Does anyone have a good Black-eye pea recipe? My husband and I really don't care for them but I know we need to eat some on New Years Day.

I have never liked them either but I LOVE black-eyed pea dip. Its my favorite!!!!
Drain two cans of black eyed peas , one can of diced green chilis and put it in your blender. Add some melted butter so that it doesn't get clogged up. Blend it until it is smooth (I don't like it lumpy). You can also add some jalepenos to to make it a little spicy if you want. Then put it in a bowl and add grated cheese (the more the better). Warm it in the microwave or put it in a small crock pot to stay warm. We just have it with plain Doritos or Tostitos and everyone loves it! Happy New Year!

This is the one I've used for a few years.... it's off of www.allrecipes.com

INGREDIENTS
1 pound dry black-eyed peas
water
2 cups chopped cooked ham
salt and pepper to taste
1 pinch garlic powder
2 onions, diced
1 (14.5 ounce) can whole tomatoes
DIRECTIONS
Place black-eyed peas in 8 quart pot. Add enough water to fill pot 3/4 full. Stir in ham and diced onions, and season with salt, pepper, and garlic powder. Place tomatoes in a blender or food processor, and blend until the tomatoes are liquefied. Add tomatoes to pot. Bring all ingredients to boil. Cover the pot, and simmer on low heat for 2 1/2 to 3 hours, or until the peas are tender.

If you like creole foods, try cajun style black eye peas in a bag. You can find them at Kroger, Albertson, Tom Thumb, not Walmart. They come with the seasoning in a separate bag. Let them soak overnite, then add pork or ham for seasoning. The secret is to cook them at low temperature for 6 hours!! They are delicious.

I make Texas Cavier. If you want the exact recipe I will get it to you, I have no access to my pantry right now with some construction for the next couple of hours.

I use 1 bag of frozen black eye peas, cook until they are firm to the bite. drain.
Add about 1/2 cup apple cider vinegar, some olive oil, a touch of sugar, a touch of cayenne, chopped celery and chopped green onion. Make about an hour ahead of time so the flavors are all set. Stir and enjoy.

I know soaking them overnight helps softening them as well which my parents have done for years and they are AWESOME..
You also add some tabasco sauce..

This is easy and not too bad, my kids love them and so does all who eat.

Frozen lrg bag of blk eye peas
2cans chicken broth
1stick butter
1 half lb ground beef
1can mild rotel tomatos , I blend but you can use out of can if you like chucky like, (i blend for my kids)

Cook about 2hrs on med heat. right before eating add half cup of instant rice or a boil in bag for about 5min.
If boill in bag you can just tear it and throw in the rice. I season with garlic pepper salt and creole seasoning. These are good. L.
