hi all, this question is for my husband. he is looking for the best ricotta cheese to use for lasagna. he had one that he found a long time ago but cant find it any more and refuses to use any other kind. is there any type of ricotta that you guys like to use for your lasagna or do you have or know of a recipe that he can use to make his own. we have lasagna on our menu for this month and are trying to find the best kind. we normally shop at walmart in derby or wellington. tia, R.

I am not partial to any brand of ricotta but I actually do like to use cottage cheese as alternative, I think it's yummy that way too!

You need to find an Italian deli in your area. They will sell it by the pound at the deli counter, not in the regular dairy section. We use a brand called Chellino, that is made locally here. I am 1/2 Italian, my Mom all Italian and my Grandmother all Italian use this ricotta for all of our Italian dishes. I can tell you one thing about fresh ricotta, it is a totally different taste than anything else you can get. Good Luck and don't use cottage cheese, YUK!

I use cottage cheese (small curd). In addition to that, I mix in an 8oz package of fancy shredded Italian blend cheese is on sale (and another 8 oz of mozzarella to the top). Compared to using ricotta, the amount of fat is less, protein is much much more, and the flavor is really great. With whole wheat pasta, ground chicken cooked with basil, oregano, garlic and onion, and whatever sauce you like, it can be quite healthy and taste decadent.

Ricotta's overrated ;o)

I like sargento, but my boyfriend likes the one at our local italian meat market. I do have to admit the one from the meat market is good, they make it fresh for the week I believe. Good Luck! =)

Don't use grocery store ricotta, go to the local italian deli or farm fresh market., they usually have fresh ricotta there. It is slightly firmer than the Sargento or Polly-O ricotta and much tastier, I could eat it straight!!

If you go to cookinglight.com and search for ricotta cheese, you can find a recipe to make it. It is super easy and makes about 2-3 cups worth. It's delicious!
