Eerie Eyeballs - a bit creepy and for a Halloween treat, they are great!
(Rice Krispy treats rolled in a golf-ball size, dipped in white chocolate; Use blue or brown M & M's for the iris/eyeball and you can use red food gel to make a thin vein-y look in the whites of the eyes.

The poster who put English Muffins had a great idea! How about Eggo waffles (maybe you could toast them before school or offer to send your toaster that day?) Eclairs (not healthy really, but easy and could be store bought...I know Target, Jewel, Sam's club sell mini ones in the frozen section.)

How about English muffins? I would say eggs but you never know if there is an allergy (though it could also be said about the muffins for gluten). Also, if sweets are okay, english toffee, eclairs, eggnog with out the eggs.

You could buy alphabet cookie cutters and bake E cookies, or make Egg shaped cookies. I am sure not everyone in the class would eat hard boiled eggs but maybe scrambled. My son still talks about his principal coming in his kindergarten last year with green Eggs and Ham for Dr. Suess's birthday. And he does not eat eggs at home.

With all the alergies out there today this is sort of tough but maybe hard boiled eggs in Fall colors? With their intials or just an E?

That's a tough one!! You could get an elephant cookie cutter & make sugar cookies. Or hard-boiled eggs, but that'd be messy and probably not popular among the kidlets.

That's about all I can think of. Wow, what a challenge!

Animal crackers or any kind of cracker cookie that has elephants in the mix. Another idea is the aphabet crackers that just have the letters in them. Another idea--although it might not work right now-- is Easter Eggs. Maybe you could get leftover plastic eggs and put snacks in the eggs. ?? Edamane is also an E food. I've never had it but a lot of folks say it is yummy. OK-- here's a stretch---how about making an "Energy food" snack? Get some foods that give kids lots of Energy...like cheese, crackers, juice---and call it their "energy snack".

PS--edamame (if I spelled it right) is soybeans. They look like fat peas, you boil or steam them, add salt, and pop the little pea seeds into your mouth. Trader Joes has them frozen.

What about Jello jigglers cut into the letter E? Or Trader Joes sells tubs of yummy alphabet cookies. You could pick through it for all of the Es. You might need to buy a few tubs.
