I'm looking for tried and true NUT FREE muffin recipes for preschool snacks. any ideas/recipes for me? tia.

These are healthy, easy, delicious. Carrot raisin muffins:
2 1/2 c. raisin bran cereal
1 c. skim milk
1 egg, beaten
3 T. oil
1 c. flour
1 T. baking powder
3 T. brown sugar
1 t. cinnamon
1/8 t. salt
2/3 c. grated carrot ( I used more)
put raisin bran milk together in a bowl and let sit for about 3 minutes. Meanwhile combine other liquid ingredients, then add to raisin bran mixture. Combine dry ingredients and then add to raisin bran mixture. Fold in carrots. Bake at 400F for 20 minutes. Enjoy!

OMG I LOVE this recipe. Just read the package of chocolate chips to make sure they aren't made on machines that process nuts. I know the Kroger brand chips I buy are safe. You'll get 12-18 muffins out of this depending on how big your muffin tin cups are :)

Ingredients

* 1 cup quick-cooking oats
* 1 1/4 cup whole wheat flour
* 1/4 cup flax seed meal (**optional - you can just substitute more flour)
* 2 teaspoons baking powder
* 1/2 teaspoon baking soda
* 1/8 teaspoon salt
* 2 tablespoons butter, softened
* 1/2 cup packed brown sugar
* 3 medium ripe bananas, mashed
* 1 egg
* 1/4 cup unsweetened applesauce
* 1 teaspoon vanilla extract
* 3/4 cup miniature semisweet chocolate chips

Directions

1. In a large bowl, combine the dry ingredients. I like to use a whisk to get everything really mixed through. In a small mixing bowl, beat butter and brown sugar until crumbly. Beat in the bananas, egg, applesauce and vanilla. Stir into dry ingredients just until moistened. Fold in chocolate chips.
2. Coat muffin cups with nonstick cooking spray or line with paper liners; fill three-fourths full. Bake at 350 degrees F for 15-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.

pumpkin muffins are really good! My kids love these.

makes 14 muffins...

1 cup canned pumpkin
2 eggs, slightly beaten
1/2 cup water
1/2 cup applesauce
1 3/4 cup flour
1/4 tsp salt
1 1/2 cups sugar
1 tsp baking soda
1/4 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ginger
1/4 tsp ground cloves

1. Blend pumpkin, eggs, water and applesauce in large bowl.
2. Sift together remaining ingredients and add to pumpkin mixture.
3. Fill greases muffin tins about 3/4 full
4. Bake at 350 degrees about 30 minutes or until set when touched.

There are two great recipes in the "What to Expect The First Year" book. Both are made without processed sugar. They use juice concentrate. When I made them, I used whole wheat flour to make them healthier.

If you are looking for EASY instead of healthy, this is my go-to recipe that is always a hit with any crowd - especially in the fall. I always keep these three things in my pantry just in case I suddenly or unexpectedly have to make a cake (or muffins):

One (1) package spice cake mix (18 oz)
One (1) can pumpkin (15 oz)
One (1) bag cinnamon chips (10 oz - optional)
Mix these three ingredients (NOTHING ELSE) and bake as you would the mix. You could make them in a mini-muffin pan.

You can dust with powdered sugar or make a thin glaze (similar to cinnamon roll glaze) and pour over. I serve mine plain with whipped cream or ice cream.

Look on veryculinary and search A-Z bread. It's a great recipe for a basic bread that you can add anything to! My favorite is pumpkin raisin, but I have also made chocolate with dried cherries, grated carrot w/ coconut, zucchini; the possibilities are endless! So easy and so delicious!!!

(You can make the bread recipe and just serve slices or you can make these as muffins.)

I just found this great pumpkin bread recipe in Parents magazine, but modified it a little bit. It could easily be made into muffins. My 22 month old loves this recipe! 1 yellow cake mix (follow instructions on cake mix without water and minus 1 of the eggs - use 1/4 c applesauce instead), 1 cup pumpkin or pumpkin pie mix in a can, 1 cup mashed bananas, 1 teaspoon cinnamon. Bake at 350 for 50 minutes.

Go to foodnetwork.com and you will find some recipes for Zuchinni bread, I use one , think it is Paula Deans recipe, that was so good. Just put the bread batter in lined cupcake pans instead of loaf pan. I have made it for a preschool snack and added about 1/2 or 2/3 chocolate chips to the recipe. Amazing how kids will gobble up muffins made with veggies if there are chocolate chips in them. Carrot cake recipes made into muffins instead are always good too just omit the nuts.Hope this helps

The Bride and Groom cookbook (I don't have the recipe on me) has a banana bread recipe in it. We make it without the nuts because we don't like them and my son is now known as the banana bread monster. He is constantly asking us for banana bread. I was also given a recipe for broccoli bread. Sounds questionable, I know, but it was actually really good, and I'm sure that you could make it in muffin tins too. Let me know if you want either of these.
