Vegan Recripe
I am making dinner for a family this week who eats vegan. They do eat cheese and eggs however. Does anyone have any good recipe ideas?

They are vegetarian, not vegan. Many ethnic foods are or can easily be made vegetarian. Mexican food works particularly well, is easy to make, and generally everyone likes it.

Vegans dont eat dairy or eggs, sounds like they are lacto - ovo vegetarians, same as me. There are so many yummy possibilities with the internet at your finger tips. Just do a google search of vegetarian recipes. Many have star ratings from people who have tried the recipes. I know www.allrecipes.com has a star rating system. I have never made something with 5 stars that failed! The fact that they eat dairy will help tremendously. If nothing else, you can always make pasta and salad.

Check the library for cookbooks. I have a friend who cannot eat meat or eggs and I found some great cookbooks to use when she comes to visit. Since they eat cheese and eggs you are just looking for vegetarian cookbooks. Vegan actually means no milk products or eggs. You can also search the web by putting in Vegetarian Recipes. Soy crumbles turn out a lot like ground beef especially if you put something on them like taco seasoning for tacos. I had some on Sunday in a taco salad and I couldn't tell the difference even when the lady who made it told me.

They're not vegan if they eat cheese and eggs. You could look up (online) recipes for falafel pitas, tofu stir fry, vegie meatloaf (made of lentils), meatless chili with corn bread, meatless quiche, etc. You could even do a search for "vegetarian recipes". There are bazillions of recipes online.

There are plenty more out there. I always use Google to search for stuff like this. :-)
Another tip - make anything from any cookbook, but substitute the chicken or steak with soy-based alternative chicken or steak. Most grocery store frozen food sections have these, as well as veggy burgers, burger crumbles, etc.

ASIAN LETTUCE WRAPS
INGREDIENTS:
4 cups water
2 cups uncooked white rice or you can use the clear rice noodles.
1 Tablespoon of Vegetable or Canola Oil
1 pound DICED CHICKEN OR MEATLESS STRIPS FOR SAUTEEING (AVAILABLE AT WHOLE FOODS)
1 bunch green onions, thinly sliced
1/2 teaspoon minced garlic
1 (14 ounce) package firm tofu, drained and cubed (I like to precook my tofu but you don’t have to)
2 carrots, shredded
3 tablespoons hoisin sauce
2 tablespoons soy sauce
1 teaspoon sesame oil
1/4 teaspoon THAI hot chile paste
1 head iceberg lettuce leaves, separated
Chopped Celery to put into the wraps (optional)
DIRECTIONS:
1 . In a saucepan combine the water and rice. Bring to a boil, cover, and reduce heat to a simmer.
Simmer for 20 minutes, until water is absorbed. Set aside and keep warm.
2. Heat oil in a wok over medium-high heat. Cook the chicken, green onions, and garlic for 5 to 7 minutes, or until lightly brown. Add the tofu, carrot, Hoisin, and soy
sauce, stirring frequently until heated through. Remove from heat and stir in the
sesame oil and chile paste.
3. To serve: spoon a small amount of rice/or rice noodles into each lettuce leaf, top with the stir-fry mixture, and drizzle with additional soy sauce or hoisin, if desired. Wrap the lettuce leaf to enclose the filling.
Optional additional stir fry ingredients:
These may be used in place of or in addition to the tofu: chopped peanuts, peppers, shrimp, rice noodles, diced chicken, scrambled egg or bean sprouts.
Note:
Hoisin sauce, also called Peking sauce, is a thick, reddish-brown sauce that is sweet and spicy, and widely used in Chinese cooking. It's a mixture of soybeans, garlic, chile peppers and various spices. It can be found in Asian markets and many large supermarkets. Look in the Asian or ethnic section.
