I want to incorporate more vegetarian dishes, like Meatless Mondays.

Help me w/some good dish ideas to make.

Quinoa salad: quinoa, black beans, diced mango, red pepper, and red onion. Squeeze of lime and olive oil.
Eggplant parmesan (I dont bread mine) and a nice salad
Salade Nicoise (with or without the tuna)
Cobb Salad
Lentils and wild rice
Risotto with mushrooms, pine nuts and chicken broth

I'm a vegetarian. I eat a lot of pasta, bean burgers and mexican food.

My favorite pasta is mushroom ravioli's with a brown butter and sage sauce. You cook the butter for about 3 minutes, then add the sage, cook for another minute (or until it starts to brown) and then throw in some salt. I think it's 1/2 cup butter, 1/2 teaspoon salt, 2 Tablespoons sage. With a nice salad and bread, it's my favorite meal. I make my own raviolis though.

My son found this black bean quesadilla recipe when he was cooking for his team in Americorps... he needed to find vegetarian recipes.

We love them! We actually make a quadruple batch.... makes about 20 quesadillas... they work nicely re-heated, also. Very quick and easy to make!

Be sure to use a thick salsa..... Pace is too thin.... sort of tip the salsa back and forth in the jar... compare the Pace to others. We actually use a store-brand that is similar (but much thicker) to Pace.

It's almost summer time so I will give you our favorite veggie 'summer' dish:

Vegetable Pizza
You get a pre-made pizza crust like Bobolli (sp?) and you spread a layer of cream cheese down, then add all your favorite veggies + salt & pepper and serve. No cooking required!

We put:
shredded carrots
shredded cucumber
tomato
black olives
red onion
shredded cheese

So good and very quick and easy!

We keep it simple,
Falafel, black bean burgers, Alfredo and sautéed veggies, veggie stir fry, creamed asparagus, broccoli and cheese soup, veggie lasagna, frittata or quiche, bean burritos, grilled portobello mushroom caps served like burgers are delicious in the summer, I marinate mine in Italian dressing first.

Meatless lasagna is one of our favs. Homemade red sauce, lasagna noodles, and a container of ricotta mixed with an egg, garlic powder, parsley. I also add a white sauce to make it creamy. Layer red sauce, noodles, ricotta, white sauce, Parmesan and mozzarella cheese, noodles red sauce ricotta, etc. until the pan is full. Top with more sauces and cheese, cover and bake at 350 until bubbly. Yummy.

Stir fry - walmart's value brand has some great frozen stir fry veggies that I throw in the wok with a little sesame oil, then toss in cooked rice (white or brown) with a seasoning packet and some fresh cilantro.

Hmmm, what else,
baked macaroni and cheese, with a salad and fruit.
Corn bread, vegetarian baked beans or chili, with veggie and fruit

Basically, almost any type of stir fry, chili, or Italian dish can be made without meat - substitute veggies for the meat, keep the seasoning the same.

One vegetarian recipe we love, that is nutritious and easy to make: sweet potato or yam and black bean burritos.

what you'll need:
1. yams or sweet potatoes - (2-3 give you about 5 burritos)
2. 1 can black beans
3. salsa - store bought or home-made (one simple, homemade salsa, is just chopped tomatoes, onions, some garlic and jalapenos)
4. chopped, fresh cilantro
5. tortillas - preferably whole wheat
6. grated cheese (cheddar)
7. spices - cumin, cayenne, salt and pepper
8. fat free milk - maybe 1 cup
9. avocados, onions, yogurt (in place of sour cream), as side toppers to add.

1. boil sweet potatoes or yams ; turn oven on to 350F
2. once boiled and soft, mash the potatoes and mix with black beans. You can either do this off the stove, or keep the mixture on the stove on a low fire.
Either way, add some fat free milk for liquid - add till consistency is not too lumpy but NOT liquidy. Add some cumin, salt, pepper, cayenne to taste and the chopped cilantro. Mix all well.
3. pull out a large baking dish (can be glass or foil), oil or butter it a bit so the burritos don't stick.
4. in a separate plate, take a tortilla and fill it with the bean/potato mixture, fold and place in baking dish, fold side down.
5. Once dish is full with folded and fill burritos, top the burritos with salsa of choice, and lastly, grated cheese.
6. Pop in oven for about 10 mins, till cheese melts and burritos heat up.
7. Serve with chopped avocados and more onion and yogurt (in place of sour cream) as needed.

Good for you. Unless meat is from a local farmer, it's hardly healthy.
Red meat is one of the biggest polluters. You can read more about this on www.madcowboy.com. This is Howard Lyman's information. I have met him several times. He is a wonderful person and works tirelessly for our health and environment !

I make Tinkyada brown rice pasta and add it to soups or enjoy it with tomato sauce. I enjoy loaded veggie baked or sweet potatoes. I make organic salads and add organic croutons and loads of veggies. Wild salmon dinners are good, too. I do a search on fish recipes. I try to make new fish dishes 2x a week.

I found a bakery that makes a super broccoli bread. I love homemade raisin bran muffins to have with a banana for breakfast.

My favorite dish is meatless chili w/ beans and I serve it over organic white rice or brown rice pasta. I serve it with a salad.

I make veggie stir-frys and oven roasted veggies, too.

I can't have conventional soy because of the health risks. Occasionally, I have organic soy and mix it into stir-frys.

We are into roasted cauliflower lately. I don't really care for vegetables, so anything I can do to make them a regular part of the meal, I do it.

Cut apart a head of cauliflower into florets. Put in a baking pan (easier clean up if you line with foil). Sprinkle olive oil, salt & pepper. You can add thinly shaved onion if you'd like. Roast at 425, stirring occassionally, until the cauliflower is the consistency you like (some like soft, some still crunchy). If you like it more carmelized, put it under the broiler.

If you have cold roasted cauliflower left the next day, add some goat cheese, makes a great salad.

To kick it up a notch, sprinkle curry powder after the olive oil--this is the way I prefer it now. My friend Donna and I eat an entire head of cauliflower just as a side dish with dinner. Whodathunk?!
