I know you already received a lot of answers but I will give you my quick recipe. 1lb pinto beans, about 4 strips of Bacon cut into small pieces, 1 jalapeno chopped ( I take the seeds out cause I don't like it hot), 1 onion chopped, lots of salt, cumin, and garlic powder.
I rinse the beans real good about 3 or 4 times and throw all the ingredients in with a lot of water put it on low overnight and there ready in the morning. I either leave them on warm till I need them or put them in the fridge and heat them up later. Simple easy and very good.

Slice up a medium onion, get some pork salt or sausage of you choice cut up and place with some dry beans that have been soaked overnight. Add water, salt and pepper. Cook on high for about 4-5 hours or low for 8 hours. Done. It's pretty hard to mess up anything slow cooked ")

I only know how to make the ol' pinto bean. They work in the crock pot. I put them in there, add water and let them start cooking for about 40 minutes and add salt, diced onion, diced tomato, and about a table spoon of brown sugar. Leave them on low all day. Rarely do I have to add more water.

It should work fine, but I still soak dried beans overnight, discard the water and rinse a few times before putting them in the pot (or crock pot) otherwise we all have gas problems later on. Soaking works better than Beano, for us anyway.
Chili in a crock pot would be great, and there's no way you could over cook it.
I came across a white chili recipe on Allrecipes.com a while ago that was wonderful.

I wish I could remember but I don't... There is an awesome blog called A Year Of Slow Cooking. The woman used a crock pot to cook every meal for her family for a year and is still using it... she loves hers. She has tons of recipes! Enjoy!

Put pinto beans in the crock pot with lots of water. Add flavorful sausage or bacon, onion, bell pepper, one jalepeno, chopped tomatoes and cilantro. Season it with salt and garlic powder. Can't remember how long to cook it...for a while, though.

Yummy!

That's what I'm doing tomorrow. I love doing it in the crockpot because I never burn them...LOL I bring my beans to a boil first then pop them in the crockpot on low. I cook them all day. If you're in a hurry, you can put them on high. They'll be ready by dinner time. Once we were delayed and didn't eat until late. They were still awesome and not over done at all. This is an awesome thing!! Good luck!!

Put any kind of beans in the crock pot with a ham hock or make a ham and use the left over ham , onion, and hock in the crock pot. Add carrots 2hrs before done. Put them on low in the morining and are done at dinner time.
