What Do You Serve with a Steak? Tired of My Rut...

Ok, I'm in a rut! When I cook steaks, I am "shy" of the grill so I broil instead. I always serve a vegetable like asparagus or green beans, and for a starch I do baked potatoes, roasted onion potatoes, or baked sweet potatoes. Sometimes I'll serve with some mushrooms and onions, and yes the salad. But that's getting old. I am craving a steak, but I'm bored with the sides. What goes good with steak besides my same old, same old???
I know if grilling, you can do marinated vegetables. But my husband comes home too late to fire up the grill....can you broil them?

You can do lemon-zest broccoli, cheesy broccoli, baked potatoes with bell peppers, garlic boiled potatoes, pasta with alfredo or pesto, steamed veggies...

Last time I made steaks, I roasted cherry tomatoes with some herbs then put them on bread that I toasted with olive oil and garlic. Looks awesome and tastes even better!

You can do scalloped potatoes, macaroni and cheese, you can even buy acorn squash and bake that in the oven, I sprinkle black pepper, salt, butter, and alittle bit of brown sugar-i know it sounds weird but try it! You can even do steamed spinach, i fry up a small onion-in olive oil, and some crushed garlic, then add the spinach last and sprinkle some salt and black pepper on it. You can even do some pasta on the side, I buy the spinach speghetti and boil that then I fry some sliced mushrooms, onion and crushed garlic in olive oil and add it to the pasta, my kids love it!

Yes, sautee the veggies. Just about 5-8 minutes on a hot skillet with olive oil and fresh garlic. YUM! I use green and red peppers, onions and mushrooms.

Stuffing

Cold pasta salad

Augratin (sp?) potatoes

Mashed potatoes

Fresh raw veggies - easy and yummy

Try skewers too - you can put them on the stove

I also will slice red potatoes, season them well and fry them in canola oil for about 15-20 minutes with some yellow onion. SO good.

Roast Veggies in the oven - red and yellow peppers, egg plant and onions with olive oil, salt and pepper

Basmati Rice or Home Fries

Perfect Steak - preheat 250 oven

HOT (well seasoned) Cast Iron Skillet (let it get super hot slowly) - before adding olive oil - salt, pepper - garlic powder - sear steak - about
3 - 4 min each side - finish off in slow 250 degree oven 15 - 20 min.

If you want a change for the steak. mix regular mustard with soy sauce and a little garlic powder - slather it on both sides of steak and broil as usual.
It's really good!

MAKE SURE THE STEAK IS TENTED W/FOIL AND RESTS 5 - 10 min before cutting.

We will either boil some corn on the cob or grill it. Either a baked potatoe or boil some red potatoes. Of course both with lots of butter and we add our favorite seasoning, Tony's Chachere's Creole Seasoning. Or sometimes we steam broccoli as a side.

Now you've got me wanting steak......lol

have you ever had Steak Oscar? Its a creamy crab mixture over top of the steak, with asparagus laid across that. It's beautiful and delicious.

For starch, I usually serve corn on the cob, baked potatoes, potaotes au gratin, steak fries, or cold pasta salad

for veggies - tossed green salad AND a hot veg, like brocoli, or green beans You can dress your same old vegetable dish up. get fresh or frozen wide green beans or heri covert and sautee with garlic, salt, pepper, olice oile and butter after a quick blanche or steam.

when I saw the title of your question, my first thought was "twice baked potatoes." A little different, but still in the safety of your normal side (pm me if you don't know how to do these. I made them last week and they were super-yummy. I overflowed some of the skins, so the last skin had little potato in it. I topped it with cheese, put it in my toaster oven, and it was yummy potato skins like you get at a restaurant)

And this salad sounds weird, but I loved it when a friend served it to me. And I don't even eat raw onion. This was a fresh salad (watermelon) and I am a BIG fan of feta cheese. So it's not everyone's taste, but it may be yours: http://greekfood.about.com/od/soupsstews/r/wmelonsalad.htm

We call them potato carrot packets...
Slice potatoes, carrots and onion thin (about 1/4"). Use either heavy duty foil or regular foil doubled over. On a big piece of foil, make layers, start with the potatoes, then onions, then carrots, then sprinkle on some pepper and seasoned salt and melted butter w/crushed garlic (or sprinkle on some garlic powder w/the melted butter). Repeat layers. Then wrap the whole thing up in the foil and either grill or bake in oven at 350 for about 20-30 min depending on how thick your packet is. The whole packet will bend easily when things are done. These are soooo delicious...better than the description sounds! We've said several times we could make a meal out of just the packets.

Steak is also good with a side of fettucine alfredo. For the veggie maybe salad, brocolli or asparagus. BTW roasted brocolli is yummy! Cauliflower too, well, I guess any veggie is better roasted, LOL

Wanted to add: I made a london broil the other day. the recipe stated to preheat the oven to 500 and then once you put the meat in bring it down to 250. Cook for 45 minutes for rare (I cooked for an hour and it still had some pink, maybe medium). Anyway, it came out really good that way!

