Sweet Momma on Bed Rest for a Week and Need to Take Her a Meal.

Ladies

A lady from church is on bed rest after having hernia surgery, she is also 20 weeks pregnant and has an 18 month old. I'm to bring her dinner tomorrow and after being gone all day today I was too late in emailing my request and lost out on Italian and Mexican, now I have no idea what to bring her since I usually cook either a big batch of manacotti or shredded taco's for this.
Her only request is no onions.
Any suggestions????????

MANY THANKS

What can I do next?

Roast w/ bag salad and rolls, or bread. EASY! Spray a baking pan, put in beef roast, add cut up potatoes around the sides, add 2 cans of drained sliced carrots, add 1 can of drain whole kernel corn, (you can leave out the onion), add a family size can of cream of mushroom soup (spread over the top, cover w/ foil and cook at 350 for about 4 hrs or until the meat falls apart. YUMMY everytime.

Chicken spaghetti:

bake and shred 3 (or how ever many you want) chicken breasts. Cook spaghetti. Combine 16 oz. velveeta (chopped up), 1 bell pepper (chopped), 1 med. onion (chopped)(of course, optional), and 1 can of cream of mushroom soup and 1 can of cream of chicken soup. Mix this mixture with the shredded chicken and spaghetti. bake at 350 for 45min-1 hour, uncovered. The last 5 minutes, sprinkle with shredded cheese and finish baking.

Sooo yummy and lasts for several meals. This also freezes well.

Quiche or a pot pie are both easy and work well for a family dinner. Add a salad and some cookies you are good to go. Another option if you don't want to cook is picking up a dinner at Boston Market or Honey baked ham company. A good family meal for a good bargain. These were some of the things I received when I was on bedrest they worked out really well!

BTW, its a lovely thing you are doing...God bless you.

It's pretty eay to make a big pot of chicken and dumplings and the 18 month old would enjoy them too.

pot roast is very easy and you can even get seasoning packets at the store if you don't know what spices you would like to use. I do mine in the crockpot. Just put in the potatoes with the seasoned meat on top (so it doesn't stick to the bottom) and at least one cup of liquid. You can use beef broth, tomato soup, water, etc. Cook on low for 7-8 hours or high for 5-6 hours. You can add other veggies like carrots or green beans also. ( Don't add the green beans until the last hour or two). Then all you have to do is make some gravy. Good luck.

Why don't you do a breakfast meal? If she's on bedrest, I'm sure she'd love a great big breakfast that she wouldn't have the time to make! Or, if that's not a good time for a meal I'd make chili. It's inexpensive, easy to make and tastes even better the 2nd day as left-overs. Add some corn bread to it and she's all set!

What doing baked chicken. What you do is take chicken (you can do all breasts or a whole chicken taken apart) put it in a casserole dish, take Zesty Italian dressing and spread over the chicken then take parmesian cheese and sprinkle it over the chicken. Cook on 400 degrees for 1 hour or until chicken is cooked. You can serve with any other vegetable and salad. It comes out delicious and easy and quick.

Hope this helps.

Unless she is on a special diet, tacos or manicotti should be wonderful. Here is a favorite of my children, that is easy on the stomach. We prepare egg noodles or even spaghetti according to package directions. We use either cooked or canned chicken, chopped up or shredded. Tuna is good, too, if you prefer. Mix a can of cream of mushroom soup, the chicken, and even some grated cheese if you desire, in with the cooked and drained noodles. It's inexpensive, stomach friendly, and makes a lot.
