Needing Summer Dessert Recipes!

Hello everyone, with the summer so hot I've decided to make a new dessert or meal every couple of weeks with the assistance of my little one. Although, I'm running out of recipes. Could you help me out with some tasty dessert recipes? Possibly something with fruit would be nice.

We love to eat pink lemonade pie in the summer. It is so easy too. You take a thawed can of frozen lemonade (or limeade, or whatever flavor you might want to try out), a tub of cool whip ( I use the store brand and it works just as good for less $), a can of condensed milk, mix it all together, Then you put it in a graham cracker pie crust and stick in the freezer. We usually leave it overnight but it is not necessary. It just needs to harden up a little so you can cut it. Hope you guys enjoy it as much as we do!

Cheesecake Ball Recipe

1- 8oz pkg Cream Cheese, softened

1- Stick Real Butter, softened

3/4 Cup Powdered Sugar

4Tbsp Brown Sugar

1/2 tsp Vanilla

1/2 Bag mini choc chips

Pecans to taste





Cream together cream cheese, butter, vanilla. Add sugars stir well.

Mix in choc chips and pecans. Chill for 1 hr

This recipe is GREAT! My oldest help mash strawberries and my younger one helped crush the oreos :)
You can get the low-fat condensed milk and oreos and it's still good.

Strawberry Whipped Sensation

Prep Time: 20 min
Total Time: 6 hr 20 min
Makes: 12 servings


4 cups fresh strawberries, divided
1 can (14 oz.) EAGLE BRAND® Sweetened Condensed Milk
1/4 cup lemon juice
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided
8 OREO Cookies, finely chopped
1 Tbsp. butter, melted

LINE 9x5-inch loaf pan with foil, with ends of foil extending over sides of pan. Mash 2 cups of the strawberries in large bowl. Add condensed milk, juice and 2 cups of the whipped topping; mix well. Pour into prepared pan.
MIX chopped cookies and butter. Spoon over whipped topping mixture. Cover with ends of foil and gently press cookie mixture into whipped topping mixture. Freeze 6 hours or until firm.
INVERT dessert onto serving plate when ready to serve; remove pan and foil. Spread remaining whipped topping onto top and sides of dessert. Slice remaining 2 cups strawberries; arrange over dessert. Store leftovers in freezer.

Not really a dessert, but my favorite summer frosting!
Mix instant pudding mix right into a tub of Cool Whip and use it to frost your favorite cakes or pipe onto the top of Jello desserts! My favorite flavors are the french vanilla and the cheesecake! This really gives a richer flavor to the Cool Whip!

Hey, A.. Here are a couple of yummy ones involving cake mix. If you really want to be easy (and healthy), make the cake the Weight Watchers way--use cake mix and one can of diet 7-up (that's IT), and bake as directed. It is an AMAZING substitute for eggs, milk, oil, and water. Really cool. Anyway, try a strawberry cake mix, then while that is baking, make some strawberry jello. When cake is done and jello is semi-set, poke holes throughout the cake with a straw, pour jello over the top, and let it chill in fridge at least 4 hours. Top with cool-whip and strawberries. VERY yummy and moist!

You can also make a plain-ole cake and top it with a mix of one box cool whip, one can crushed pineapple, and one small box pudding mix (we like either vanilla or pistashio best). VERY yummy topping, and not a lot of sugar or fat.

Here's a family favorite of ours which doesn't require baking and is very easy to prepare! I didn't have the recipe close by, so I copied it from www.allrecipes.com.
I've listed some other options below the recipe. I hope you enjoy!

Lemonade Pie

1 (6 ounce) can frozen lemonade concentrate, thawed
1 (8 ounce) container frozen whipped topping, thawed
1 (14 ounce) can sweetened condensed milk
1 (9 inch) prepared graham cracker crust

DIRECTIONS
In a large bowl, mix together concentrate and sweetened condensed milk. Fold in whipped topping. Pour filling into crust, and chill before serving. If not setting well, you may need to put in freezer for an hour or so.

OPTIONS:

You can use pink lemonade or limeade as other options and add food coloring if you desire. If you can't find 6 oz. frozen lemonade, you can use the 12 oz. and make 2 pies. Our family normally makes 2 pies from the regular recipe since one pie was overly full. You can top the pie with fresh fruit. Another option for the crust which was suggested on that website was gingersnap crust for a stronger flavor. I assume that's homemade since I haven't seen them in the grocery store.

1 pack of pistacio instant jello mix

1 TUB OF COOL WHIP

MAKE A WHITE BOX CAKE COOK IT AND WHEN IT IS COOL MIX UP A LARGE PACK OF INSTANT STRAWBERRY JELLO ...THEN TAKE A STRAW AND POKE HOLES IN ROWS DOWN THE CAKE ALL THE WAY TO THE BOTTOM OF THE CAKE PAN...POUR THE LIQUID STRAWBERY JELLO OVER THE CAKE SO THAT IT GOESINTO THE HOLES...CHILL IN FRIDGE UNTIL THE JELLO IS CHILLED THEN TAKE OUT AND TOP WITH COOL WHIP AND THEN PUT A LAYER OF FRESH CUT STRAWBERRIES ON IT....VERY TASTEY AND YOUR LITTLE ONE CAN HELP!