Ordinarily these are what we do in various combos:

Sauteed Mushrooms OR
Broiled or grilled Portobello Mushrooms (just drizzle olive oil over the gills, sprinkle w/ salt & pepper, and gill side up under the broiler, or away from the fire if grilling, until juicy)

Broiled asparagus (just snap off the ends, drizzle w/ EVOO, S&P and under the broiler until the ends are crispy/ there's a little bit of char on the stalks... OPTIONAL, add some soy sauce and garlic.)

Roasted Peppers

Roasted Veggies w/ Balsamic Butter

Cauliflower gratin

Mashed potatoes ( w/ butter and chickenstock)

Garlic French Bread, or Pepper French Bread

French Onion Soup

Bloomin' Onion (if I feel like getting the electric wok going outside)

- Tostones (fried plantains) & Guacamole (dip the tostones in the guac)
- Chimichurri sauce for the meat.... tostones and Chimichurri sauce is when we're feeling a little southern cross

ALSO when feeling southern, we'll grab skirt steak instead of a ribeye (if we can find skirtsteak, it's the BEST for this. If not, the more expensive, less flavorful, "prettier" flank steak will work as well) instead... marinate in lime juice, purple onion, cillantro, & Santa Maria Seasoning... grill... slice... and have Carne Asada instead

Corn grilled or broiled in the husk

Caprese Salad

Cobb Salad

'n'Surf (broiled or grilled shrimp)

'n'Surf (ceviche)

'n'Surf (oysters... either on the half raw, or on the half steamed open in white wine w/ sorrel sauce and bacon crumbles)

Caesar Salad

Arugula Salad (LOVE that peppery bite!)

Sauteed w/ olive oil, garlic, salt & pepper
- Red Swiss Chard
- Kale
- Mustard Greens

______________

RARELY we'll make up some gorgonzola butter to place right on top of the steaks

I make a broccoli and cauliflower side dish that is excellent and my kids love it - you just cut up the broccoli and cauliflower so they are about the same size. In a pan put some butter or not stick low calorie cooking spray add the broccoli and cauliflower sprinkle with garlic salt and pepper to taste.....let it get a little bit brown and then add a little bit of water and cover so it steams just a little bit, not until it gets mooshy. The last few minutes, I uncover it stir everything up, turn the heat up just a bit, and cover it with shredded cheddar cheese. The bottom of the broccoli and cauliflower will get a nice golden brown and it is really good - then I make a can of Bush's baked beans to go along with it and some sliced fresh french bread from the grocery store bakery. Yumm!

fruit salad, potato salad or german potato salad, roast or broil any veggies with EVOO, garlic and onions. I love squash and zuccini with cherry tomatoes and a little basil, salt and pepper, broccolini with some brags, black sesame seeds, and garlic is a little more asian (in the pan or broiled), what about sweet potatoes or sweet potato style home fries? great with honey cinnamon butter or even baked with molasses. I make red potatos like cut in circles and broiled ont he baking stone with rosemary, EVOO, garlic, salt and pepper, can add a dash of Cayenne if ya like spicy. Corn is great roasted in the cob with butter and salt n pepper. You can make something like 3 bean or tortellini salad with italian salad dressing (or your favorite vinaigrette) rice or Couscous can be a nice change, just cook it with your favorite herbs or some nice veggie, chicken or beef stock.

Rissotto ----- I make it with tons of oven-roasted veges and parmesean cheese. Yum! Cut up some zucchini, summer squash, red onion, roast it on a sheet pan with salt, pepper and EVOO and add them to your rissotto with the last bit of liquid and a goodly amount of parmesean. A friend of mine blessed me for this because it finally got her son to eat vegetables.

Couscous - can be served hot or cold. I Cold, I generally go more mediterranean with olives, feta, grape tomatoes.... Hot, I like mushrooms, spinach....

Both are lovely alternatives to standard starch sides that are really versatile.

Bon appitite!

I just planned my menu for the week and we're having Tenderloin with Marsala mushroom sauce atop a mountain of garlic mashed potatoes tomorrow.
10 oz mushrooms of your choice

16 oz tenderloin beef steaks

1/2 tsp pepper

1/4 tsp salt

1 tsp olive oil

1/4 cup shallots sliced

1/2 cup Marsala wine

3/4 cup beef broth

1/2 tsp Dijon mustard

1 tbs light butter

Season steak with salt and pepper and coat with cooking spray.
Cook steaks over medium-high heat, 3 – 4 minutes each side until desired degree of doneness (don’t forget carry-over cooking time).
Remove steaks and keep warm.
Heat oil in pan over medium heat until hot. Add shallots, and saute 1 minute. Add sliced mushrooms. Saute 4 minutes until tender. Add wine and bring to a boil. Reduce heat and simmer 2 minutes.
Add broth and dijon. Boil 5 minutes until liquid is reduced by half. Remove and add butter. Spoon over meat.
