Serious Topic Here - Let's Discuss Guacamole...
How do you like yours? How do you make yours? I like mine nice n' simple - garlic salt & lime juice are the only things I add. Please share your recipes if you feel so inclined!

I can't remember how much mayo.... (sorry, white people joke, I was on e asked by my friend to bring guacamole to a party that was all Latin except me, and everyone was nervous to try my guacamole at first, so I just blinked innocently and told them 'Dont worry, I used lots of mayo.' Hehehe. ;)

Whatever you do you must start with an avocado that actually tastes like an avocado. Creamy, avocado pureness. We like naked guacamole which showcases the avocado - mashed avocado, fresh squeezed lime, salt and pepper. A twist of orange is a nice note. We eat it on toast, corn or flour tortillas or with chips. The first two options make a lovely breakfast.
At the peak of the season we'll eat whole avocados right of the skins with a topping - chili con queso, fresh ranch dressing, fresh bleu cheese, lime juice with salt and pepper, whatever makes you happy.

I like it every which way. Two ways we have made ours, liking both:
1. In a bowl, add avocado 'meat', grilled jalepenos with the skin peeled off, grilled tomatoes, cilantro. Mash all with the bottom of a plastic cup. Add salt. Enjoy.
2. In a bowl, add avocado meat, minced red onion, diced red and/or green bell pepper, diced tomatoes, minced jalepenos, a little lime juice, cilantro, salt. Mash and stir with a fork.
In my college days, I did the shortcut way - mash the avocados, add some fresh salsa (not Paces! We like Clint's, but I think he's sold in Texas only). Stir, add salt and/or lime. Enjoy

My husband makes the best... fresh avocado, red onion, garlic, lemon juice and roasted salsa. Where are the chips??? Mmmmm....

I am with you all the way. A lot of garlic. A lot of salt. A lot of lime juice. Mashed up so it's still chunky. Nothing else is needed IMO!