Trifles are always fun to do with kids. Some sort of cake (brownies, regular cake, angel food, muffins, etc.), pudding, fruit, cool whip, etc., all layered in a trifle dish. Yummy and fun to make!

I love the new Homemade Gourmet Key Lime Cheeseball. It is so easy and can be a ball or made into a cheesecake pie. I top it with seasonal fruit. I've made mini tarts for parties and everyone loved them.

Make fruit kebabs! Use wooden hibachi skewers or the long "drink" toothpicks with the umbrellas, etc. Let the kids choose and put on pieces of melon, berries, etc. Top with a strawberry. Dip in vanilla yogurt or the prepared fruit dip found in produce/fruit section ... add a little cinnamon or nutmet if your kids like a little spice. Make it a fun event with some leis and a few other island props from the party store! Grandma GiGi

Fruit Smoothies:

in a blender add:
container of strawberry yogurt or tube of "Gogurt"
a couple strawberries, rinsed and stem cut off
some pineapple out of a can
1 banana
blend until blended all together and wa-la a yummy fruit smoothie!

Go to www.allrecipes.com & search for 'Triple Berry Crisp.' I've made this several times and gotten raves! I usually make it with strawberries, blueberries, & blackberries/raspberries. Instead of using the oats I use two packages of instant cinnamon oatmeal. The recipe calls for 1 1/2 cups of butter but I use 1 1/4 cups & it turns out just fine. It is so yummy served warm with vanilla ice cream!

"Fruity" Jell-O

Ingredients:
1 pkg. orange Jell-O
1 can pineapple tidbits in juice
2 to 3 medium carrots grated
2/3 cup chopped pecans

1. Disolve package of Jell-O in 1 cup boiled water.
2. Drain the juice of pineapple into 1 cup measuring cup and add water till full (1 cup). Add to Jell-O. Stir.
3. Add pineapple tidbits, grated carrots, and chopped pecans. Stir.
4. Pour into Jell-O mold. Use spoon to even out ingredients. Chill until set.
5. Place plate over mold and flip to release the beautiful, healthy snack/dessert.
6. Slice and serve.

This is something I have LOVED since childhood. Mom always made it and we enjoyed helping to make it. Instead of carrot cake, the sweet veggie gets a different twist.

Following recipe has fruit, easy to make and very cool for summer:

Take 1 can of 20oz Crushed Pineapple
1 can of condensed milk
1 tub of Whipping Cream (8 oz)
1 cup of crushed nuts of your choice

Mix all of above and refrigerate it for an hour.

Fruit Pizza

1 pre-made Sugar Cookie Dough "log"
1 pkg Cream Cheese (room temp)
1/2 small Cool Whip
Strawberries
Blueberries
Kiwi
Pineapple

Spread cookie dough on cookie sheet in a solid, thin layer. Bake according to package directions. Allow to cool. Meanwhile, cut up fruit, and blend cream cheese and Cool Whip and spread over cooled cookie dough for the "sauce". Add fruit toppings and enjoy!

(you don't have to use all the above fruit, I just like it - I've done this for 4th of July every year forever and do a flag with just Strawberries and blueberries)

There is a great Pampered Chef recipe for a Red, White and Blueberry Trifle which has fruit, yogurt and angel food cake. Check around on some websites and you shold be able to find it.

I have a very easy and heathy dessert. It is Yogurt Delight.
Mix 1 qt plain yogurt, 1 can (15 oz) crushed pineapple, undrained, 1 sm pkg instant pudding (vanilla, cheesecake or white chocolate works well), and 1(8oz)can mandarin oranges, drained.
Mix well and put in refrigerator to chill. It is delicious.

I love to make fruit pizza. You get a 13X9 pan and press sugar cookie dough to cover the bottom of pan (I use the stuff in the tubed package). Bake the cookie dough then let cool. In the meantime mix a tub of cool whip with a 6 to 8oz thing of yougert (I use the strawberry and bannana but it does not matter). Spread the yougert mixture on the cooled cookie dough and add sliced fruit for the topping. We use whatever fruit your family likes. We use apples, bananas, mandarin oranges, pineapple, kiwi and strawberries. Serve in squares and enjoy.

my mom used to make jello and put fruit in it. We thought that was great. Of course I am 52 so that was a long time ago, but kids still like jello.
I also freeze banana pudding. I let it thaw for about an hour before the meal and then it ready to eat and kind of like ice cream.

If you go to kraft.com, there are several recipes. You can even sign up for there quarterly magazine. It is completely free and they have some wonderful, quick, and easy recipes. Surely that website should help you with some cool, different desserts then what you may normally make.
