Make Ahead Brunch

I'm having a Sunday brunch the day after my daughter's wedding. It will be a party for the gift opening attended by close family, probably about 30 people. Do you have a great make-ahead recipe or ideas of what to serve? I won't have much time to prepare that day, or the day before, so I will have to make most of it on Friday morning.

I did a brunch for my daughters baptism.

First I made a bunch of different kinds of muffins.

Then I made up a waffle mix ahead of time.

And then I got all the toppings ready so it was like a waffle bar:

Apples&cinnamon
raspberries & blueberries
strawberries
syrup
whipped cream

Then all I had to do day of was make the waffles.

You could also add making scrambled eggs as those wouldn't take much time either.

I love these recipes because they are relatively easy, delicious, and I make them ahead of time for breakfasts on the run.

My "go-to" make ahead brunch is baked egg casserole and hash brown casserole. For the eggs you just scramble them with milk and whatever ingredients you want - I typically do one pan that is non-meat (even though eggs are technically "meat".....lots of vegetarians will still eat them, unless they are vegan) so just eggs, onion, tomato, and green pepper. I do one pan that is eggs, either bacon or sausage, and cheese.
For hashbrowns you can do the frozen kind and add in cream of chicken soup and sour cream.

Then just put them both in the oven about 45 minutes before you want to serve!!!!!

I would imagine you are going to be busier than you think on the day before the wedding, so I wouldn't count on too much prep time!
How about a simple spread of bagels/cream cheese, muffins and pastries. You could garnish the trays with bunches of grapes and bowls of strawberries, maybe some sliced melon (less work than a fruit salad and no utensils required!) Have a crockpot full of breakfast sausage if you want something more substantial to go with the bread and fruit, and of course, punch, juice and coffee :)

See if your local grocery store can make you a cold-cuts tray, or a prepared fruit tray, for you (or any guest who asks if they can help you with anything!) to pick up on the morning of. Put the cold-cuts and cheeses together with croissants from the store's bakery. (If you have the dishes, there's no reason you can't re-plate the fruit and cold-cuts for a more elegant look.) Or, if you don't want to have to go out, grapes and strawberries can be washed ahead of time. Pineapples can be cut ahead of time, though I would personally wait on melons.

If you want to go home-made, muffins will keep well for two days, and I personally think that muffins are better home-made, anyway.

Also, maybe try an egg casserole. You could pre-cook the sausage on Friday, and add it to your egg mixture on Sunday morning. I have never made one myself, so I can't speak for which recipes are the best, but it's a standby for several of my friends' brunches. This one from allrecipes.com seems to be pretty quick:

This is perfect!
Google "Creme Brûlée French Toast"
You make it the day (or two) before and bake it before serving.
Sooooooo goooood.
A little "fancy" too but not fussy.
Add a tray of sausage, bacon or ham and juices and coffee/tea.

You can make great oatmeal (use steel cut) in a crockpot - put it on when you go to bed the night before. You can make casserole size quiche and freeze it - but instead of traditional pie crust you cut up cubes of bread and line the bottom of a large rectangular baking pan (pyrex, etc.) (after spraying with spray oil). Then pour egg misture over it, sprinkle and/or mix shredded cheddar into it. You can even buy eggbeaters that already have veggies in them - or frozen chopped onions and peppers if you'd rather use real eggs. If peppers and onions don't sound appealing used frozen spinach and feta cheese - or frozen brocoli & cheddar. Turkey sausage patties cook nicely in the oven, and even bacon can be cooked ahead of time and heated up in the oven. Melon sliced thinly can be done a day ahed of time - tossed into ziplic bags in the fridge grapes are easily rinsed of an placed in a bowl. I think the biggest thing will be to have all the bowls and dishes out and ready to go - and borrow a large coffee urn from a friend, your church, firehouse, etc. Expect that lots of coffee will be needed!

Here is a really good, really easy recipe, you just have to put it together the night before! I have also found it helpful to place a cookie sheet on the lower rack of the oven to catch any drips during the rising and baking process.

Bubble Bread
24 frozen Rhodes rolls (or other frozen rolls, any brand will do)
3 oz package Butterscotch pudding, the kind you have to cook
¼-1 tsp. Cinnamon (to taste)
¼ Cup Brown Sugar
½ Cup Chopped nuts (optional)
1 stick Butter

Grease and flour a bunt pan. Place frozen rolls in pan and sprinkle dry ingredients and nuts over rolls. Melt butter and drizzle over the rolls. Let rise overnight. Bake at 350* for 30 minutes. Let sit for 10 minutes then turn out onto a serving plate.

Quiche and macaroni and cheese can be made ahead and frozen.

The morning of it is easy to buy fresh bagels, cream cheese and lox. The day before prepare or buy a large fruit salad.

My staples are a French toast bake, hah brown casserole, crock pot baked oatmeal and an egg bake....all could be made Friday. Let me know if you'd like recipes.

We've done french toast casserole and then some kind of egg/sausage/cheese casserole. If you can run out that morning, I'd add bagels, danish and fruit.

Any type of casserole would be good to make in advance. You could also buy frozen quiche (for example from costco) and heat it up. For a potato dish, potato gratin keeps well in the fridge so you can make that ahead of time.

Keep it simple, you are already tired and stressed out from the wedding so is the bride and groom.

If you are going to go with just bagels and muffin, you can have a tray of smoked salmon, capers and red onion.

For drinks, a drink bar,oj, peach nectar (for DIY bellini), champagn, milk and coffee.
