Hello Ladies, I am trying learn to make healthy meals. And one problem I have is making bake chicken or even coming up with other ideas on how to cook chicken. Please help!!! Let me say that when I make bake chicken I just season the meat with season & salt, pepper, and galic salt. But I would like to jazz it up a bit to make it taste a whole lot better that way I can stick to a healthy meal.

My children along with their cousins love it when I marinate my chicken (preferrably chicken wings/drummettes) in Italian dressing...After you clean your chicken poke some holes in it and place it in a bowl pouring 1 1/2 bottles of Italian dressing on them, cover with saran wrap and place in the refrigerator either over night or the least 3 hours. Place oven on 350--put chicken in pan--sprinkling chicken seasoning and Lawry's seasoning salt and pepper on chicken.. Then bake.. It is delicious.. Try it and let me know how you and your family liked it..

Off the top of my head - no exact amounts (sorry):
No Peek Chicken

eight boneless, skinless chicken breasts
two cans of fat free mushroom soup (or another cream soup)
two soup cans full of skim milk
two cups of instant rice
1 pack of Lipton Onion Soup

Mix the rice, soup and milk together in a 9 x 13 pan
Bury the chicken in the rice
Sprinkle with Lipton soups
Cover pan with foil
Bake for like two hours on 400
Do not peek!

Magic Chicken
Put your chicken breasts in a ziploc bag with a little salt, a little pepper and three whole sliced lemons. Marinate over night. Bake for an hour at 350. Yum.

Try Honey-Curry Chicken.
1 1/2 cups honey
1 small stick of butter/margarine
1 1/2 t curry powder
3/4 t dry mustard
Mix together in a sauce pan. Bring to a boil. Just as it is starting to grow in the pan take it off.
Then:
2 large baking potatoes, peeled and cut like an orange wedge
Place in the bottom of a square baking pan.
Stir in honey mixture. Bake for 20 min at 350 degrees.
Then stir in about 8 thin strips of boneless, skinless chicken breasts. Bake again for 20 min or until chicken is done. That should feed you both well.

There are Mrs. Dash marinades that are salt free and a lot of the same seasonings that are salt free as well. to give it a different flavor.

i sometimes use a bread cumb mix by itself or crunch in those onion things you usually use on the top of string bean casarole.. you crunch those up in the bread crumb mixture for a oniony flavor. i dip my chicken in ranch dressing before covering them with the mixture. you can use low cal dressing..

speaking of dressing, i've heard a lot of people use italion dressing as a marianade. i don't like italian dressing so i've never had it.

my dad had to start eating healthy for heart reasons last year at this time. so i looked into a lot of healthy ways for him to each chicken. plus he has to stay away from salt (high blood pressure/cholesteral as well).

i've tried eating healthier,, i'm not so good at it, but someone sugggested to me to get a vegitarian cook book so i could learn how to cook veggies different ways. that's my big problem. veggies.

there are so many seasonings out there you can us, experiment.
also you can use injectable seasonings as well.

bake it in chiken broth that makes it yummy and tender. Or a can of cream of mushroom or celery..

Well first and foremost there are about a million chicken centered seasonings on the market. From lemon pepper to cajun. I also like to make chicken and stuffing. If you make it with fat free cream of celery and chicken it isnt' bad for you. I also like chicken and rice. Chicken with bar b que over it and baked. potato puff caserole with chicken instead of ground beef. I make almost all of my meals with baked chicken so I have about a million ideas. If any of these sound appetizing let me know and i'll write out recipes. I have everything from cheap options to rather expensive.
