I like to go to campbellkitchen.com... They have TONS of ideas (all using campbell soups etc) that are good and affordable. Another favorite of mine (it's not a casserole, but you might like it anyway) is Taco Soup. My guy is hispanic and teased me the first time I made it for him cuz it's not REAL mexican food, but now he loves it and asks me to make it pretty regularly. here goes:

1 onion
2lbs hamburger
1 can chili (no beans)
2 cans pinto beans
3 cans stewed or diced tomatos
1 can rotel (tomatos with green peppers)
velveta cheese (optional)
sour cream (optional)
1 pack taco seasoning (optional)

chop onion and brown that with the hamburger
blend or chop stewed tomatos
pour hamburger and all cans (don't drain) into a croc pot
cook on high. (the longer you cook it the more "soupy" it will get, but sometimes I like to fill the croc pot to the top with water and add a pack of taco seasoning just so I don't have to wait as long)
right before serving add cubed cheeze and sour cream (to bowls) Hope you like it!

My family loves tatertot casserole and it is so easy

fry hamburger drain off grease and add 1 can cream soup (I usually use mushroom, but cheddar or chicken or tomato also work well) add a vegtable ( green beans work nice, but any vegi that your kid will eat is good), add 1/2 soup can of water or milk and warm. Pour into square or rectangle pan. put frozen tater tots on top cook in oven according to time and temp on tater tot package. When has about 15 minutes left pull out and sprinkle grated cheese on top put back in for the 10-15 minutes and waaa laaa you have a yummy meal :)

A simple and quick one that my family loves is "Tator Tot Casserole"
In a 9 X 13 cake pan crumble 1 1/2 lbs of hamburger(I use raw meat doesn't seem to dry out so much when you cook it, but for a healthier way precook the burger), over top of the burger spread a can of cream of mushroom soup (I use cream of chicken, we don't like mushrooms), then spread the tator tots out evenly over the soup, I also use some salt and pepper and onion flakes on each layer but you can make it to your own taste, bake at 375* for 30 minutes. Another variation you can try is sprinkle shredded cheese over the top for the last 5 minutes of cooking.

I know this isn't really a casserole but good and easy. One of our favorite meals is can or 2 of chille with corn bread just make the corn bread like you would but put the chille in the bottome of (I used any 8x8) pan and cook until the corn bread is done. Quick easy to the point. One mess to clean up. We like Marie Callender's you just add water and it's really sweet and moist and only takes a min to mix up. Hope you like it.

Spicy mecican torte
1/2lb chorizo sausage casing removed
2 med onions chopped about 1 cup
2 clov es garlic finely chopped
1can 4oz shopped green chilies drained
8 ten inch flour tortillas
2 c shredded Monterey or hot peper cheese
1 can refried beans
1 jar 7oz roasted red peppers drained.

Cook sausage onions and garlic in skillet over med heat drain grease then stur in green chilies.
Heat oven to 400 grease pie plate 10" place 2 torilas in plate spread half of the sausage mix. Sprinkle with half of the cheese. Place 2 tortillas on top of cheese them spread beans. Layer tortillas then spread peppers. 2 Tortillas then Spread with remaining sausage mix. Sprinkle with remaing cheese. Cover and bake 40 mins. Uncover and bake 15 minutes or until cheese is melted and center is hot. Cool 10 min before cutting. Serve with salsa sour cream or Guacamole. 8 servings 350 calories per serving.
this is from good old betty crocker.

I have never made it this way I just use our reg taco dinner and mix it up with what we like. Meat, beans, corn, cheese, and top with lettuse and sour cream. But I don't do very spice things so I just customize it for me. Not that tacos arn't aready the easy dinner but you have everything in one dish. Less clean-up. Have fun and let the kids help too.

i've done variations on the same casserole, you can pretty much modify however or to your taste.

Cooked ground beef, mixed in a veggie (like green beans), can crm of Mushroom soup, Mashed potatoes on top and sprinkle with cheese. heat through.

Variation: Replace soupe with tomato sauce, replace potatoes with cornbread, no cheese. Bake till cornbread done.

Variation: Replace green beans with Corns, Replace potatoes w/bisquick prepared and dolloped across top. Bake till Bisquick biscuit top done.
