When my daughter was about that age, I made her a Barbie cake with a Pampered Chef mixing bowl. You can bake the cake right in the bowl, then turn it upside down to get the cake out of the bowl after it is done cooking...that is Barbie's gown. I bought a cheap imitation Barbie at the dollar store and stuck that into the gown...then deocorated the cake/gown. It was great!! Actually, I think that it is the only cake I ever made and I was very proud of myself!! As far as moist cakes, I think that all of those boxed mixes turn out great!

If you decide to make one yourself, Williams-Sonoma has some good pans to choose from. For my daughters first birthday, my mom and I made her a cake and little cakelets using these pans. And trust me, I am NOT experienced at baking at all! But I was so proud when it was done - they really turned out well. You may even check out ebay for some retired designs at good prices. Either way, enjoy your daughter's birthday!
