Lunch Ideas for Mom
back to work full time from maternity leave. too busy sometimes to go out for lunch and end up spending too much money ordering in too often or just snacking. what are some easy lunch ideas. bored with what i do make. i'm vegetarian. thanks.

Try making wraps the night before. I make one with non-fat cottage cheese, lowfat mozzarella and sauteed spinach. heat it for 30 seconds in the microwave and you have a cheap quick white pizza wrap! This also works great with black beans, tomatoes and cheddar cheese.

Hard to find something out there at times... Isagenix makes protein bars that are very reasonable and have all 70 essential minerals with organic whey protein and tons of nutrition. (Great for kids too.) I believe that they are around 230 calories. It's pretty filling on it's own, as it's a complete meal, but you could also bring a piece of fruit. When I visit a farmer's market or Stew Leonard's, I always purchase a bean salad. When I have time, I make one...
Last week, I bought a big container of organic lentils ---mixed in were veggies, a tad of garlic, walnuts and a hint of dressing.
I spoon some over Tinkyada rice pasta - and it's a great lunch!

Hi C.,
I like the following wrap sandwich recipe:
1 whole wheat or olive oil wrap
mayo mixed with chopped jalepenos or green chilis
Lettuce
Tomatoe
sliced avocado
blanched snap peas
swiss cheese
layer above ingredients on wrap
Butternut squash soup
saute' in butter white part of 2-3 leeks until soft, add ground thyme to taste, stir in aprox. 3 lb cooked butternut squash (I roast mine, but for convenience you can use the chopped frozen butternut squash, if you do, don't cook it first)add atleast 28 oz vegetable or chicken broth, simmer aprox 20 minutes, puree' in blender, if too thick add more broth and simmer a little bit longer. Serve with a dollop of sour cream and a sprinkle of chives. (add salt and pepper to taste)

Lunch ideas for you? That is so easy. I like to make my own humus, because I'm fussy when it comes to hummus. I boil off a can of chick peas/garbonzo beans until their tender enough to mash..(Be sure to drain and clean them first.) then I drain off the water and mash them..let them cool down a little..add mayo and chopped onions. It makes the perfect sandwich spread. You can also make macaroni salad, bean salad, or a regular green salad. If you feel lazy, PB goes great with Nutella. If you have a microwave in the office, you can just eat left overs from super.

Make extra of any soup you make at home and either freeze them in bowls that can go from freezer to microwave or just bring the leftover in in a thermos. (Freezing them individually gives you the option of not eating the same soup all week long which does get boring). Soup plus a roll and you're set.
Fantastic foods couscous salad is a big hit. We make the whole box instead of 2 cups worth and really up the dijon mustard. Eat as a salad or fill a pita.

Hummus and either pita wedges, or carrot and celery sticks. I prefer homemade to any of the store bought ones. Hummus is good because it keeps a long time too, so you don't have to eat it every day until it's gone.

Hi! Being Asian, I definitely thought of eggroll typed wraps. At the Asian grocery, there are fresh eggroll wrappers. They are very light and soft and do not need to be cooked. I can't quite remember a brand name. But you can wrap shredded veggies, bean sprouts, lettuce, even jicama in them. You can also toss in some any type of tofu (dried, fresh) and top it off with crushed peanuts or chickpeas. Then there are many different sauces that bring up the flavor. You can try a sweet chili sauce, Thai peanut, even a fish sauce drizzles on is actually really good if you can handle pungent flavors. Check out the sauce aisle and experiment. This is getting me hungry, and it also reminds me of family parties where these would be ready made and wrapped in wax paper. Have fun with it and enjoy!
