Anyone make breakfast burritos to freeze? We will have my stepdaughter the month of July and I will need something quick and easy to feed her in the mornings. She is use to eating pop-tarts and thats OK every once in a while but not every morning. We say when she is at our house she is on "sugar detox"! Any other suggestions for quick healthy breakfast?

We do frozen waffles w/ low sugar, cereal- my kids love the ones w/ the berries already in them-, Muffins and yogurt or Bagles and yogurt. At 9 my son loved being able to do it on his own!

Here is another house favorite (I even do this w/ potatoes and bacon for dinner!)

ZIPLOCK OMELETTES

- Crack 2 eggs ( large or extra-large) into the quart size Ziploc bag (not more than 2 ) shake to combine them.

- Put out a variety of ingredients such as: cheeses, ham, onion, green pepper, tomato, hash browns, salsa, etc.

- Each guest adds prepared ingredients of choice to their bag and shake.

- Make sure to get the air out of the bag and zip it up.

- Place the bags into rolling, boiling water for exactly 13 minutes. You can usually cook 6-8 omelets in a large pot. For more, make another pot of boiling water.

- Open the bags and the omelet will roll out easily. Be prepared for everyone to be amazed.

- Nice to serve with fresh fruit and coffee cake; everyone gets involved in the process and a great conversation piece.

Imagine having these ready the night before, and putting the bag in boiling water while you get ready. And in 13 minutes, you have a nice omelette for a quick breakfast !!!

We do sausage biscuits, bagels, chewy granola bars, instant brown sugar oatmeal, apples with peanut butter and crescent rolls cut in half wrapped around lil' smokies.

I love to make pigs in blankets...the smaller version. I buy about 2 or 3 tubes of biscuit dough (pillsbury flaky)...and the little smokie sausages. I wrap biscuit dough (CORRECTION: i cut in half each biscuit slice.) around one little smokie. I connect the dough all the way around smokie...and place it seam-side down. [so it won't open up during baking.] And i bake them according to the biscuit package directions.
These make a great addition to scrambled eggs/or eggs over easy.

I also like to make monkey bread for kids...but that might be too much sugar. ???? I take 3 tubes of biscuit dough...quarter each slice of biscuit. And then shake/cover each piece in a bowl with cinnamon/sugar mixture (1 cup sugar, 2 tsp cinnamon). Then i place the cinnamon sugar quarters in a greased bundt pan...just keep layering on top of each other....add chopped walnuts if you prefer. When all pieces are in there, melt one tube of butter with 1 cup brown sugar....boil for 1 minute, then pour of pieces evenly in bundt pan. Bake at 350 degrees for 35 mins. Wait, and let it cool down for 10 mins. before flipping the cake out of pan onto a plate. No need to cut it...just pull apart pieces with fork or fingers (hence the name "monkey bread"). This is always a big hit with my family (both sides of my family!). It has become a family tradition...a special breakfast for big days.

Lindee,

I use to make a batch every Sunday morning after I made breakfast. Super easy. I would just cook the sausage scramble the eggs in the same pan add some cheese, and spoon into tortillas, wrap in saran wrap and stick in the freezer. Pop them in the microwave for about 45 seconds and you are ready to go. You can do the same with homeade sausage biscuits, super easy also. Or pigs in a blanket, I use crossaints and little smokeys. Wrap the dough around the sausage, cook at about 350 for 10 minutes, let cool and pop in the freeezer.

Good luck!!

You can make muffins together one morning...or the night before. Cook bacon and put in the fridge...heat it up when you're ready. You can use turkey bacon...tastes the same! Good luck!

I've never made breakfast burritos to freeze but they are pretty quick and simple to make.
Some other hot quick and easy meals I like to make for breakfast are:
1) Bisquits & Gravy with Scrambled Eggs
I use the McCormick Sausage flavored country gravy (Red packet)
Pillsbury Golden Homestyle Butter Tastin bisquits.
The directions tell all and it's very simple and delicious.

