LOTS Of Marshmellows, What to Do with Them All?!

Anyone want some? LOL!!

My mom bought those jumbo marshmellows... you know, the one's the size of your FACE... I won't eat them as is, they make me sick (bad experience as a child with colored marshmellows... don't ask). Of course there's the obvious 'make smores!', but honestly, I rarely give my kids this kind of stuff, and we'd be making smores forEVER with these!

Is there anything I can bake (and SHARE) with these? They're giant, and I've never baked with marshmellows, so I don't know if that would even work.

Anyone have some really great marshmellowy recipes you wouldn't mind sharing??

Fudge is made with marshmallow creme, you can melt the marhsmallows down and make fudge.

I would make Rice Krispy Treats and hand them to friends and neighbors.

No baking involved, just melt them and add Rice Krispies!!

Rice krispy treats!

Also, these cookies are soooo good!:

Hot Chocolate Cookies

For the cookies

1 3/4 cups all-purpose flour

1 cup instant hot chocolate cocoa mix - I used a milk chocolate variety

1 teaspoon baking soda

1/2 teaspoon salt

12 tablespoons unsalted butter, softened

1/2 cup granulated sugar

2 large eggs

1/4 cup milk

1 teaspoon vanilla

24 large marshmallows, cut in half crosswise

For the glaze

1 3/4 cups confectioners' sugar

6 tablespoons unsalted butter

1/4 cup milk

2 tablespoons Dutch-process cocoa powder

To make the cookies

Preheat oven to 350

In a medium bowl, whisk together flour, cocoa mix, baking soda and salt.

In a large mixing bowl, beat together butter and sugar until creamy. Add the eggs, one at a time, mixing until combined after each. Mix in milk and vanilla. Add the dry ingredients and mix just until combined.

Using a teaspoon cookie scoop, drop the dough onto parchment lined baking sheets. Bake until the cookie are set, about 8 minutes. Remove and carefully place a marshmallow, cut side down, in the center of each cookie. Place back in the oven and continue baking until the marshmallow begins to look puffy, about 1 to 2 minutes. Remove and let cookies sit on the baking sheet for 1 minute before moving them to a wire rack to cool completely.

To make the glaze

Place confectioners' sugar in a medium bowl. In a small saucepan, add butter, milk and cocoa. Cook over medium heat until the mixture comes to a boil - let cook for 1 minute. Remove from the heat and let cool for 5 minutes. Pour mixture into the bowl of confectioners' sugar and beat until creamy.

Immediately spoon a little of the glaze over each of the cooled cookies.

Makes about 48 cookies.

I'm not sure is this will work with the super big marshmallows but I've done it with the regular ones. Make a pan of brownies and put a marshmallow on top of where each piece would be after they are baked. They melt a little but turn out like toasted marshmallows. Makes your brownies yummy.

If you change your mind and want to do a play on smore's my SIL uses those giant marshmallows to make these.

Dip them in melted chocolate and role them in graham cracker crumbs. So fun and easy.

Outside of rice krispie treats....I found this for ya...

don't have actual recipes, but rice crispy treats are great. or you could bake that sweet potato casserole my mom used to do: big can of sweet potatoes, pineapple chunks, a little brown sugar, maybe chopped pecans, topped with some marshmellows. do they keep forever? i don't know. but if not, maybe freeze them for cocoa in fall/winter.....i like marshmellows in my hot chocolate. and yes....smores rock. maybe invite friends and kids over to have a little "camping party" where you grill up something simple (hot dogs or burgers?), make smores, do "camping stuff" outside in the backyard...even if you have to make games like fishing without the real pond....can have a little tent set up and sing, tell "scary" or silly stories with flashlights. kids love flashlights. that way you have an excuse to give smores without it being a bad habit, and you can have others eat them too. (i've never seen a marshmellow as big as your face....i'm guessing your joking there? if not....dang! cut them into something usable, lol).

Rice Krispie treats...they're so good and kids LOVE them. Adults too.

3 tablespoons butter or margarine
1 package (10 oz., about 40) regular marshmallows
- OR -
4 cups miniature marshmallows
6 cups Rice Krispies®
Why use Kellogg's® Rice Krispies®?

