My family is vegetarian and I feel like we've gotten into a little bit of a cooking rut recently. We eat lots of veggies in the summer from our farm share, but for protein I feel like I've just gotten into the habit of making tofu or tempeh. I'd like to cut back on those, both because of the soy and the cost. Beans are super cheap and healthy, so I'm trying to make them more often, but one can get tired of the same 4 or 5 recipes all the time. Any ideas? We like all kinds of beans.

Black bean Dip - you can eat it with bread or as a side dish to veggies...

4 cans of black beans
The juice of 4 limes
2 cans of petite diced tomatoes
2 large sweet or Vidalia onions chopped
Cilantro to taste

Mix all BUT cilantro in a large bowl and let sit in fridge for 2 - 4 days stirring twice a day. Add cilantro when ready to serve.

Crisscross Salad - yummy! Super easy and contains veggies AND beans. You can throw in any kind of bean, and the taste is "masked" by the Italian dressing (or whatever dressing you choose). I love this recipe - it gets my kids to eat beans! I use less dressing than the recipe calls for (about half).

I make a spanish style black bean that my sister taught me.
I usually eat it on top of rice and with some ground beef. but it is Amazing even without the meat.
See if you have Sazón Goya brand seasoning at your store.

Dice:
Green pepper
Onion
Garlic
Green olives

In a pan, heat up Olive oil add onion, Green pepper & garlic; cook till soft
Add beans & green olives.
Add 1 can *from the beans* of water per can of beans used.
Add one packet of the Sazón Goya.
Bring to a boil.
Add green olive juice & Oregano.
Simmer till beans are soft enough for your liking.
THen serve on top of rice.

It is actually one of my favorite bean meals :)

Black Bean Veggie Burgers from allrecipes.com are great!

Bean soup - 1 can black, 1 can garbanzo, chicken broth, olive oil, 1-2 cans diced tom., Italian seasoning (you can add more or less beans) heat in pot but don't boil or the beans will split. Serve topped w/ cheddar cheese and breadsticks on the side. Great nutritious dinner!

Cowboy Caviar! This is great with chips, on baked potatoes, or on lettuce.
Ingredients
1 (15.5 ounce) can black beans, drained
1 (15.5 ounce) can black-eyed peas, drained
1 (14.5 ounce) can diced tomatoes, drained
2 cups frozen corn kernels, thawed
1/2 medium onion, chopped
1/4 green bell pepper, finely chopped
1/2 cup chopped pickled jalapeno peppers (optional)
1/2 teaspoon garlic salt
1 cup Italian zesty salad dressing
3/4 cup chopped cilantro (optional)
Directions
1.Mix beans, peas, tomatoes, corn, onion, bell pepper, and jalapeno peppers in a large bowl. Season with garlic salt. Add dressing and cilantro; toss to coat. Refrigerate for 20 minutes or until ready to serve.

15 bean soup is a fave of mine. You can make it without any meat and use veg boullion for flavor. I put mine in the crock pot to cook all day. I don't have to think about it and it doesn't heat up the house. You can find the bag of dry beans in the bean section of most grocery stores. It comes with a seasoning packet and instructions for cooking on the back. I also love this recipe for lentil soup

Have you ever sauteed blanched wax beans or hericot verts in a little olive oil, garlic, salt, and pepper? YUM!

Several people have recommended allrecipes.com. Its a good site.

I like bean burritos. You can make the beans and then mash half of them with a fork. You get refried beans. Add lettuce, tomatoes, diced onion to the burrito. Good stuff.

Check out allrecipes.com and search on beans and 200 recipes come up (you'll have to weed out those that have meat like Pork and Beans).

I eat tons of hummus, making it myself. It is so good! Google the Cooks Illustrated recipe, restaurant style hummus. Very easy and I also cook my own garbanzo beans first. It is very inexpensive and even more delicious when you cook your own beans. I eat the hummus with veggies, pita, or on rice cakes for a snack or in a pita or lavash wrap with lots of veggies for dinner. You could also make red pepper hummus for a change of pace.
I also agree with the other poster who suggested bean burgers. I make mine with black beans, mashed potatoes, and oatmeal and they are great. But I have recently seen lots of other recipes I'd like to try.
And finally, I am addicted to quinoa! If you've never tried it don't be scared like I was!! It is awesome. And extremely nutritious, very high in protein. One of my favorite recipes is from whole foods, it is tabbouleh made with quinoa instead of bulgur. Very healthy and filling. Good luck and good eating!

If you and your family likes Indian food then you should google any Indian recipe site and look on there. You will find dozens of recipes with beans, legumes and lentils.

I make pasta fagiole a lot (sauteed onions, garlic, zucchini, white beans, veggie broth or boullion, pureed tomatoes, small noodles-simmer 1-3 hours), veggie chili (sauteed onions, garlic, orange pepper, chili powder, cumin, 2 cans black beans, bottle of salsa, veggie broth-simmer 1-3 hours), pasta salad w/lots of veggies and chikpeas. My kids will eat just chikpeas out of the can. I just made stuffed zucchini w/zucchini meat, italian bread crumbs or toasted italian-flavored bread, onions, garlic, basil, salt, pepper, and cashews. Cover w/tomato sauce (sauteed onion, garlic, italian spices, and basil with pureed tomatoes) and bake 375 for 30-40 minutes. Also check out vegweb.com, tons of recipes. Good luck!

We love black bean burgers, Mexican lasagna (which can be made with double black beans in place of meat) and add beans to various recipes like meatloaf, quiche, frittata, etc all the time. You may want to look into TVP, which is a great way to increase/add protein to your vegetarian dishes. Good luck!
