I have no real brillant food ideas, but what I did do just last night that my 3 and 4 year old loves was Old Fashion Oatmeal, the one that takes longer than 2 minutes to cook. We had fresh blueberrys or strawberrys to choose from to add to their oatmeal. They LOVED it. They got seconds. I also took the round bisquet cutter (from pampered chef) and cut their toast into circles. They thought it was the coolest. So I took an old fashioned meal and added a little to it.

Cook in bulk. Never make one meatloaf when you can make three and freeze two! That way when you are faced with "one of those days" you can simply pull something out.

Rotisserie chicken, microwaveable (Trader Joe's) rice, veggie
Sloppy Joe's - ground meat, onion BBQ sauce and a little bit of mustard - saute together, serve on a bun, baked potato wedges and veggie
Ground turkey tacos
gnocchi (faster than pasta) with chicken sausage, bell peppers and onions + a little bit of pasta sauce and veggie
baked potato, chicken ('just chicken' from Trader Joe's), broccoli and cheese
Pasta bake
Congratulations for being able to cook with 5 kids; impressive!!!

I always have to make quick dinners; here are a few of my favorites:
Mexican pizza - cook the ground beef (or turkey...), when done, throw in refried beans w/ the meat. Mix it all together. Grab a flour tortilla, spread the meat on the tortilla. Put another toritlla on top of the meat, and sprinkle shredded cheese on top with any other toppings (I also put tomoatoes and sometimes black olives). Then, stick it in the oven until the cheese melts. Yummy, my little one loved it and it takes no more then 15 minute TOTAL.

Casserole (the quick-n-easy one) - I buy the canned chicken from costco (or you can use tuna). Cook egg noodles. When done, break down the chicken (or tuna) and mix right in with the egg noodles (in the casserole dish). I love veggies, so I also boil water and once it is boiling I turn off the stove and throw in frozen peas and carrots and let them cook in the hot water for about 10 minutes. Mix those in also. Then, I just put in a few campbells cream of mushroom, mix it all up and pop it in the oven. Complement it with garlic bread (ha! i use the frozen one if I strapped for time also).

My most recent fast dish - pasta with pesto. Fast and easy. I throw thin chicken breasts or thighs on my foreman grill while my noodles are cooking. When done, just top teh noodles with pesto, add your chicken .. and again garlic bread :)

last one that my hubby loves... those nights that I am able to cook, I make nice dinners. Anytime I BBQ steaks, I make more than I need. The next day, we have a wonderful steak salad. slice the steak, wok-it, throw in mushrooms - anything. my family loves asparagus so I just boil water, when boiling, I turn it off and throw in my asparagus for maybe 5 minutes and then top the salad with it - the asparagus keeps the crunch this way.

Well, hope you like some of my fast meals. I am not a great cook and a big believer in fast meals - so I have plenty more :)

My new fave quick and yum is meatball subs. I get Costco meatballs (they are actually cheaper than making them yourself), cover them in marinara and cook in the oven for about 30 minutes. Open up hoagie type rolls and melt cheese on top in the broiler. Cut the meatballs in half or quarters (depending on how little your littles are) and spread on the rolls. Done!

Also, I have a computer doc of go-to easy recipes. Send me a message if you'd like to have it and I will email it to you.
