If you have anybody coming who either eats healthy or aspires to eat healthy (I'm in the latter group - hehe), try putting out a veggie tray (carrots, celery, broccoli, etc.) with a fat-free dip. This gives a lighter alternative to the heavier foods. If the veggies aren't eaten, you can always chop them up and steam them for a healthy side dish at dinner this week.

Buffalo chips (what we call them) are a hit at all our football parties.

Buffalo Chips

1 pound ground beef
1 pound Pork sausage
1 pound (16oz) package of Velveeta cheese (the block kind)
1 teaspoon oregano
1 tablespoon worcestershire
2 packages of party bread (small breads rye or pumpernickel)

Cook sausage and meat. Once meat is cooked add cheese and cook until melted. Add oregano and worcestershire.

Put bread on cookie sheets. Spoon mixture on bread. Broil for about 5 minutes.

You can make the mixture ahead of time and put in the fridge and use when needed.

sorry this is a little late, but there's always next year!

We are also having pis in a blanket to munch on. Wrap the little piggiies and crescent rolls and bake. Very easy and
you can make ahead and refrigerate.
Bean Dip - We always have this at parties and everyone loves it. My Niece was asking where the bean dip was on Christmas Eve. I just gave this to my Mom for a party She is going to.
Layer a shallow dish with one can of pinto beans (Ole El Paso)
next top with sour cream
pour on a jar of salsa (Chi-Chi Fiesta salsa Medium)
Top with shredded cheese and diced tomatoes and sliced olives.
If you like you can add a layer of guacamole.

Whenever I can't find a recipe I want I always go to the Betty Crocker website. This is where I cut and paste the recipe below from. Another great party food is pigs in a blanket. Buy the little smokies and crescents rolls. Boil the little smokies for about 10 minutes or so to reduce the fat in them. Then unroll the crescents rolls and pinch together the seams then slice in about 1/4 inch strips then wrap the crescents rolls around the little smokies and bake 15 minutes or until crescent rolls are golden brown at 350 degrees. Enjoy. GO GIANTS.