2) Pigs in a blanket
I use the Eggo Pancakes (found in the breakfast freezer isle) and the Jimmy Dean already cooked sausage links.
After cooking the pancakes and sausage roll the pancake around the sausage and use a small cup to dip in syrup.

3) Jimmy Dean sausage bisquits are quick and delicious.

A few more quick delicious ideas are the Jimmy Dean already cooked sausage patties & links and Oscar Myers already cooked bacon and canadian bacon.
Just heat up in the microwave and of course no grease burns! : )
I usually add those to a bowl of oatmeal or cereal if I don't have time to cook a breakfast and my kids love them.

Hope some of my ideas help!

I love to use Sister Shuberts cinnamon rolls and pigs in a blanket. They are very easy to serve when having guests. They are in the frozen food section and are delicious. I usually cut up some fruit to serve with these. Enjoy!

try turkey sausage patties crumbled up in to your breakfast burritos, it is a lot healthier than pork and tastes just as good!

Also, i love to buy the frozen buttermilk buscuits and pour fried apples over top instead of gravey. I bought an apple peeler corer slicer for 10 bucks and I can peel, core, and slice about 10 lbs of apples in 30 min. Then I just boil in a ex-large pot with a little bit of water until almost like applesauce (but some chucks are OK). Then I freeze in small containers. The night before I get one out of the freezer and let it thaw. It the morning I fry them in a pan with butter and suger to taste. I don't use much sugar because I love it kind of tart. YUM!!!
I am going to cook some right now! Also, in a pinch you can use regular store bought applesauce, but its not nearly as good. Still, its a lot healthier than gravy!

Breakfast burritos are great! I usually make them in the summer when we go to the lake. You can make a huge batch, wrap them individualy and then take out one whenever you need it. I make mine with eggs, bacon and red bell peppers. And with such a great variety of tortillas to choose from, you can't go wrong. I think Central Market has the best flour tortillas.
Another favorite at my house is open faced breakfast sandwiches. I use Ezekiel bread and it's awesome! I toast the bread while the egg is frying. Then when the bread is ready I put a slice a sharp cheddar cheese on it. You can add ham on top of the cheese if you like and then top it off with the egg. I think I'm going to make one right now... made myself hungry typing about it.
Good luck!

I froze breakfast burritoes very successfully.. scramble up a heap of eggs... get you some flour tortilias... and just basically put whatever you want on the tortilia, roll it up and freeze... put 5-10 of them in a big ole freezer bag...when you're ready to eat them, just unroll from the plastic wrap and wrap in a paper towel...nuke for a minute... to 1.5 minutes and voila... you've got breakfast wrapped up!

I have the hardest time getting my son to eat anything in the morning but when my best friends mom introduced him to pancake and sausage on a stick I was amazed to find out that he loves them. They are made by Jimmy Dean and you can get them at Walmart. They are normally right next to the corn dogs. They only take 1 min to cook.

I know a lot of responses have already come in and I loved all the great ideas! But I just had to share my most favorite breakfast (and my 15 month old son loves it too). I make a double batch and cut out pieces throughout the week to eat for breakfast, lunch, and dinner. I love this stuff!!! :)

It is a crustless Spinach quiche.
Spinach Quiche recipe
1 (10 oz) package frozen spinach, thawed and juice squeezed out or drained (I've also used fresh spinach)
1 bunch green onions, finely chopped (white parts only) or 1 whole scallion
4 eggs, beaten
1 (16 oz) pkg cottage cheese
2 c shredded cheddar cheese
1/4 tsp. nutmeg

Preheat oven to 325 degrees F. Lightly grease a 9 in. pie or quiche pan. Place spinach in dish towel and squeeze out the excess liquid. Combine spinach, green onions, eggs, cottage cheese, cheddar cheese and nutmeg.
Bake uncovered for 60 mins. or until eggs are set.

I buy from Schwann's pancakes and pre-cooked bacon. Most pre-cooked bacon that you buy in the grocery isn't good. Schwann's is great. My kids can have bacon & pancakes in less than 5 minutes--really awesome!
