OK--so the Entenmann's breakfast donut didn't "stick to my ribs" and I am now turning my thoughts to dinner.
Need inspiration! And I loved the breakfast question...sooooooo....

We don't get paid till Thursday, so we're having frozen corn dogs. :(

But last night, we had my husband's favorite "Sausage Rice and Beans." Sautee jalepeno and Eckerich sausage (skinless) with some onion and garlic. Toss two cans of black beans on top. Stir till all's warm and then put on top of a bowl full of cooked rice (brown or white, doesn't matter). Tabasco to spice it up to your preference. Yummy.

Have to make it a quick dinner to get to church so we will be having sloppy joes, fresh veggies and I will probably give in to the kids and make french fries.

We are having thai chicken tacos:

-grill two chicken breasts, chop into bite-size pieces or shred
-heat four tortillas in the microwave for 30 secs each
-put chicken, 1/2 cup carrot shreds, 1/2 cup red cabbage shreds in a bowl
-add Bangkok Padang peanut sauce
-mix ingredients together
-put in tortilla and top with shredded mozzarella

Potato chip salmon, wild rice, and carrots.

The potato chip salmon is to DIE for, and sooo easy:

Slather a generous amount of spicy brown mustard (i.e. Gulden's) onto salmon filets. In a big plastic bag, crush some kettle-cooked potato chips (about 1/2 bag), add 1/4 cup parmesan cheese & some salt & pepper. Mix all of that together & put it on a plate. Smash the salmon mustard-side-down into the potato chip mixture, then put the filets on a Pam-sprayed cookie sheet. 425 for 15 min. SOOO good!

We have a big lunch (usually with meat) and then have a light dinner with veggies/beans and fruit ;-) So I am having a big steak sandwich for lunch today.

Well we'll have some nacho chips, ground turkey, and salsa -- salad of some type. But I'm also going to make a fave family summer dish. Using up some of the many zucchini, squash, tomatoes and onions from many gardens! All the veggies sliced and sauteed in olive oil then add velveeta cheese (melts best in the veggies). Can add seasonings of your choice, galic, tarragon and basil are some herbs we use. Don't cook on super high and make sure to cover for the majority of the cooking so Zucchini cooks well. Uncover a while prior to serving so it thickens.

Wednesdays my teenage daughter gets to choose = Chicken fajitas with spices, red bell peppers, onions, garlic, tomatoes, cheese and topped with sliced avocado and warm corn tortillas. It's her favorite meal.

I always ask people this question, because I'm so nebby.

We had grilled salmon, grilled sliced potatoes with a side of sour cream/garden chives, fresh green beans sauteed with garlic. My hubby made everything as I was out with our son. Husband had blueberry pie a la mode for dessert. (I'm not usually so good at avoiding dessert, but, I had some pudding earlier.)

Pan-fried catfish, fresh corn-on-the-cob, coleslaw, and fresh bread. Catfish is NOT fishy, has enough fat in it that I only Pam the skillet, then sprinkle with lemon pepper and Seasoning Salt---delicious!! Cooks in about 5 minutes. For dessert--- carrot and zucchini cake from Weight Watchers with Lite Cool Whip.

We're having either spaghetti bake or a twist on the chicken soft taco. We found wraps that aren't made with lard, grill the chicken tenderloins and put the chicken on the wrap with a nice salsa or pico de gallo, with shredded mexican cheese, sour cream and steamed brocolli.

Now I'm hungry!

We're having leftovers, but good ones. I made a salad of rotisserie chicken (from the grocery store), orzo pasta, and shredded raw carrots and zucchini. Then I put a bunch of black pepper and a little bit of Italian dressing (a little goes a long way) on the whole thing and tossed it together. It's really light but filling, and it's healthy. Yum!

Honey Mustard BBQ pork chops (recipe from Allrecipes.com). I put them in to marinade this morning first thing and we'll cook them on the grill. Also having steamed fresh green beans. I should probably make some corn bread or something, but I'm trying to lose a little weight, so I'm laying off the carbs! :-)

We are having chicken burritos in home made tortillas.

I roast a whole chicken once a week and use it for two meals. Tongiht I will take half and warm it in a skillet and add ckn taco seasoning, corn and black beans. Then we top them with cheese, avacado,salsa and sour cream. It's a "go to meal" at our house and the kids love it.

Other favorites:
-home made biscuts and gravy
-black bean with bacon soup
-chicken quesadillas
-philly cheesesteaks
-white beans with cornbread and hotlinks
-home made mac n cheese with ham and broccoli
-red beans and rice with andoulie sausage
-chili
