What to Cook for Friends.

Hello. I'd like to have some recipes/ideas of things to make for neighbors/friends when they are sick or in time of need. I just found out that my neighbor has been sick all week and has needed someone to bring food to her. Wish I'd have known earlier I'd have brought her dinner. I'm making banana bread and pumpkin bread today and will bring her some of that but I'd like some ideas for future reference. Casseroles/dishes that aren't too spicy for little ones and sick tummy's.

Look at www.thepioneerwoman.com . She has great recipes that I use to take to friends. Also her recipes are so large that I usually just make one recipe and half it between our family and the family I'm taking it to.

God bless you. I actually found a great "Eggdrop Soup" recipe that my family LOVES. One time my husband made it and just put some cut up chicken in it and made it into a complete meal. I also have a fabulous recipe for "Mexican Chicken Soup" that I just made last night. Both of these recipes are very simple to make and are quite comforting. If you are interested in them just email me and I'll be happy to send them to you. I would like to give you a tip though. Whatever you choose to prepare, try to take it over in disposable containers. We don't like to do dishes even when we're well, much less when we're sick!

I often make chicken pot pie for friends and neighbors. Combine a can of cream of chicken soup, one can of Veg-All, two cups of chopped cooked chicken (or cheat and use canned chicken breast shredded), one tablespoon of dijon mustard, one tablespoon of sour cream, and about a half can of drained MILD Rotel. Use this filling with your favorite pie crust recipe or refrigerated pie crust - make sure to put a fe slits in the top. Bake according to pie crust directions - or send a card with the pie and let your friend in need cook it when they are ready to eat it. Might sound icky with so many cans of this or that - but it's surprisingly delicious! Enjoy.

Another thing that you can do if you live close to a family restaurant is get a get well card with a gift certificate and include a take out menu. I gave a some friends a gift certificate to Chilli's and they thought it was a great idea. If they have picky eaters, everyone gets what they want.

If you are not familiar with Homemade Gourmet, you may want to look at that. All the meals are very simple to prepare and cost efficient! When I make casseroles for my family, I make 2 and keep one in the freezer so I am prepared to take one to someone on a short notice! There are also some new microwave meals that just take 20 minutes or so. I will be glad to help you if you would like more information on this. I have been a consultant for the company for 8 years:)

A favorite of my friends when they have been the recipients - is my chicken flavor Rice-a-Roni. Just as you put in the seasoning and ready to simmer with lid on, add some deboned chicken (purchase a pre-baked rotisserie chicken from grocery store). Add a salad and you are done! This travels well and everyone, kids included, love it - lots of flavor but not too spicy.

What my kids always like when they're icky is baked macaroni and cheese. There are other noodle casseroles that do well for sickos and are easy to make; baked ziti (easy on the spices or just use plain tomato sauce), pastitso (not sure of the spelling, it's a Greek version of mac & cheese), and noodle pudding (like rice pudding but with noodles) are some off the top of my head. I personally like noodles with a little bit of butter and parmesaen.
Nice of you to go the extra mile for others. Keep it up.

I make chicken soup (whole chicken) and cornbread for everybody. They can eat it over rice if they want, and it's very filling. Also, lasagna is expensive to make, but it lasts a while. You could fix a big pan of chicken and rice...pot of chili. Vegetables you can cook separately, in big batches. Buy weiners and buns/bread or lunch meat, and they can always have a sandwich. Especially with children, it's good to have a variety, so...small amounts of lots of things is good.

Hi P.,

When I cook for friends from church I usually make baked chicken with yellow rice, black beans and a salad. Another good choice is a pot roast with carrots and potatotes and choose a green veggie on the side. Then I will add fresh baked cookies or Blue Bell ice cream for dessert. You are doing a kind thing. One of the best things I recieved from my friends after my last baby was born was a smile at the door with a meal prepared for our family.

Chicken elbow pasta soup - Mexican recipe!!!

Hi P., I could give you the original recipe but now you can find it in a little bag - just add water! Obviously, we want to add some nutritious to it so, chicken breats would do. This recipe is perfect for sick people and for the current weather.

Boil about 2 chicken breasts (big chunks) with a little salt and then when they are about to be cooked, add the tomato based elbow pasta soup mix and follow directions. I get the soup mix at Kroger in the Mexican section and I know HEB has them too. It is absolutly delicious and it will raise anybody's spirit!!
