Here's a new, low-fat (although it doesn't taste it!), fast recipe my family can't seem to get enough of! We eat it at least once a week!
French Fried Onion Coated Chicken
1 lb. boneless, skinless chicken breasts
Egg Beaters
French's French Fried Onions
Preheat oven to 400 degrees.
Dip chicken breast in egg beaters, then coat with crushed French Fried Onions.
Place on foil-lined (spray cooking spray on foil) baking sheet and bake for 20 minutes.
I usually cut the breasts in about 3 oz. chunks before coating. You can also use the cheese-flavored french fried onions. We dip it in ketchup. These heat up well also, so they're very good for leftovers. Taste like a yummy fried chicken, but only about 180 calories and 6 grams of fat for a 3 oz. breast. Enjoy!

I got this recipe from Betty Crocker ( I think) and tweaked it to my tastes)
Get a package frozen cheese tortollini. Boil it in water.
In a large pan or wok, STir fry a bit of garlic in a bit of olive oil. Add 1/4 c od chopped onions (about 1 1/2 inch squares) and red bell pepper slices (about 1/3 inch think). Stir fry a bit and add a can of Del Monte Whole green beans (or fresh ones). Heat through and add about 1 1/2 cup of chopped walnuts (I just crumble them with my hands, but not very small). Now, take about 2 cups of heavy whipping cream and stir it in. Take it to a boil and then let it simmer. Add freshly ground salt and pepper to taste and basil. The sauce will thinken as it sits.
Drain the cheese tortollini and add this wonderful veggie and walnut sauce to it. Mix well.
I usually serve this with very easy parmesian chicken and a side of fruit, like canned peaches in lite juice.
Or, you can add chicken cut up to the mix and have a one pot dinner. Everyone loves this dish!
Parmesean Chicken
4 boneless, skinless chicken breasts. Preheat oven to 350
dip chicken in egg and then dredge in Itallian breadcrumbs. Top with a bit of melted butter to prevent crumbs from burning.
About 10 minutes until done, top chicken with your favorite spaghetti sauce (I just use a nice store bought sauce.) Bake 5- 10 mins or until done. About 3 minutes before removing from oven, top chicken with Itallian cheese mix (mozzarella, parmesean...) and freshly chopped basil. Bake another minute or 2 and then remove from oven. Eat!
Oh, here is a VERY simple Bruschetta I use with this meal:
Bruschetta
Frozen Texas Toast
Place on foil line cookie sheet and bake both sides according to package so they are just lightly crisp.
Then, top with fresh chopped tomatoes, Itallian cheese mix and freshly cut basil. Cook another 2 minutes.
You now have a full, fairly easy and hearty meal!!

Mexican Casserole, you probably already have a recipe similiar.
ground beef or canned chicken
1 can of crm. of chick soup
1 can of crm. of mush soup
1 can of rotel
1 can ranch style beans, I use the one with onions or jalopenos
tortillas
brown the ground beef, you can also chop up some onion and brown with the meat too, then mix with all other ingredients except the tortillas
tear up two tortillas or so to cover the bottom of a 9x13 cassarole dish then pour half of the mixture on top, then tear up more tortillas to cover that, then cover with the rest of the mixture.
Bake at 350 degrees for 30 minutes then cover with cheese and cook another 10-15 minutes.
Chicken Spareribs, don't ask me why it is called that.
you may want to double this recipe depending on how much your family eats and if you want left overs.
1 lb of chicken breasts or however much you need to feed your family
1/2 c. water
1/3 c. soy sauce
1/3 c. brown sugar
1/2 tsp. crushed red pepper
1/4 c. apple juice
2 tbsp. catsup
1 tbsp. vinegar
1 crushed clove of garlic, or I use minced garlic in the jar
1/4 tsp. ginger
Brown chicken w/ oil. While it is browning I mix all the other ingredients in a bowl then add it all at once when the chicken is done. When it comes to a boil, cover and let simmer for 2 minutes. Glaze w/ cornstarch and 1 tbsp. of water, stir until thickened. Serve w/ rice.
I'm not sure if you and your family will like these, but I've make them often. I hope ya'll enjoy.

A favorite at our house "Tator Tot Casserole"
1 lb ground beef (cooked with chopped onion)
1 can cream of chicken soup
1 can cream of mushroom
1 can evaporated milk
1 bag tator tots (leave out to thaw for approx 30 min)
grated cheese (we used alot)
garlic powder
In 9x13 pan, pour beef, then tator tots, then all canned items (they should be previously mixed together) Add garlic powder to beef while cooking and again after putting in dish.
Cook 1 hour at 350. Take out and spread grated cheese. Allow cheese to melt and serve. Yummy.
Enjoy!

Beef Tips and Rice (feeds 6+)
2 pounds beef stew meat
2 cans cream of mushroom soup
2 cans cream of chicken soup
1 envelope lipton onion soup
Mix all in crockpot and cook on low for 8 hours. Serve over rice with a side of veggies. (I use store brand/generic soups to keep the cost down.) You can adjust to your taste. We like lots of gravy here :)

Pork Carnitas...
I throw a package of taco seasoning in the slow cooker or crock pot with about 1/4 C water and a small can of chopped green chillis. Then I add a small onion thats quartered and a couple of whole cloves of garlic (both of these are optional). Next I toss in a med pork roast (not pork loin) and let that cook all day. When it is done I take a fork and shred the meat into pieces. I usually do this about 30 min or more before serving so it has time to absorb alot of juice and get yummy. I always pick up fresh tortillas from somewhere and then we just eat it like a taco. Add whatever you like, or nothing at all!!
ps...even my 5 year old will eat this--it's really not all that spicy
