Rolled My Ankle - Need Food Ideas for Kiddo!

Okay, so in a moment of pure grace and skill I rolled my ankle last night taking out the trash! OH PAIN!!! So, as you can imagine I am laid up for a few days but I still have a 5yr old that needs regular feedings! So, my question is what are some good foods that daddy and I can pre prep for breakfast/lunch/snack for the little guy? He is pretty independant and can help himself to items that are ready to go. I know PB&J are easy to have pre made and ready to eat, but what else? He is mostly a hot meals kind of kid - Mac n Cheese, Corn Dogs, Breakfast Hot Pockets, Breakfast Sausage/Pancake Dogs or cereal, things like that. Obviously his standards are off the table and I could use some food ideas that WE can both eat - as he will lovingly help me eat by delivering it too. He is a VERY helpful child and LOVES being independant and doing things by himself and for himself so I am ready for some ideas of easy foods to make where he can bring me the ingredients and I can put them together or they are ready to go from the fridge :)

So What Happened?

NO unsupervised MICROWAVE - he burnt a corn dog in there once and we had to replace it it smelled soooo badly.

Thanks for the ideas, after 24hrs it is feeling a WHOLE lot better, I still need to stay off of it and hopefully by Thurs wil be back in full force! I used the parfait idea Gramma Rocks and that may be a new breakfast here! And Mamma L tons of good ideas there on the "buffet table" of easy grab n go's. My son's friend's mom was able to pick him up yesterday to take him to/from school and kept him for a few hrs after school until daddy got home (HUGE HELP) but she may/may not be able to help again today and she brought me a "get better" basket. Her FIL did the same thing a few weeks ago, she knew just what I needed bless her!

What about salads? Have the veggies in small bowls, he can make up the salad and bring it and a bottle of dressing for you to pour, or can bring everything on a tray for your to fix.

You could also have sandwich ingredients for him to gather and bring you, the bread, meats and cheese, lettuce, tomato, condiments...a salad and sandwich, some bottled water and you have lunch.

For breakfast we put some yogurt in a bowl, top with cereal and cut-up fruit. that would be easy even for him to fix.

For snacks have individual containers of yogurt, applesauce, mixed fruits, cut up veggies, hummus and/or dip, string cheese, whole wheat crackers, he can bring you some, too!

Oh no, I'm so sorry.
I assume you want to "work with" what you have at home, right?
Can't make a strip to the store?
-Put these things on the table:
bread
peanut butter
granola bars
crackers
cereal & bowls
crackers
Pop tarts (if he can use the toaster)
juice boxes
bottled water
dried fruit
bananas, apples (whatever you have & whatever he likes)

These things he can grab & make or throw together
-Have a pizza delivered
-can you call a friend to deliver a rotisserie chicken & potato salad?
-google whatever local restaurants deliver

pretty much everything you listed (except the mac) can be made by him! My sons were always proud of their cooking skills at that age. :)

Teach a kid how to use the microwave....& he'll be set for life!

I've done that a few times.
One time it hurt so bad I was dazed on the ground and saw stars and then I crawled back into the house on my hands and knees from the back yard (I was home alone at the time).
You want to keep the ankle up as much as possible (you can put a cold pack on it or a bag of frozen peas), but you should be able to stand on it if you wear an ankle brace or wrap it up with an Ace bandage (to immobilize it).
I have some neoprene wraps that are wonderful for ankles.
A drug store will have what you need.
Don't wrap it so tight that your toes turn blue (you need to let blood get through).
Sandwiches or wraps (and cold cereal) are easy and quick.
So are apples and bananas and other fruit.
Your ankle will be weak for awhile, so continue to wear a brace when you might be walking on uneven surfaces (hiking, etc).
Worst sprain I ever had was a level two which looked horrible - the swelling and bruising were impressive - I saw my podiatrist (he had an in office x-ray) and I ended up in a walking cast for 6 weeks so the ligaments/tendons could heal up.

Do you have an office chair on wheels that could help you get around the house and maybe supervise him more in the kitchen? Walmart has microwaveable pancakes that only take 30 seconds per pancake. Most microwaves have a 30 second button so he wouldn't burn it. If you can supervise the microwave, my kids also love spring rolls. The ones that Target carries are our favorite (I forget the name). You could also use a tv tray or small table close to you and ask him to bring you the ingredients and dishes to mix up things like salsa and sour cream to dip tortilla chips in, sandwiches, wraps, pudding, etc. Good luck!

Right after ankle surgery, I had a Nanny that totally sucked. I took a bar stool and sat at the kitchen counter prepping food and cooking.

You can precook pasta and freeze it in sandwich bags. You can also precook ground beef and store it too. If you lay the meat flat, when it is time to thaw you can just break off a piece at a time.

Now you have spaghetti and sloppy joe's.

Pasta salad is a nice way to get in some great veggies and serve them cold.

You can pre-make soup and salad.

How about a crock pot, or a rice cooker?

Foods kids can make and you might enjoy eating include -
1. bean salad (open a few cans of beans and corn, mix with a jar of salsa, eat with with a fork, eat over lettuce, or eat in a burrito.
2. tuna melts? make tuna salad (open a can of tuna, some mayo, some relish, stir), smear on bread, top with cheese, put in a toaster oven and melt.
3. mashed potatoes?
4. egg salad?
