New Breakfast Ideas

My 22 month old son seems bored with the variety of foods I'm giving him in the morning... If anyone has any ideas or recipes I could really use them.

What can I do next?

Hi E., I don't know what you're already feeding your son but here is what my 23 mo old and 3 yr old like.
Scrambled eggs-while I'm whipping the eggs before I cook them I add a small handful of shredded cheese and no salt or pepper then I cook it

Gogurts-they are like freezie pops but with yogurt and I just squeeze them into a bowl so they can use a spoon. These are great cause they come in neat colors and yummy flavors. SOmetimes I let them use nilla wafers instead of spoons or I'll mix in some sliced bananas

Froot Loops-don't know what it is about them but all my kids love them and eat them no matter what as well as the new fruity cheerios

maple flavored frozen sausage patties that I just warm in the microwave, they're precooked so just heat, cool if too hot, cut and serve

Toast with cinnamon applesauce on it instead of butter or jelly

Gerber Cereal Bars-these are alittle more expensive than the regular cereal bars but they're less messy and not so sweet tasting

Cottage cheese with pineapple tidbits

Here's what we do:
wheat bagels with cream cheese or peanut butter
wheat toast with the same or butter
honey wheat pancakes (Krusteaz brand)with bananas and syrup
scrambled or boiled eggs with or without toast
oatmeal
waffles(Kashi type)
smoothies
yogurt
cereal--raisin bran, wheaties, cheerios, mighty bites

There are allot of finger foods for breakfast, ie. french toast sticks, waffles that pull apart, also try assortments that they can pick out themselves variety oatmeals or muffins (jiffy makes a variety). I have 2 kids and eventhough I work I still cook them a breakfast every morning they never have the same thing twice in a week. Those are just come breakfast ideas.

I don't know what you're already doing, so these may be redundant. But here is what's in our rotation (I have an almost-4 year old and an almost-2 year old)...

Yogurt parfaits - vanilla yogurt, berries (I like the frozen wild blueberries the best) and kashi go lean crunch cereal. This is a big hit right now, it looks like dessert.

Oatmeal - my kids LOVE oatmeal. I make the steel cut kind, but really they like it all. I usually add some roasted apples on top or some fruit or something so it's not so blah.

Breakfast burritos - my husband works at night so cooks breakfast in the morning for the kids (well, sometimes). Egg burritos are a big hit. Especially with a little cheese and/or leftover veggies from the night before.

Peanut butter and honey toast

Smoothies - you can really throw in whatever. Sometimes I make smoothies with peanut butter, milk and vanilla yogurt. Sometimes just the normal fruit, yogurt and milk.

Muffins - if you make a big batch and freeze them they last a fairly long time.

I just posted a pupkin recipe tht would be good anytime.
I also feed my 14mth malt-o-meal, sweetend with apple sauce. The malt-o-meal has great iron and folic acid.

I make yogurt,tofu and fruit smoothies for her which she loves.

J. Seinfeld has a recipe for Scrambled eggs with cauliflower puree which are amazing and so healthy. SEE BELOW

INGREDIENTS
2 large eggs
4 large egg whites
1/4 cup reduced-fat sour cream
1/2 cup cauliflower puree
2 Tbsp. grated Parmesan
Pinch of salt
Nonstick cooking spray
1 tsp. olive oil

In a large bowl, whisk together the eggs, egg whites, sour cream, cauliflower puree, Parmesan and salt.

Coat a large nonstick skillet with cooking spray, then set the pan over medium-high heat. When the pan is hot, add the oil. Add the egg mixture, reduce the heat to low, and cook, stirring frequently with a silicone spatula, until the eggs are scrambled—firm but nice and moist—2 to 3 minutes.
