Potato Salad...creamy - Smooth???? What Do You Make?

Okay - I typically don't make potato salad, however, my nephew is here and after 4 tours in Iraq and Afghanistan - he asked for some potato salad...

So - what do you put in yours???

I know POTATOES!!! (smiles!!)

What I have done before (and it's been about 3 years if not a little longer) was:
sweet or dill relish (depended upon my mood - just like deviled eggs)
onions (finely chopped) (i have green onions today as well!)
hard boiled eggs
MAYO (not a Miracle Whip girl here!!)
Mustard

Sooooo tell me - how do you make yours!??!

German:

Red potatoes
Mayo (BestFoods/Helmans for all y'all east of the Rockies)
Stoneground/brown mustard
Onion
Hard boiled egg whites
Dill relish
Bacon
Sometimes beet greens
Sometimes capers

Served warm

Sometimes I'll add bleu cheese &/hot sauce on day 2

I put:
Mayonnaise
Salt to taste
ground pepper to taste
Wasabi
pinch of sugar to taste
Yukon gold potatoes
Onions... but grated VERY finely. And use the onion juice as well that comes out as you grate it.
Green onions is good too. Folks in Hawaii use that a lot.
Eggs if people like it

Here's what we put in ours:

cubed potatoes
cubed hard boiled eggs
diced radishes
diced celery
green onion
miracle whip
dijon mustard
salt and pepper to taste.

Instead of relish I use pickles, usually dill, and instead of mustard I add pickle juice to the mayo. I'm a mayo girl myself. Of course, I also use salt and pepper as you probably do too.

I use white or red potatoes, they dont get mushy when you start stirring up the salad.
Russets work too, but sometimes I over cook them and have to make mashed potato salad, which is still good, but I do like chunks of tater in mine.

Sweet relish
mayo
mustard
chopped dills (and a tablespoon of juice)
red onion
celery
one of the small jars of pimento

I keep mine simple.

Potatoes, onions, eggs, mustard, mayonnaise, chopped pickles and salt and pepper to taste.

I guess I could try adding celery to mine. I never thought about that.

I use an heirloom recipe from my Grandmother. Still receiving rave reviews, & it's been a part of my life forever! We now call it a "heart attack in a bowl", & only serve it 1-2 times/year. :)

red potatoes
celery, onion, green pepper
& the dressing is made with Miracle Whip, bacon, sugar, & S&P.

& now for the kicker: the traditional recipe is made with an additional raw egg & some bacon grease. For health issues, we eliminate the egg & use minimal-to-none of the bacon grease (depends on who's in charge - The men add the grease, the women do not).

This potato salad is excellent, bad for you, but excellent.

Just made some a bit ago for tonight!

Potatoes
Mayo
Mustard
Pickles
Onions
Celery
Cucumbers
Radish (sometimes depending if I have)

All mixed together with salt and pepper.

After the potatoes are done I put them in a bowl to cool and sprinkle the salt and pepper on the still warm potatoes. Gives it a lot of flavor.

Then my mom always put radish roses on top for pretty presentation.

I like a simple german potato salad. Nothing sweet to mine. Potatos, best foods mayo , slices of dill pickle, oinion, egg, and a little ranch dressing dry mix. I also like to dilute my mayo with a little yogurt for a lighter salad.

I don't do a 'creamy' one, mainly because I get all concerned about mayo and food poisoning. Instead, I do one inspired by a Nicoise salad. I use nice new potatoes with a lemon caper vinaigrette (recipe from Joy of Cooking), sometimes adding in some sliced green olive or parsley or green beans sliced horizontally and blanched.

The best thing about this salad is that usually someone else brings a 'creamy' style one to picnics or potlucks (when dishes to bring aren't designated)... so this is an unusual twist, but always tasty.

ETA: after reading everyone else's suggestions...mmmm...it's almost too bad I'm making tabbouleh tonight instead of this....:)~

No eggs...and Miracle Whip should be against the law. Good for you! I think you need to ask him how he likes it and then make it the way he prefers.

Redskin potatoes (cooked, cubed)
Hard cooked eggs
Mayo
Chopped green onion
Celery seed

My recipe is very much like Riley's. And I LOVE it warm. YUM!

I don't care for potato salads that have anything sweet in them. No Miracle Whip, no sugar, no sweet relish. GROSS.

Potatoes (I leave a bit of skin on here and there as I peel/dice).
Mustard
Mayo!!
Salt
Pepper
Paprika (a wonderful spice I use on many many things!)
Finely diced raw onions
Hard Boiled Eggs
Celery Salt (I don't like celery chunks for some reason but like the flavor celery salt gives)
That's it! Pretty simple and tastes just yummy!!

I boil the potatoes, slip the skin off the larger pieces once they are done. Then I use a potato masher but leave them chunky. I add miracle whip, chopped onions, relish, some salt, maybe some pepper, and often a little mustard.

Sometimes I like to eat it warm and other times cold as I can get it.

I like chunky potato salad. Last potluck at church had a potato salad that was so creamy and smooth it was like MASHED potatoes. YUCK! It was so gross! And I dont like a lot of onions either. Hope it turned out for you! =)
