Hi moms... does anyone have a quick and easy recipe for Meat Loaf and some quick casseroles? Thanks in advance!

I make Meatloaf, real easy. Hamburger meat mixed with meatloaf seasoning from Kroger's (comes in packages like Taco seasoning) place in loaf pan and top with barbeque sauce. Cook 50 minutes on 350 degrees. That's it.

Meatloaf: 2 lbs ground beef, 1 small chopped onion, !/2 can tomato sauce, 1 sleeve mashed up crackers, 2 eggs, seasoning salt and salt and pepper to taste, 1 tsp paprika.
mix together all ingredients really well, make into a loaf and bake at 350 for 1 hour and 15 minutes. take out of oven and pour ketchup on top and bake for another 15 minutes. Serve with mashed potatoes.

Hobo Casserole:
1 lb ground beef, 4 medium Russet potatoes, 1 onion, 6 slices of american cheese, 1/4 cup of milk, 1 can cream of chicken soup, salt and pepper to taste.

in a baking dish, mash the raw hamburger meat into bottom of dish, add a little salt and pepper, pour the 1/4 cup of milk on top of meat, slice potatoes into round thin slices and put them on top next, add a little salt and pepper on top of potatoes, chop onion into thin slices and add on top of potatoes, next remove cheese slices from wrappers and place them uniformly on top of the onions and last open the can of cream of chicken soup and spread out on top of the cheese covering all edges. Bake at 350 for 1 1/2 hours.

My family really loves these:

Mexican meatloaf
1.5 lbs of ground beef
chopped onion (medium)
Taco seasoning
1 C ground up chips (I put some tostada chips in a baggie and let my son "crush" them and roll over them with a rolling pin while I get everything else ready)
2 eggs
1.5 C salsa
1.24 C cheddar cheese
chopped jalepenos (optional)

Just mix the meat, onion, seasoning, chips, eggs, 1 C salsa and 1 C cheese together and shape into a loaf. Put in a greased pan and bake at 350 for 55-60 minutes. Pull the meat out, drain, then top with the remaining salsa and cheese, then put it back in the oven (turn it off) and let the cheese melt.

King Ranch Chicken Casserole

1 med onion, chopped
1 med green pepper, chopped
3 Tbs butter
3 C cooked chicken, shredded or torn up
2 C drained rotels
1 can of cream of mushroom
1 can of cream of chicken
3/4 C shredded cheese
1/3 C salsa
1 Tbs chili powder
Corn chips or corn tortillas

Cook onion and pepper in butter til tender. Remove from heat and add tomatoes, soups, salsa, and chili powder, mix well. Line bottom of 3qt dish with chips, 1/2 chicken, 1/2 veg/soup mix. Sprinkle with cheese. Repeat layers. Bake at 350 for 35 minutes and let it stand 10 minutes.

I do have a couple of recipies that my family relly love. For meatloaf...1 1/2 to 2 lbs ground beef 2 large chopped onion 3 cans stewed tomatoes 2 large eggs (beaten) 1 1/2 to 2 sleeves crackers 1 lb baby carrots 5 or 6 potatoes cubed 2 pkgs brown gravy mix preheat oven to 350 combine beef 1 finely chopped onion 1 can tomatoes eggs and enough crackers to make the meat mix almost dry(this is because while it cooks it releases the fat and if it doesn't feel dry to you it will fall apart) form the meat mix into a loaf. In the baking dish mix your brown gravy to pkg directions and add the carrots, onions, potatoes and onion. Make an area for the meat loaf in the center of the veggies, cover and bake until the meat if firm. I sometimes brown the top and at times I will put mushrooms over the top. This isn't the "traditional" meatloaf recipie but I never have leftovers unless I double this recipie. Keep in mind I have a family of four so this should provide enough for your as well. Let me know if you try it and if it was a hit or not. As for a casserole my family enjoy chicken and rice. You can also use pork chops for this if you like. This one is really quick and easy. Preheat oven to 350. Take 5 or 6 chicken breasts or pork chops 1 1/2 cups rice (not minute rice) 1 can cream of chicken soup 2 cans cream of mushroom soup 1 1/2 cups water mix rice soup and water together, blend well. add meat to mix, kinda squish it around in mix so it gets in there good and bake for about and hour to 1 & 1/2 hours. Test they rice for tenderness. This is really yummy. You sometimes may need to stir the rice around a bit during cooking if the moisture is uneven. Sometimes I will add cheese over the top for a little different approach for the little ones. Let me know what you think.
