SO i'm a single mom
at the age of 21
UNFORTUNATELY
my exhusband did MOST of the COOKING.
I work really late and need some quick recipes so i can get my baby boy fed before he gets to cranky and starts throwing whatever i make him on the floor!
:) ANY IDEAS MAMAS?

I always had healthy snacks our daughter could eat while we were on the way home or I got dinner heated up or cooked.

Raw veggies, whole wheat crackers with peanut butter or cheese.

Whole wheat tortilla with cheese, hard boiled egg, non sugar cereal.

It was just enough so that she was not totally starving.

Quickest and easiest meals.
Grilled meats or fish. The grilled meat freezes great. Cook a lot and freeze portions for the future.

Turkey meatballs, These also freeze great. Next time you make them freeze a lot of them.

Porcupines. Ground meat or turkey with a cup of rice, spice roll into balls and brown them in a skillet. Then cook them for 20 min. with Whole canned tomatoes crushed (or tomato sauce.. ), onions, shredded carrots, beef broth.

Grilled sausages, serve them in a tortilla or slice them up and serve with eggs.

Always keep baby carrots or sliced carrots, cucumbers, squash, lettuces, fruit, pasta and rice handy.

In the freezer keep some peas, green beans, corn. These heat up super fast and are good with just a little lemon juice or a little soy sauce.

I always have canned beans, spaghetti sauce, jarred hot sauce and a few cans of soup.

Not sure how old your son is but just giving a child a small snack like some cheerios is a good way to entertain them plus give them some food while you fix his food.

Batch cooking and freezing meals especially stews it great. But it does not have to be fancy. I stock some or all of the following things at any given time: a bowl of fruit, frozen veggies, hard boiled eggs, yoghurt, peanut butter, hummus/whole wheat crackers, lunch meat, cheese, bread, cereal/milk
If you have a few minutes scrambled eggs/toast, or a cheese quesadilla with beans or leftover chopped meat.

Get a slo cooker. You can put in peices of chicken, potatoes, carrots a little water set it to cook all day while you are at work. Come home dinner is ready. You can also put in a beef roast--pork steak or chops, turkey legs or wings. You can also put in rice instead of potatoes 2 cups water for 1 cup long cooking rice.
Get the kind that has an insert, you can toss the food together before you go to bed and put it the refrig overnight. In the morning put the insert into the slo-cooker and dinner is done when you get home.
