Is "pile everything on the passenger seat, and go through it in a embarrassed panic when someone has to sit there" an organizational plan? If so, that's mine :)

First - remove everything.
Then - only take the bare minimum of what you need with you.
My husband treats his vehicle like a rolling closet - I swear he carries a spare car in parts inside his car - and it's ridiculous!
I like to empty out my car and give it a good vacuuming out.
I keep a beach blanket towel in there, and a tub trug (holds muddy or wet shoes, or groceries, etc) and not too much else on a regular basis.
For trips - keep things at a minimum and keep them contained - a tote bag works well.

One of the things I try to do is make the kiddos take out the trash when you get out of the car.

If we are doing a road trip we keep a thermos of diluted juice on ice a bag of pretzel nuggets a plastic jar of peanuts and a bag of baby carrots in the car. Helps prevent crankiness when hit with traffic.

We also keep a garbage bag to deal with any messy items and to be sure we discard them. I've got a spare hoodie in the car and that's about it.

I have a tub in the back and keep extra dance stuff, her basketball gear, extra sanitary products, water bottles, and more.

This way it doesn't slide around and it stays upright.

In case you are playing road trip I can recommend Bearoy car back seat organizer which helped me a lot with entertaining the kids and organizing my kids toys during long road-trips. Check their website http://organizer.bearoy.com.
This organizer also has neoprene thermo pockets which help you to keep drinks at the ideal temperature. Pretty cool.
Hope it helps.

I have a 2 seater sports car so not much room.

I keep old towels and a laundry basket in my trunk. When I get groceries, etc, I put things in the laundry basket and have 1 trip inside. The towels are to keep
on hand in case a dog is messy, I step in something, need to wrap something to keep it steady, etc.

I don't like extra stuff in my car and I clean it out daily when I get home from my last errands.

Our car is hideous at the moment (husband only drives) so I won't discuss ours. My son found his wallet the other day shoved down a seat which had been missing for months.

My friend is super organized. She has one of those collapsible picnic basket type fabric baskets like this
http://www.aliexpress.com/popular/foldable-shopping-baske...
She keeps that up front and anything she needs to do - mail parcel, picking up mail, etc. gets shoved in that.
She has tubs in back and towel for dog.

I like the idea of the basket because it comes in house with her at end of car trip and she keeps it on table by her front door. So it goes back and forth from house to car and holds everything. They seem to know where stuff is (unlike us).
