I used to have a banana bread recipe that substitued applesauce for the oil or shortening; can't seem to find it. Anyone have a good "healthy" recipe out there? Thanks so much...

I love the recipes on www.heavenlyhomakers.com and www.passionatehomemaking.com I didn't search for this one specifically, but I'd be willing to bet one of them would have one, and every recipe I have tried has been absolutely delicious, and the kids have loved it. Have fun baking!

what kind of banana bread are you making? I do not use shortening or oil.
This is my recipie. use 1 stick of butter,1/2 cup of sugar,1 1/2 cups of flour,2 eggs,2 overripe medium size bananas,1/2 teaspoon of baking powder,1 teaspoon of baking soda,a pinch of salt,1 tablespoon of vanilla extract,1/2 teaspoon of cinammon,1/2 teaspoon of nutmeg. 1st of all butter is more healthy than oil or margarine. The bananas give it the sweetness and there is only a half cup of sugar. preheat oven to 350 while mixing all ingredients. while mixing sugar and eggs, melt the butter in the microwave.
cook the banana bread in the oven for 50-60 minutes. Sometimes after 50 minutes if the bread is still coming out a little sticky, when I check it,i turn the oven off and let the bread sit in the oven for 5-10 minutes so, it finishes cooking in the middle but does not burn. I also grease the loaf pan with pam cooking spray. let me know what you think. my friends, family and coworkers love my banana bread.

I substitute 1/2 of the oil with an equal amount of applesauce and half - 3/4 of the flour with whole wheat flour. It works with any recipe and also for similar things like zucchini bread, muffins of all sorts etc.

you can also substitute the cup of sugar for 2-3 tablespoons of honey. it's surprising how little honey is needed to get a loaf of bread sweet enough. if you are using whole wheat flour, though, i think it's too bland with applesauce, whether you use honey or sugar. so with whole wheat flour i use butter and an extra banana.

Just use any banana bread recipe you can find and substitute the oil for apple sauce (1/4 cup oil = 1/4 cup apple sauce). I also reduce the amount of sugar when I make it.

cookinglight.com has a good recipe called "Mom's Banana Bread" it still uses butter, but a very small amount, and it is delicious.
