Leftover Ham Ideas

I bought an after Easter ham on clearance and made it Sunday night. It was delcious, but now I have a huge amount of leftovers. We've eaten on it the last couple of nights, and sandwiches for lunch. Now what? Looking for some quick, easy, and "exciting" kid-friendly ideas for our next left-over ham dinner. Thanks!

Thanks for the ideas! We went with ham on pizza, but now I have some other ideas (because I STILL have leftovers-lol).

Use some chopped up ham and make a casserole like you would tuna Casserole... Only use wagon wheel pasta (for some reason this is the best) cream of celery soup, cheddar cheese and some chopped onion . maybe green bell pepper if you have it. Yuuum its my fave.

We like cubed ham in scalloped potatoes and mixed in with eggs. You could put it on pizza too.

Cube ham (largely), cube potatoes, add fresh, frozen or canned green beans. Place all in casserole dish with 1/4" of water. Cover with foil. Bake at 325 or 350 til potatoes are done. Peasant food!

My husband chopped ham into small pieces (1 yr old in the house) the other day. Cooked it with chopped green beans and corn. Then I took those left overs and added scrambled egg. I also added ham to mexican rice with carrots and cauliflower. We had quesadillas with it.

Ham and peas and pearl onions in a white sauce is a favorite around here.
Ham in potato soup or bean soup is also good.
You can add ham to scalloped potatoes.
Ham goes well in scrambled eggs/ omelets / fritatas.
You can add some ham into green beans.
I make a cabbage casserole that I add some ham into it.

Ham is pretty versatile.

I chopped up about 2 cups and froze them for a future breakfast egg casserole. You can put them in salads or warm them up with eggs and fruit for breakfast for dinner.....

Use the bone and make split pea soup and then cut up the ham to put in the soup.

The recipe below is super yummy and easy!

Brown Rice Risotto

Servings: Makes 2 ¼ cups
2 ½ cups chicken stock
1 tablespoon butter
1 cup long-grain brown rice
1 cup grated Parmesan
Parsley for garnish
½ pound of ham, cut into bit-sized squares (enough ham to use this as main dish)
Bring chicken stock to a boil. Add butter. Once butter is melted, stir in the rice and reduce heat to simmer. Cover and cook 45 to 50 minutes. The rice should be moist.

Remove from heat and fluff with a fork. Stir in cheese, add ham and garnish with parsley.

Serve with ceasar salad.