1. In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.

2. Add KELLOGG'S RICE KRISPIES cereal. Stir until well coated.

3. Using buttered spatula or wax paper evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray. Cool. Cut into 2-inch squares. Best if served the same day.

MICROWAVE DIRECTIONS:
In microwave-safe bowl heat butter and marshmallows on HIGH for 3 minutes, stirring after 2 minutes. Stir until smooth. Follow steps 2 and 3 above. Microwave cooking times may vary.

Note

-For best results, use fresh marshmallows.
-1 jar (7 oz.) marshmallow crème can be substituted for marshmallows.
-Diet, reduced calorie or tub margarine is not recommended.
-Store no more than two days at room temperature in airtight container.
-To freeze, place in layers separated by wax paper in airtight container. Freeze for up to 6 weeks. Let stand at room temperature for 15 minutes before serving.

Hot chocolate with tons of marshmellows - there really is no other way to drink it! Who cares if it is summer!

If you make rice krispie treats, eat 'em for breakfast! They are like a quick breakfast bar. Then snack on them after dinner as dessert. Before you know it, they will be gone!

Rice Krispy Treats are sooo yummy and quite low fat in the dessert realm of things!

You can make the treats with most any ceareal. I used Golden Grahams once and then added chocolate chips once they were in the 9x13 dish(to keep from melting)...then they were "s'mores" without the mess and fire.(They were for a big company meeting)

I saw those at the store. They are huge.

Just an FYI, IF you decide to make Rice Krispie treats melt them slowly. If you use high heat they get really hard later on. It took me years to figure that one out. It must have to do with the breaking down of the sugar. Leeeeearm from my mistake! :)

I have a recipe at home for caramel corn that uses marshmallows and butter melted in the microwave. It's pretty yummy! If you'd like the recipe let me know and I can find it tonight.

Giant Marshmallow Lollipops ~ I make these and everyone loves them! You can do them plain just to do them, or in holiday colors and sprinkles. And, they are excellent mini gifts wrapped in cellophane bags and tied with ribbons.

You'll need:
1) Candy coating, I use "Candiquik" that I find at my local supermarket year round near the chocolate chips and baking items, it comes in a block in chocolate or white with it's own tray, Wilton makes some in different colors, or you can go to a candy supply store and purchase them in lots of different colors as well
2) Sprinkles, coconut or chopped nuts
3) Your marshmallows
and
4) 6" Lollipop sticks, you can purchase these at craft or candy supply stores.

Basically I stick a stick in each marshmallow, melt the coating(s) and dip each marshmallow about halfway into the coating, swirl to get excess off, sprinkle with nuts coconut and/or sprinkles, and place on a parchment paper lined cookie sheet. I then place the tray in my freezer a few minutes for the coating to harden and set and they're done.

And, for the marshmallows you aren't using at the moment you can keep the bags in your freezer, they stay fresh and you can remove one or two at a time and they're fine : )

I am sure this is a repeat, but stick em on a stick and roast them. Works well if you have a gas stove, we used to do that all the time. My sister loved it because I didn't like the taste of roasted marshmellows, but I liked to burn them, so she got to eat them all. :)

If you have a fondue pot, you can break one of them up into smaller pieces, stir them into melted chocolate in the fondue pot (add a little milk to make it more liquidy) and have chocolate fondue with strawberries, banana, etc.

Not sure if this would work or not but you could try it. I make a super good fruit dip with marshmallow cream and cream cheese. I just eyeball it, but you can adjust it to how you like it. You could melt down the marshmallows without getting them too hot, then add about an equal amount of cream cheese, along with a little bit of vanilla extract or lemon juice. You can adjust whether you like more cream cheese or more marshmallow, and whether you like vanilla or lemon flavor, so you can vary it to suit your taste. This fruit dip is so good on all kinds of fruit.

You have to cut the big marshmallows up a bit before cooking with them, but they are still pretty versatile.
My Mom sent me a bunch (3 bags) of these, too - I'm going to be using them up for months - it's more sugar than you can shake a stick at.
I thought about floating one in hot chocolate, but just one of these things almost fills up the entire mug.
