Need Dessert Recipe for Child with Egg, Flour, and Dairy Allergies
A friend of mine is having Thanksgiving at her house and her neice is coming who is allergic to eggs, flour, and milk. Does anyone have any good dessert recipes that she can make that keep these allergies in mind? She figures she can substitute soy milk for any milk in a recipe and can get some gluten free flour, but what can she substitute for eggs? Any recommendations on a recipe or any substitutions would be helpful. She says that her sister (child's mom) makes a dessert that the child can have, but she says it's pretty gross and is so dense, it's like a brick. She was hoping to find a recipe that could be enjoyed by the entire group.

As a vegan, I bake egg and dairy free all the time. If you need something very quick and don't want to bake, you can go into DC and find gluten free vegan cupcakes and other baked goodies @ Sticky Fingers bakery. If you would like to make something, you can go to MOM's and find gluten free cake, cookie and brownie mixes and either use bananas, applesauce, Ener-G egg replacer or flax seed powder(or grind flax seeds and mix into water) for the eggs. We make light and fluffy cakes, brownies and cookies.

Some of my daughters friends have egg allergies so when I make cupcakes for them I use a cakemix and a can of soda--thats all--just 2 ingredients. I beat them together for a few minutes. They make great cupcakes (but does not work as well when making a regular size cake). They make gluten free cake mixes now (I have seen them in the regular grocery store) so you could try using one of those with a can of soda and making her cupcakes. You could make frosting with 10x sugar and crisco or soy cream cheese.

Dairy? Watch out for butter/margarine too. Search for Vegan recipes to avoid eggs. I just searched and found a nice apple crisp recipe with no eggs but make sure to know what type of margarine to use. Also, have her verify soy milk is ok. Our friend can have rice milk but not soy or dairy.
Good luck. It's hard to do but I like to make nice DIFFERENT food for visiting kids with allergies. They must get tired of the same old stuff over and over.

I regularly substitute applesauce, canned pumpkin, or mashed bananas for eggs (depending on the flavors in whatever I'm making). You can do that for oil, too, if you want to reduce fat.
Eggs are mainly for fat, so you could also increase the oil.
I know a lot of the baking mix companies are now making gluten-free mixes, but they probably still have some milk in them. I'd recommend checking some labels, though. It's worth a try. Then just substitute 1/4 cup fruit puree or oil for each egg.

My son has an egg allergy and my daughter can't eat dairy. So, here's our cake recipe. There's a chocolate version and a spice/applesauce version. Both are light and fluffy and don't need any frosting. Chocolate cake: 1 2/3 c. flour, 1 c. sugar, 1/4 c. cocoa, 1t baking soda, 1/2 t. salt, 1 c. water, 1/3 c. oil, 1/2 t. vanilla, 1T vinegar. Mix together. Bake in ungreased square pan (or 12 cupcakes) at 350 degrees for 35-40 mins. For the spice/applesauce variation: Omit cocoa and vanilla. Add 1 1/2 t. allspice. Reduce water to 1/2 cup and add 1/2 cup applesauce.
Also, there's a recipe book called "Bakin' without eggs". I use it a lot and you can adapt many of the recipes in there so there's no dairy in them. Good luck!

When i make our Pumpkin pie I use 1 Tablespoon of cornstarch per egg and use what ever milk you want. It turns out great. A person can just pour the mix in a baking dish and bake with out a crust. Our daughter likes hers that way best. It will not be stiff till it cools just be cause thats the way cornstarch works.

I don't know how to contend with that combination of things but you can substitute black beans for eggs in brownie recipes. Applesauce is also agood substitute for may fats in baking like eggs and oil.

I am also allergic to wheat and dairy products. Often times I find I can leave the egg out of a recipe and it still bakes well. Most of the time it works to substitute soy milk for cow milk. Here is a recipe I like very much and it needs no cooking:
Pineapple Pudding
Whiz in a blender: 1 can of pineapple 15oz. with the juice
1/2 cup raw cashews
1 cup coconut
1 tsp. lemon juice
If the coconut is unsweetened add 1T. honey
Pour into serving dishes and let it set in the refrigerator an hour or more. If firms up when it sets.
You may top each with a marchino cherry.

My daughter actually has those same allergies. Betty crocker makes cookie and cake mixes now with those allergies in mind. You can use applesauce or bananas for an egg substitute. I tried it and it worked!
