2 hours is OK). Bake at 350 degrees for 40 minutes. Sprinkle with powdered sugar.
Serves 6 - 8.
...and yes it is as good as it sounds.

Make Ahead Breakfast Casserole on allrecipes.com is a big hit at our house. It is simple and delicious. The seasoned croutons make a flavorful crust and the presentation is attractive even without the parsley garnish. Our family makes this for every holliday and it is a favorite.

cook sausage or bacon (we use polska keilbasa or similar)
shred 2 cups cheddar cheese
*set these aside until later
6 eggs beaten
3 cups milk
1 stick (1/2 cup) butter melted
1 cup Bisquick
salt and pepper to taste
mix together and pour into 9x13 pan
sprinkle cooked meat and cheese on top
bake at 375 until brown on top approx 35 minutes
* this works well when mixing a double recipe. I always double it because it either gets eaten and it makes great leftovers.

I use this breakfast casserole all the time to feed a crowd and it is always a hit! Like the strata, you can make it the night before and bake it that morning...

Ingredients:
1 lb breakfast sausage
10 eggs
8 slices of bread
1c sharp cheddar
1tsp salt

Directions:
Cook & crumble sausage (set aside to cool).
Slightly beat eggs.
Cut bread into cubes, crust and all.
Mix all ingredients together.
Spray a 9x13 casserole dish.
Pour combined ingredients into dish and refrigerate overnight.
Remove pan from fridge while prehaeating oven to 350.
Bake for 35min, or until the whole top and center is firm.
Enjoy!

I think you'll enjoy this one!

1/4 cup margarine or butter
1/2 lb. fresh asparagus "trimmed & cut into 1" pieces
1 medium red bell pepper, chopped
1 medium onion, diced
1 loaf of french bread, cubed (about 8 cups)
2 cups shredded Cheddar Cheese
1 cup ham, cubed (you can use deli ham)
1/3 cup Sue Bee honey (or any kind)
8 eggs
2 1/2 cups milk
1/2 tsp salt
1/2 tsp pepper

In med. skillet, saute' asparagus, pepper and onion in margarine for 3 to 5 minutes. In greased 9X13 pan, layer bread cubes, ham 1 cup of the cheese and sauteed vegetables. In a med. bowl, beat together reamining ingredients (except for cheese) until well mixed. Pour mixture evenly over layers and sprinkle with remaining cup of cheese. Refrigerate overnight. Bake uncovered at 350 for 45-50 minutes, or until golden and puffed. (I used a little more cheese for the top)

*Try a mixutre of shredded Parmesan, Mozzarella and Romano, I think it comes in one package by Sargento

Here are two for ya! The first is from my Mom and the second is similar from Christmas Recipes from the Lionhouse.

HAM RICE BAKE

Ingredients:

3 cups cubed cooked ham

2/3 cup long-grain rice, cooked

1 TBLS snipped parsley (I use closer to ¾ cup)

1/3 cup chopped onion (I use more and sometimes red onion to add color)

3 TBLS butter or margarine

3 TBLS flour

½ tsp salt

1/8 tsp pepper (I usually add more)

2 cups milk (I heat to almost boiling in microwave to speed up the process)

3 beaten eggs

1 TBLS prepared mustard

Topping:

1 TBLS butter or margarine (I always use butter)

¾ cup soft bread crumbs (I just take a couple slices of bread and crumble them)

Combine ham, hot rice, and parsley.

Cook onion in the 3 TBLS of butter; blend in flour, salt and pepper.

Add milk all at once.

Cook and stir till thickened and bubbly.

Stir HALF of the hot mixture into eggs; return to saucepan and cook 1 more minute

Blend in mustard

Stir sauce into ham mixture.

Pour into a 10X6X1 ½ inch baking dish.

Melt 1 TBLS of butter; stir in the crumbs.

Sprinkle atop the casserole.

Bake in 350 degree oven for 25 to 30 minutes. Let stand 5 minutes.

Serves 6

CHRISTMAS MORNING CASSEROLE
8 slices bread
1/4 cup [butter], melted
1 cup cubed ham
2 cups grated sharp Cheddar cheese
4 eggs, beaten
1 1/2 cups milk
1/4 salt
3/4 dry mustard

Preheat oven to 300 degrees F. Remove crusts from bread. Brush on melted [butter]. Cut up into cubes and spread into 9x13-inch baking dish. Sprinkle with cubed ham and grated cheese. Mix eggs, milk, salt, and mustard and pour over casserole. Bake for 1 1/2 hours. Makes 8 servings.

I do a christmas morning brunch every year and try to mix up the menu each time. But one of the best was when I had a make your own parfait. I had all different kinds of fruit(strawberries, blueberries, bananas,etc) Vanilla Yorgurt, granola, dried fruits and nuts. Then I served whole grain english muffins and wholegrain bagels and some peaches and cottage cheese. It was a light, healthy, and refreshing change from the usual fat and cholesterol laden bacon and egg dishes! Other than toasting the bagels and muffins there is no other coooking involved. Just a little prep! And its easier to clean up! Good luck!

Check on Kraft.com. I get their free magazines, and there is a breakfast casserole that was in one of them that I made for my family. It was SUPER EASY and used crescent roll, diced ham, eggs, and cheese. I need to find that issue because that sounds really good right now!!!

Easy Ham & Cheese Quiche
1 pie crust (we use store bought)
1 cup ham, chopped up
1 cup shredded cheese (any kind, we use fiesta blend)
4 eggs
1 cup cream, half & half, or milk (we use skim)
salt & pepper to taste

Spread ham on bottom of pie crust.
Spread cheese on top of ham.
Mix eggs, milk, salt and pepper well and pour over ham & cheese.
Bake at 350 for about 45 minutes.

Several notes:
You can substitute bacon or sausage if you prefer. Cook and crumble first.
I usually make 2 pies at once. They keep well and are great for lunch or dinner, too.
I usually set both pie tins on a cookie sheet before filling with ingredients, to make transferring back and forth to oven easier. Simply cook them on the cookie sheet (keeps the oven cleaner, too).
We usually serve it with lots of fresh fruit.
