Jff--super Bowl Food
Hi Mamas,
We are hosting a Super Bowl party this year and I'm feeling decidedly uninspired about the menu. So, what do you make for the Super Bowl? What do you love to eat at a party? What have you made that had everyone asking for the recipe?

I was thinking of posting this today. I'm equally uninspired! So far, my sister is making boneless buffalo chicken tenders, I'm making:
Layered bean dip (only because my daughter requested it)
Mini rueben sandwiches (corned beef, sour kraut, swiss, thousand island dressing - my friends from last year requested these)
Mini hot dogs - just naked & we dip them in honey mustard sauce
mozzarella, tomato, olive skewers with balsamic glaze
veggies & dip
cheese & crackers
shrimp cocktail
tuna macaroni salad (hubby's favorite)
homemade butterscotch pudding - trying this for the first time
other desserts provided by guests, so I'll be surprised
Really just not feeling it this year.

you can make potato skins super easy. Either use a fry daddy or a sauce pan with vegetable oil.
Cut the potato in half and scoop out the innards. I like to leave at least an inch and a half or so of flesh behind. Poke holes in the potato for easy oil drainage. Then put the in the hot to boiling oil. The hotter the oil the quicker they will cook.
I butter the potatoes then stuff them with cheddar and mozzarella, the top with bacon bits (the real ones not the crunchy ones---or make your own)
Then just stick them in the oven (350) or a couple minutes to melt the cheese. Serve with sour cream. People always ask me to make those.

A friend of mine makes "super bowl dip." It's ridiculously good and super easy. Layer about 1/2 inch of cream cheese on the bottom, then your favorite chili, then cover with shredded cheddar and bake until bubbly. Dip with fritos. So yummy!

We're going to a party - so I'm bringing Turkey Chili with all the fixins (chopped scallions, cheese, sour cream) on the side and I'm making asparagus wrapped in proscuitto!

I've been playing around with the idea of setting up a make your own taco bar for the SB. So I would put out beef and chicken mixed with taco seasoning, lettuce, a few different kinds of cheese, guacamole, salsa, black beans, corn, peppers, onions, olives, fresh tomato, hard and soft taco shells. I'd put it all out right in front of the TV so we could just watch and eat tacos. Yum. I'm hungry.
